So Ray, Tried your Best Baked Chicken & Rice and here’s what happened; my wife is the cook in the family. Other than scrambled eggs or grilling steaks, she doesn’t see me as a cook. So while she was away from the house, I went and got all the ingredients and went to work, while watching this video and following the steps. I made a few blunders but corrected as I went. Then my wife gets home, sees what I made sitting on the stove and takes a bite, then two, then three. She says “Which store did you get the Chicken & Rice ? I said that I made it. She argued with me that I made it! I said “Yes I did”. She said No Way! We went back and forth. Finally, she only believed me after checking the garbage where I threw out the packaging. Heaven help me if I left a mess! Thanks for the tips and recipe!

Too funny. I taught my Mom how to make a roast for the holidays. Everyone at the table said it was the best one she ever made. I didn't say anything, I just looked at Mom. This really was the BEST CHICKEN EVER. I found you on youtube and shopped the groceries, my husband and 12 yo daughter, made it together in the kitchen. They love to cook. My 15 yo autistic daughter who is VERY PICKY about food and HATES chicken said, "Mom, this is the only chicken I will ever eat!" My 12 yo son who is a little more adventurous but not by much said, "I never thought I would like mushrooms. I loved it all." He was shoveling it in. She was a slave when she was a little girl. We became friends and she would have me over to the house for sweet tea. She gave me her special recipie for fried chicken and garlic cheese grits.. It was heaven, and she was an angel!! I am now 71 years old and Mama Daisy has long been gone over to the "other side"! I didnt write down the recipie but memorized it and still remember every ingredient.

I was a cook in the Navy between 1997 and 2002. I was then introduced to Chicken bullion powder...It is the absolute best thing to use for any type of chicken seasoning/marinade. I use it in so many things like potatoes, rice, sautéed vegetables...It’s a game changer.

This is the best baked chicken ever. I have made this many many many times. Cast iron is best for the chicken. Make sure you deglaze the cast iron and save for other dishes. Used the deglaze in black eyed peas. Best ever made. Thank you so much Mack

Have made this on multiple occasions. It's one of the family's favorite dishes, especially the mushroom rice. Have always used one tablespoon of each of the spices listed and that seems to be the right amount. As for the mushrooms, have used Bella and white (white is half the price of Bella in this market) and nobody noticed. For the chicken, I buy leg quarters (Currently 45 cents/lb in 10 lb bags) and split them myself, using both the legs and thighs in the recipe. Doubled up on this recipe (quadrupled the mushrooms) and still had half the chicken left over. Marinated the remaining chicken and placed in freezer for the next time I fix this (fed 14 people for about 70 cents a portion. Have tried cooking the rice as shown in the recipe, in an instant pot, and on the stovetop. The best way is the way shown in the video, just make sure the foil is sealed on the top of the pan in order to seal in the steam. Any leakage will cause some of the rice to be dried out. The key thing is that all those spices, oil and the salt help to dehydrate the skin as it cooks. That way it doesn't get soggy. I've done this with whole chickens on a glass sheet pan and roasted them. Same result - that mixture at the beginning is so important.

I just tried this and used boneless skinless chicken thighs and added chopped green bell pepper when i sautéed the mushrooms, my family loved it. Great recipe
I love cooking with boneless chicken breasts especially, when I prepare my homemade chicken noodle soup. And, the only way I'll eat chicken skin is if it's crispy or fried. Other than that, I strip the skin of the chicken when I cook it.

@@lb6902 there isn't any...watch the video again, when he does the measurements count how many seconds that took, I guess shake it the same way he did measure it in a measurer, if your wanting to write it down and id add a lil more than the seconds ive jus counted jus to be sure lol but it might get u in the Ballpark doing it that way, I'm jus gunna eye ball it. I know I'm definitely gunna like it, now I might have to cook it a couple times and see if id change anything. Anyway good luck 👍

I just made this, it’s fantastic! The cast iron skillet in the oven works great and the rice is delicious. Used a shallot instead of an onion for it and didn’t have the chicken seasoning adapted but it was outstanding
Chicken thighs are the greatest part of the bird. My friends call them "meat apples ". The silhouette tends to look like a apple. And mushrooms rock too! 🍄
I’ve made this chicken and rice recipe about 3 times already, and currently have it in the oven. I’m literally obsessed with it, and I use it as my go-to whenever I have chicken thighs. LOVE the chicken, and LOOOOVE the rice!! What I end up having to do, though, is add salt. Almost to everything. The chicken, and the rice usually need a good tsp or so of salt in the ingredients.
@@costealucia5357 yup! I use extra long grain Basmati rice. The brand I use is Royal, and it’s the chef’s secret bag. I make a lot of Pakistani and Indian food, so that’s definitely my go-to rice brand!
When you are making the chicken do you put foil over it when you put it in the over ? Also if we dont have a skillet can you put the chicken in a regular glass pan would it still work ?
@@armandadeveigamonteiro8457 I do not put foil on top of the chicken! Only on the rice. You definitely could use a glass pan, it will still cook the chicken, but you probably would lose the crispness on the skin. The crispness on the chicken from the cast iron skillet is definitely worth it!
I am so glad you added the fresh chives, 'cause it was screaming for something green. I am a lifetime teetotaler, but I am added a splash of white wine to the rice in place of some of the water, and it was like risotto! Chef Ray, I agree with you - Best Baked chicken!

This is truly the best oven baked chicken ever! We have made it at least five times in the last few weeks since we found this recipe. It is as good as Ray says it is and more! …including the rice with mushrooms and butter. And I even threw some vegetables in the pan with the chicken about halfway through the baking process. Fantastic meal! Thanks Ray.
@@Ladyoni69 I use my own measurements and seasoning to my taste. Those seasonings that I like I use 1-tablespoons the rest I use 1-teaspoons. I mix the ingredients by itself in a bowl first let it sit for 5mins, so they can blend in nicely. Then I add the chicken I use a fork to prick holes in the chicken so that the seasoning will soak in nicely. Let my sit another 10mins or so as I get the next step ready. Cook and that’s it hope this help 🤗 let me know how it turns out
Omg I have that same stainless steel pan . I got it second hand in 1976, it was at least 20 years old at that time . Raised my kids, Christmas meals the whole 9 yards. Still looks this good . Stainless steel or iron y'all, last forever. And has a lid!

I just made this tonight for dinner. It was a hit in my house! My husband can't wait for me to make it again. The kids loved it. The only thing I did differently to speed up the recipe was to brown the chicken in my grill pan on the stove and then I put it in the oven with the rice for about 30 mins (until fully cooked) 👩🏾🍳

Bought a large cast iron skillet just to do this. Ain’t a penny go to waste, the chicken came out impeccable.
Cook on 425 for 45 mins then flip chicken and cook for how much longer?

This is the best baked chicken ever. I have made this many many many times. Cast iron is best for the chicken. Make sure you deglaze the cast iron and save for other dishes. Used the deglaze in black eyed peas. Best ever made. Thank you so much Mack

Have made this on multiple occasions. It's one of the family's favorite dishes, especially the mushroom rice. Have always used one tablespoon of each of the spices listed and that seems to be the right amount. As for the mushrooms, have used Bella and white (white is half the price of Bella in this market) and nobody noticed. For the chicken, I buy leg quarters (Currently 45 cents/lb in 10 lb bags) and split them myself, using both the legs and thighs in the recipe. Doubled up on this recipe (quadrupled the mushrooms) and still had half the chicken left over. Marinated the remaining chicken and placed in freezer for the next time I fix this (fed 14 people for about 70 cents a portion.
Have tried cooking the rice as shown in the recipe, in an instant pot, and on the stovetop. The best way is the way shown in the video, just make sure the foil is sealed on the top of the pan in order to seal in the steam. Any leakage will cause some of the rice to be dried out.

The key thing is that all those spices, oil and the salt help to dehydrate the skin as it cooks. That way it doesn't get soggy. I've done this with whole chickens on a glass sheet pan and roasted them. Same result - that mixture at the beginning is so important.

I just tried this and used boneless skinless chicken thighs and added chopped green bell pepper when i sautéed the mushrooms, my family loved it. Great recipe

I love cooking with boneless chicken breasts especially, when I prepare my homemade chicken noodle soup. And, the only way I'll eat chicken skin is if it's crispy or fried. Other than that, I strip the skin of the chicken when I cook it.

@@lb6902 there isn't any...watch the video again, when he does the measurements count how many seconds that took, I guess shake it the same way he did measure it in a measurer, if your wanting to write it down and id add a lil more than the seconds ive jus counted jus to be sure lol but it might get u in the Ballpark doing it that way, I'm jus gunna eye ball it. I just made this, it’s fantastic! The cast iron skillet in the oven works great and the rice is delicious. Used a shallot instead of an onion for it and didn’t have the chicken seasoning adapted but it was outstanding

I’ve made this chicken and rice recipe about 3 times already, and currently have it in the oven. I’m literally obsessed with it, and I use it as my go-to whenever I have chicken thighs.

What I end up having to do, though, is add salt. Almost to everything. The chicken, and the rice usually need a good tsp or so of salt in the ingredients.

I make a lot of Pakistani and Indian food, so that’s definitely my go-to rice brand!
When you are making the chicken do you put foil over it when you put it in the over ? Also if we dont have a skillet can you put the chicken in a regular glass pan would it still work ?

You definitely could use a glass pan, it will still cook the chicken, but you probably would lose the crispness on the skin. The crispness on the chicken from the cast iron skillet is definitely worth it!

This is truly the best oven baked chicken ever! We have made it at least five times in the last few weeks since we found this recipe. It is as good as Ray says it is and more! …including the rice with mushrooms and butter. And I even threw some vegetables in the pan with the chicken about halfway through the baking process. Can you share an approximate amount of the ingredients you used since he isn't replying to questions and comments.
@@Ladyoni69 I use my own measurements and seasoning to my taste. Those seasonings that I like I use 1-tablespoons the rest I use 1-teaspoons. I mix the ingredients by itself in a bowl first let it sit for 5mins, so they can blend in nicely. Then I add the chicken I use a fork to prick holes in the chicken so that the seasoning will soak in nicely. Let my sit another 10mins or so as I get the next step ready. Cook and that’s it hope this help 🤗 let me know how it turns out
