Shrimp Eggplant Dim Sum Recipe (KETO FRIENDLY) - Cooking With You

  • Great Shrimp Dim Sum alternative which can be consumed while on a ketogenic diet and that will surely hit the spot. You're welcome.
    Recipe:
    Serves 16 to 18 pieces.
    Shrimp stuffed eggplants:
    - 3 Chinese eggplants
    - 300 grams of deveined and completely peeled shrimps
    - 1 pinch of grounded Chinese 5 spices
    - 1 teaspoon of chicken broth mix powder
    - 1 teaspoon of Shaoxing wine
    - 2 finely minced shallots
    - 1 tablespoon of corn starch or, if you’re on keto, 1 tablespoon of arrow root
    Glaze:
    - 1 cup of water
    - 3 tablespoons of oyster sauce or, if you’re on keto, Tamari or Coconut Aminos
    - 1 tablespoon dark soy sauce
    - 1 tablespoon of cornstarch or ,if you’re on keto, arrow root
    - Half a teaspoon of sesame oil
    Directions:
    1. Start with the eggplants, cut off the tips slightly diagonally. Continue to cut diagonally of 1 inch pieces.
    2. Cut in the centre of the eggplant only about 3/4 in as that is where we will be stuffing the eggplant with the shrimp paste.
    3. For the shrimps, crush it flat with a knife and finely minced them to create a shrimp paste.
    4. Transfer the shrimp paste to a small bowl and add the ground Chinese 5 spices, chicken broth mix powder, Shaoxing wine, corn starch or arrow root and minced shallots. Mix well.
    5. Stuff the shrimp paste into the centre of the eggplant pieces. Take about a tablespoon of shrimp paste and insert it into the centre of the eggplant where we made the slit. Make sure you fill up the sides and push the paste in with the spoon as much as possible otherwise it will fall out during the cooking process. With the backside of the spoon, pass it along the paste to flatten it out and so that it looks neat like this.
    6. Now that you’ve stuffed all of your pieces, in a pan with a lid on high heat, pour in a generous amount of oil of your choice. Put in your eggplant pieces and cover the lid for about 1 minute which will cook the bottom side to a golden brown colour. Flip over the pieces and cook until golden brown as well.
    7. Once both sides are golden brown, pour in 1 cup of water into the pan and use the lid to cover to steam. Steam the eggplants for 5 minutes on high heat. If within that 5 minutes, you see that water is running out, just add in half a cup of water and resume steaming.
    8. After 5 minutes, your shrimp stuffed eggplants should be cooked. Turn off the heat and plate them.
    9. To make the glaze, in a small pot with the heat off, pour in the water, add in the corn starch or arrow root, dark soya sauce, oyster sauce, sesame oil and stir. The starch will stick at the bottom so make sure you stir until it is all combined evenly before turning on the heat. If you do before, it will create clumps because of the starch. Once the mixture is stirred well and combined evenly, turn on the stove to medium heat and stir constantly and thoroughly on all of the surface. You should have a thick glaze like the consistency of melted ice cream.
    10. Now the remaining step is to drizzle a generous amount of the glaze on top of the shrimp stuffed eggplants. Garnish with some sliced green onions and serve.
