Delicious Fish Cakes | Easy to Prepare & Freeze

- Delicious Fish Cakes are easy to prepare, freeze great and are great for snacking! They're also a nice change from plain 'ole pan-fried fish.
Use your favorite fish fillets, or use what we did here: Salmon fillets and Albacore Tuna.
Add a side of Sweet Potato fries and a Cucumber salad and you have a fun and yummy meal!
INGREDIENTS
1 1/2 pounds Salmon (approx. 2 boneless/skinless filets, seasoned with salt, pepper,
blackened fish seasoning, cooked and cooled)
1 8oz can Albacore Tuna in water, drained
1/2 cup AP (all-purpose) Flour
2 cups plain Panko crumbs
3 green onions, chopped
1/2 sweet onion, chopped
1/2 cup sweet peppers, chopped
Salt and Pepper
DIRECTIONS
Put all chopped onions and peppers in a glass jar, cover with saran wrap and microwave on high for 90 seconds to soften. Mix remaining ingredients in a large bowl, breaking up the fish gently. Check for moistness by pinching some of the mixture. It should hold together. If too dry, add a bit of milk. If too wet, add a bit more Panko or flour. Heat oil in a skillet and form 4” patties about 1/2" thick. Fry till golden and turn only one time. Should take approx. 2 min per side. Place on paper towels to absorb excess oil. Salt to taste.
