To me, layer cakes are for celebrations and this Coconut Cake is a real crowd pleaser. I love everything about it. From its' snowy white marshmallowy frosting that is enveloped in shreds of dried coconut, to the layers of moist and sweet butter cake sandwiched together with a tangy lemon curd.

    An amazing baker and teacher. Brilliant woman. If she is married I hope her husband is very grateful. She should have her own TV cooking show. If she have children, I hope they will cook for her tomorrow. Happy Mother's Day!

    I am in awe of anyone who can cut a cake layer in half with a knife. I always use dental floss (wrap it around the cake making sure it is level, crossing over the ends and pulling them ... the floss actually cuts the cake)

    A few years ago I got a nice brand new Kitchen-Aid mixer for Christmas. I was really excited to have such a fancy machine in my kitchen. But...I had never used one.
    I waited a long time to actually make something with it but when I decided what it would be I chose to make coconut cake.
    I got a recipe for a coconut cake from a lady that had made one for the girls in the office and MAN was that good! So that's why I decided on that particular cake to break in my new mixer.
    Well, all of the steps in making that cake took me ALL DAY! Then there was clean-up. I was so tired that I didn't get any cake until the next day. Yes! I had cake for breakfast. And it was WONDERFUL!!!

    I used this recipe with pineapple filling instead of the lemon curd and it was absolutely fantastic.Next time I'll try it with the lemon curd. Thanks for sharing!

    Thank you. This is exactly what I was looking for for my mother's birthday cake. Absolutely beautiful. I can't wait til she gets a bite. We used to get her one just like this from the neighborhood bakery growing up and it is her favorite. I think it will be a wonderful surprise.

    Inspired by the picture, just finished making this recipe today and as usual, it's irresistibly yummy, I put a buttercream frosting with added coconut as we are mostly a lover of buttercream frosting. Thanks again and again Ms. Stephanie for this recipe. Everybody at home loves it. ;-)

    This cake reminded me the ones I ate in my country. When I made it here in USA I add a tablespoon of coconut extract and instead of buttermilk I used coconut milk to the cake. To the frosting I add a can of crushed pineapple (without the water). It came out very good. Thank you so much.

    Stephanie, that cake is divine....thank you so much...you are a pleasure to watch and listen too...so patient and informative.
    I have a suggestion though, when you were adding the coconut on top of the frosting I was thinking that a few dolops of lemon curd on top before adding the coconut would have been a nice addition...it would also let your guests know what kind of cake it was and I think it would also add some extra beauty to it (not that it really needs it :) ).
    In any case, thank you once again Stephanie...I'll be making this cake for sure...as you said "what's not to like"!!!

    I just saw your video, thanks again in my opinion this is the best and only cake that I love eating. my mom bless her heart, made this for my birthday when I was sixteen, and eating it with vanilla ice cream .and my second favorite is her home made Chocolate cake. those were the best days of my life and my sisters.

    This is a really good recipe.
    I just made a few tweaks. I added half cup salted butter and half a cup of vegetable oil. And also, I added a handful of shredded coconut and 1/4th cup of coconut oil.
    It turned out to be soooooo good. So soft and moist.

    So I ended up making the cake with the coconut filling from your coconut pie and it is delicious. Not too sweet and not to heavy the texture is actually very light and fluffy so it's perfect. I made only half the recipe and it was well enough for 8 to 10 people. The full recipe would be good for at least 20 people for sure it is a very big cake I find. In any case this is a keeper for sure to make with other kinds of frosting as well it is very versatile I really love it.

    Great recipe! The leftover cake kept well for five days (in the fridge), and it stayed moist and light, even on the fifth day. The frosting was a big hit too!

    Have always loved Coconut Cake of this type since childhood! I will use a cornstarch filling/frosting base throughout, though - instead of the lemon curd and sweet Meringue. That oughta be just as great! Then just sprinkle the coconut on top of that!

      I agree about the 7 minute frosting recipe! My grandmother taught me how to make it when I was a young girl. And after I moved away and got married I tried it. . . always delicious!

    Made it today, didn't use the 7m frosting as it's a day in advance, so made a simple vanilla cream cheese frosting instead. Have to say though, looks sublime, and turned out perfectly. Thanks a lot :)

    I made this last night because my mom wanted a cake for her birthday. I only made the cake part because my mom's allergic to lemon and her favorite frosting is buttercream. The cake was so moist, tender, and fluffy and had a nice buttery and vanilla flavor to it. It was really good. It's worth doing those extra steps like beating the butter and sugar until it's fluffy, adding the eggs one at a time, etc.

      @@trudyd.4169 I clicked on this video because I thought it looked like there was pineapple between the layers, which is what my mom but between the layers of her coconut cake. My daughter in law and I made one for Christmas dinner this past Christmas, it was beautiful! And yummy! My Mom made all of her cakes 3 layers, 8” I think. On her German Chocolate cake she made a double recipe of the frosting!
