Jackfruit and Beans Sticky Rice (QUICK & EASY) - Cooking With You

  • Southeast Asia’s beloved desserts mostly involve sticky rice and banana leaf but add jackfruit, black eyed peas and coconut shredding into the mixture, your mind will be blown. So easy and so quick to make. You don’t even need fresh jackfruit or to soak and boil the beans before hand. You can just cheat and use canned like me. wink wink
    Serves 15 - 17 banana leaf rolls
    Ingredients:
    - 3 cups sticky rice (soaked for at least 3 hours)
    - 2 cans jackfruit cut into squares
    - 400 ml coconut milk
    - 1 can black eyed peas
    - 1 teaspoon salt
    - 3/4 cup sugar
    - 1 cup shredded coconut
    - 1 pack banana leaves
    Directions:
    1. Start with 2 cans of jackfruit that have been drained and washed. Cut into little squares of the size of chiclets. If you’re using fresh jackfruit, this is about 7 to 8 jackfruit avril pieces.
    2. In a large pot on medium/high heat, pour in a bit less than 400 ml of coconut milk to leave about 3 tablespoons of coconut milk as you will be using the remainder to brush on the banana leaves later. Pour in 3/4 cup of sugar and add in 1 teaspoon of salt. Stir until the sugar is dissolved.
    3. Once the sugar is dissolved, pour in 3 cups of sticky rice that have been soaked for at least 3 hours then add in 1 cup of shredded coconut. Constantly stir until the rice has absorbed all of the coconut milk. How you can tell is that you will no longer see any liquid when you scrape the bottom with your spatula. Turn off the heat.
    4. Add in 1 can of black eyed peas that have been drained and washed thoroughly. Add in the chopped jackfruit and combined evenly and transfer to a large bowl.
    5. For the banana leaves, clean them with a wet paper towel. Be sure to clean them by stroking according to the lines that you see on the banana leaf, if you do stroke to the opposite of it, you risk breaking it. Make sure to do both sides of the banana leaves.
    6. Cut the banana leaves into 8 inches width with a scissor following the lines of the banana leaves.
    7. This part is completely optional but I like to cut them into oval shapes as I find when I roll them and tuck the ends underneath the rolls, they lay flat.
    8. Brush some of the coconut milk that was left aside onto the banana leaf where you're going to put the sticky rice mixture. This will prevent it from sticking to the banana leaf.
    9. Put in about 2 full tablespoons of the sticky rice into the centre of the banana leaf like so. Make sure you follow the lines of the banana leaf because if you will it contrary to the lines, the leaf will break.
    10. I like to lift the banana leaf then gently rub it like this so that that it evenly distributes the sticky rice mixture onto the banana leaf before rolling and it helps form the shape,
    11. Now gently fold it then roll like so and to close the end, push your finger from the side and fold it. Flip it over and tap it a bit so that the sticky rice mixture falls and that there is no empty gaps then repeat the same step by pushing your finger onto the side at the end of the roll and fold. Repeat the same step until you run out of sticky rice mixture. If you run out of banana leaves and still have the sticky rice mixture, you can always use baking sheets to replace the banana leaf but it just won’t have that lovely banana leaf aroma.
    12. Steam the rolls for 45 minutes on high heat and let it cool off for about 10 minutes before serving.
