    Hi, I am from the Czech Republic... greetings to all of you guys... :- In my country we insert some strawberries or plumbs or other kinds of fruit, we boil it for about cca 5 minutes and when they go up (we put them in deep pot with water), they are ready... we sprinkle with some cinnamon, but some sugar and butter and it's ready... you can try :-)

    Instead of water, fill pan 1cm high with milk, 2 tablespoons of butter and 1 tablespoon of sugar, put the dough into the pan, cover with a lid an cook for 20min at medium-high heat on top of the oven or 20mins at 175°C in the oven, until the milk has evaporated and became caramel because of the sugar. Serve with cinnamon+sugar and melted butter or hot vanilla cream. Delicious!

    • @andrewsparkes6275
      @andrewsparkes6275 หลายเดือนก่อน

      How big is the pan you're using when you add 1cm height of water? That will affect the actual quantity a lot. For example, a 20cm pan will have 314ml milk, whereas a 30cm pan will have 707ml (almost double the amount).

    • @stephanberger7455
      @stephanberger7455 หลายเดือนก่อน

      @@andrewsparkes6275I do not use any water! The size depends on the amount of dough. I normally use a 26cm pan for 6-8 parts of dough. Just fill the pan with max. 1cm with milk, add butter and sugar.

    • @andrewsparkes6275
      @andrewsparkes6275 หลายเดือนก่อน

      @@stephanberger7455 I meant milk (typed water by accident)..the point is the size of the pan greatly affects the amount of liquid. 1cm of milk in a 30cm diameter pan is twice as much milk as 1cm of milk in a 20cm pan. So for a 20cm pan, your recipe reads: 314ml milk, 2 tblsp butter, 1 tblsp sugar. And for a 30cm pan, your recipe reads: 707ml milk, 2 tblsp butter, 1 tblsp sugar. Which are wildly different recipes with massively different ratios of milk to butter and sugar. If you use a bigger pan for more dough or a smaller pan for less, surely you also need to add more or less butter and sugar too?

    • @stephanberger7455
      @stephanberger7455 หลายเดือนก่อน

      @@andrewsparkes6275What I wrote was the amounts for 6-8 parts of dough (based on 500g flour) and a 26cm pan. For more or less parts of dough you have to use more or less butter/sugar. But the exact amount of both isn't so important (I would use a little bit more than less). Try it and you will get a feeling for it. More important is the cooking time: 20-25min, then check if the dough is well done.

    We call them Dampfnudeln (Steam-Nodoles) or Germknödel (Yeast-Dumplings). But we use much less water with milk and sugar in it and cover the pan for steam. Then we hav caramel on the bottom. Then we serve it with vanillasauce. Very good!

      We make it different. Less water but add salt and cover. Don’t remove cover until you smell it’s browning. The water will evaporate and leave a beautiful salty crispy bottom. We eat this on Fat Tuesday with soup.
      Delicious!
      The same dough can be used for doughnuts with sugar and cinnamon! For dessert.

    If you skip the boiling step, then once on the baking sheet, if you slightly poke an indentation in the center with your fingers (not a hole) then brush with a mixture of caramelized onions and poppy seeds you have Bialys. 😋
