I learned from southern old school cooking in the kitchen experience hands on growing up. 🧑🏾🍳
There were no 🙅🏽♀️cookbooks or videos from back in the day just grandma, mom & aunts 😃

I simmer my oxtails for about 3 hours or i use the crockpot. Never had to add extra liquid. Your boiling whichs evaporates the liquid quickly. I add a little browning as well. How long did you cook them, were they tender ⁉️

Yes, boiling it boils the liquid out. You could add a little water because of the seasonings it won’t take away from flavor or anything.

The crockpot definitely is always great especially if you don’t want to attend to it a lot by boiling on top of the stove.

🤗 Yes, you gotta make some. They were so tender and delicious 😋
If you cook those on a very slow simmer, they will be more tender and delicious. Oxtails are meant to be cooked, low and slow. Any cookbook in the world will tell you that. Harsh heat like you’re using toughen the meat and dries it out.
