    INGREDIENTS
    1 medium size steak
    salt & pepper to taste
    1 tablespoon toasted rice powder
    1" galangal root, finely minced
    4 kaffir lime leaves, finely sliced
    2 shallots, sliced
    2 teaspoon chili pepper flakes
    1/2 tablespoon padaek (optional)
    1 tablespoon fish sauce or to taste
    1/2 medium lime or to taste
    4 thai chilies, thinly sliced
    4 stalks green onions, thinly sliced
    1/2 bunch cilantro, roughly chopped
    15-20 mint leaves
    DIRECTIONS
    season steak on both sides with salt and pepper.
    lightly coat grill with non-stick cooking spray, add the steak, cook on both sides until desired doneness, remove from heat, let rest for 5 minutes.
    cut steak into thin slices then cut across the slices to mince into smaller pieces, add to a large bowl.
    to the bowl, add rice powder, kaffir, shallots, chili flakes; combine.
    add padaek and fish sauce; combine.
    add lime; combine.
    taste and adjust as needed.
    add green onions, cilantro, thai chilies and mint leaves.

    I've tried so many of your recipes and they turn out amazing every time, thank you!! I was wondering if I substituted chicken for this would it be good or are the ingredients for laab gai different ?

      nope. same recipe! you can even crisp the chicken skin and scatter throughout and add gizzards/liver as well! enjoy and have a great weekend!

    Laap/Lop...Nuea, Ngua, Sinngua...(seen=sin-ngua?)help me out here. My late wife was Lao/Thai (Lao father)...I love the flavors. Lop, Yum Nuea, papaya or long bean salad!

    How should we cook the tripe before putting it in the salad?

      tripe should be boiled for about an hour & 1/2 on med-low heat then drained and rinsed with cold water :)

    I love Lao food and so happy I found your channel! I noticed that you don't add sugar to this recipe and was wondering if it normally doesn't have it or is that a preference? I know in our house (my mom was born and raised in Laos) most of the seasoning is sugar, fish sauce and lime.

      my dad laos and my mom thai. I've noticed thai people like sweet & sour, salty, and spicy. However I think it depends on the location to where your parents were raised if they lived there the entire time. My family is from the middle of Thailand but my dad family left laos bc of war and he was raised primarily in thailand and others were refugees with other thai people so people might if preferences might of changed then too. My dad's side of the family has adoptive the thai flavors into their dish sweet and spicy. I've been to both countries and they normally only use fish sauce, lime, and salt.😋 I'm my mother daughter though.

      Thai love padeak too. My mom saids the stinker the better. 😂 even in soups..which I didn't find out until I grew up, but my mom put a little in the kapoon and it's the bomb. 😋😋😋

      This was a George foreman electric grill but I’ve since moved onto gas grilling. Any grill works but let me know if you want the specific link. I can find something comparable!

    Whenever you say "a little fish sauce" I prepare my heart haha. Is the padaek and the types of meat used the only real difference from the Thai versions? Does your family normally start with raw beef?

      +Bangkok Fatty lol are you not a fan of fish sauce? i think the padaek is preparation is the main difference. our food seems to be a bit more pungent, kind of funky. my family eats laab in many different ways, raw (carpaccio-esque) is def preferred by the elders in my family.

      I live in the sticks where Taco Bell is considered exotic. We don’t have padek here but I smashed a sardine into a paste and used that instead. Worked great!

      I don't have a specific go-to brand. my mom usually dries them and grinds them for me, you can def try that!
