How to Make Cornmeal Yeast Rolls | SIMPLE Dinner Roll Recipe

- Soft and fluffy cornmeal yeast rolls are yeasted dinner rolls made with a little bit of cornmeal.
Cornmeal Dinner Rolls Ingredients
1/4 cup warm water (110° F )
1 cup buttermilk (no hotter than 110° F)
1/4 cup sugar
2 teaspoons instant yeast
1 egg, beaten
2 teaspoons salt
3/4 cups cornmeal
1/4 cup butter (1/2 stick)
3 1/2 cups flour
1 teaspoon oil
1 Tablespoon melted butter
Cornmeal Dinner Rolls Directions
Start by mixing the water, buttermilk, sugar and yeast in a medium bowl.
Next add the egg, salt, cornmeal, butter and half of the flour.
Mix until a batter forms, then add the rest of the flour and mix until a stiff dough forms.
Turn the dough out onto a work surface and knead for 5-8 minutes or until the dough comes together in a smooth mass.
Place the teaspoon of oil into the bowl you mixed the dough in and add the dough back, covering it with oil so it doesn’t dry out. Cover and let it rise until it doubles. This will take up to an hour depending on how warm your kitchen is.
After the dough has risen, remove it from the bowl and cut it into 16 equal pieces. If you have a kitchen scale, you can weigh each piece so its 65 grams.
Shape each piece of dough into a round dinner roll. After all pieces are shaped, place them on a baking sheet and cover with a towel or piece of plastic to let rise for 30 minutes, or until doubled. Preheat your oven to 375° F
Remove the plastic and place to rolls in the oven for 15 -18 minutes or until they are golden brown.
Brush the rolls with melted butter when they come out of the oven. Enjoy!

OMGosh these look like a very similar roll they make at the Keeter Center restaurant at the College of the Ozark’s in Branson, MO. They were cornmeal sorghum rolls and they were delicious. Can’t wait to try your recipe. Your little chef did a great job on his. 😋

@@justsomeone64 HI, I've used soy milk with 1 spoon of vinegar (to transform it into buttermilk), then 1 flax egg (1 Tbsp of ground flax seeds with 2-3 Tbsp of water), oil instead of butter. They are just as fluffy as in the video. :D

Can I skip buttermilk and use water?
Can I replace buttermilk with regular milk or soy?
I haven't but it shouldn't be an issue. Soy milk will probably not let the bread brown as much though.

can i increase the cornmeal and reduce the flour?
I would not. You need the gluten in the flour to give it that traditional bread texture. Cornmeal has no gluten so the more you add, the less chewy it will be.
I'm making this right now but I used whole wheat flour in place of white flour. I also did 11/4 cups of cornmeal and 3 cups of the flour. It's proofing in the oven right now. I'll let y'all know how it turns out

You can use any flour sack towel or towel that has a tight weave. They sometimes have flour sack towels at dollar tree.

Looks like she used pure cornmeal. Other recipes call for additional wheat flour.
I did this all wrong and just put it in a iron skillet and made awesome cornbread. Lol

Yes, right? I wished I followed my instinct and used half the amount of sugar because the dough tasted too sweet for me. When the bread is baked I'll know for sure
