To be honest… these are like the worst videos on TH-cam. Unless you have a recipe that’s actually fast to make, this would just be him butchering a bunch of recipes and making mediocre food. If someone needs faster food again I recommend just trying simpler recipes
What I have done is take the Pillsbury Dough Boy Crossaints and buscuits. Bake and butter. I take 80/20 ground beef and make a burger or a crescent for the crossiant . Then , I take eggs, make them in the same shape. Combine with cheese. Done. McDonalds can't make fresh food. This is why this guy knows food. He understands quality is always from home.

I agree. I always get the southern style chicken biscuit and a micgriddle and then swap the insides. They aren't the greatest fast food items but they're somehow the most crack-like where I'd choose them over most anything for breakfast sans bojangles or chickfila.

Back when they had both on the menu here I think I gained like 10 pounds in 2 months because I could never decide which one I wanted and always ended up getting both and putting hot sauce on the honey butter one.

I will give this one to you, but a McDonalds Sausage, Egg, n Cheese biscuit holds a nostalgia factor for me. I can't bring myself to hate it despite how greasy my entire face feels after eating one. Despite how I feel like I forget how to breathe after inhaling one.

I worked at the Golden Arches back in 1987. I was in high school and had to open on weekends. I had to get there at 5am to make the biscuits. Believe it or not, back then they were made the traditional way. The ingredients were all prepackaged but I still had to cut the butter into the flour and add the buttermilk, knead, etc. While they weren’t the most amazing biscuits, they were still good. I have no idea what kind of process is used today, but they aren’t the same biscuits as when I was working there.
I bought your cook book and I’m so happy, I can’t wait to make everything in it. And I don’t have Popeyes near me so I’m excited to make the chicken sandwiches as well.

It’s easily the worst item at McDonald’s and it is the driest biscuit in the world. Just get an egg McMuffin or a sausage McMuffin, why do this to yourself. Take it from me

My son's a foodie. He is recommended by the doctor to avoid sugar and flour as much as possible. I don't like to give him outside food, as the ingredients have so many additives. So every time he gets a fan of some recipe outside, I search Joshua's channel, and every single time I find the recipe there. I have tried them, and he is not lying all of them are better than the bought ones. Tomorrow's school cafeteria menu is egg and cheese biscuits, and this recipe is going in his lunch box tomorrow from this mom's kitchen. (yes I am that annoying mom, to whom whenever you tell her you want to eat out, I make that recipe and feed it to you. Can't help it, I agree that's annoying)
Same I feel bad when I make other moms feel bad but I just love to do this. I don't have any problem with other moms raising their kids however they can. I personally though have the time and ability (and passion) to be making these foods from scratch.
I am so confused. Maybe the McDonald's in my area are different, but the sausage and egg biscuit is the only reason I'll go to McDonalds. The biscuit is only dry if it's been sitting under the heater for too long, the sausage is really good, and the egg... is whatever.

Former shift manager. I don’t know where you are at but all our large breakfast sandwiches came with cheese. There is however non-cheese options because some people can’t have cheese. However, I hate the fact that the labels for biscuits and griddles specify that it comes with cheese but the muffins don’t tell you that.
I just found one of the attachments Mom had for my old girl KitchenAid mixer (she’s 47 years old)-a meat grinder! I forgot she’d gotten one! Now I need to make my own sausage for these sandwiches. And sausage rolls! My mouth is watering already.

I had a sausage biscuit with egg and cheese this morning. They changed the biscuits and they are certainly better than I remember them. My biscuit was not dry. I usually avoid the egg but it was tasty today so I'd be more inclined to do it again. Keep on keeping on McDs!
I think the biscuits reall depend on where you are, because I had one the other day and the biscuit was delicious. Not dry at all. I’ve actually never had a bad biscuit from McDonald’s.
Random tidbit but I love how you quickly disregard any comments telling you not to salt eggs before. Daniel Gritzer and Kenji both tested this and have multiple great articles on their testing on serious eats if anyone is interested. They found that salting around 15 minutes before was ideal, and in my own tests comparing the two versions I have to say I agree. The only comment that I would say on your eggs is more regarding appearance. It seems to be common in french cooking not to add pepper like that before, which I believe is just so it doesn't look like there's little specks in the eggs. I usually just add a bit of freshly ground black pepper on my egg as I'm plating the breakfast sandwich. I don't think it really makes a noticeable difference either way to taste though. The sausage and biscuits look fantastic, I bet it was a real treat!
Hi Josh, me again, I actually love sausage egg and cheese biscuits for breakfast and I already know for a fact I will make this tomorrow morning because I have to get ingredients. How could I store the biscuit so that I can take them out of my fridge whenever I want a sandwich. Sorry for the long message, but I love watching and making you food. As you would say, Papa loves you.
I tried cutting them all and stacking them together in a log, the way they come in cans at the store. Wrapped in plastic wrap (sorry), and if I remember, they weren’t bad when I took one or two out at a time. That said, don’t keep them around for a really long time. I think homemade biscuits and pie dough aren’t made for several days’ storage. Maybe a vacuum seal would help, if you could keep from smashing the goods. Edit: this is not a really expensive food item(& don’t take long to make), so it wouldn’t hurt to experiment a little. Also, if you want them fresh each day, I sometimes speed it up by making only one or two and not messing with the butter. I do it by eye: about 1/2 c flour, salt, sugar, good amount of baking powder (but don’t go crazy, there’s not that much flour), tiny bit of baking soda (because acid in yogurt), and enough yogurt to get the right consistency. Mash together, do some folding similar to Josh’s (helps make layers) but always be gentle and don’t overwork. Pat out with hand and cut two biscuits. Bake 400° or 450° for maybe 15 minutes (when they look appropriately brown). Last hint: when cutting, cut straight down. Don’t twist the cutter or you risk destroying all the good layering.
Biscuits always dry out, no matter how you store them. If that's okay with you, knock yourself out. But I think a better idea would be to take the biscuits you cut out from the dough, wrap them in plastic and refrigerate. Then just take some out and bake whenever needed. You're gonna need some time to cook your sausage and egg anyway, so why not use that time to get (relatively) fresh biscuits as well?
How do you make this for a family quickly? I usually don't make biscuits for myself (never but glad you were able to demonstrate what a pain it was so I don't try). I truly like your work and follow you but no reason to take down the goodness of MCD. Take the high road and say you perfected the breakfast sandwich by adding a serious amount of butter, cheese, cost and time and one you can eat by yourself because there is no way I'm standing and cooking that egg for 5 people. It's one thing to improve on something a lot of us eat everyday but another to make it sound like you are better than us because you have a meat grinder, hamburger press, special flour, an unlimited amount time and no one to have breakfast with. MCD - I love you more after this. I realize what you do - you provide consistent high quality food we can all eat at the same time and not break the budget. This looks amazing but is not practical and I don't think the condensing tone is needed.
Being from the south, the biscuits really are not impressing me much. The fact that he blended his own sausage was a nice touch. I love how he always goes above and beyond. But the biscuit game.. it needs some work.

Ok, I just watched until the biscuits were made and went to the kitchen and made them, only difference was I had to use frozen unsalted butter cause I keep it in the freezer. They were awesome, they had so many layers and were so firm I called my father over and he ate one and said they reminded him of his Grandmother's biscuits, she died back in early '70's. She was born before the 1900's just to let you know how far back she was. lol
If u want some dam good biscuits, here where I live u can go to a place called Church's. Their biscuits r the best thing ever, they taste like pancakes with butter and honey and they're so moist and soft. 10/10, would visit only for the biscuits
In Australia it's called a sausage and egg mcmuffin, because we use english muffins(savory bois) , and it comes with cheese. you can get bacon and egg mcmuffins too but can also have all three in one muffie boi
The only difference is the expiration date and the calories. 1,200 calories McDonald sandwich can last for centuries with all those preservatives, that homemade sandwich can last up to 3 days in the fridge.
Tip for biscuits (can't remember if I thought of it or read it): use a coarse grater on the butter instead of cubing/pastry cutter. Just make sure butter is very cold but not frozen.
In Australia, that is sold as a Sausage McMuffin that is basically sausage/egg/cheese; it also has a Bacon and Egg variant, clue’s in the name. If you really want to go full meat, you can also go Sausage, Egg, ‘n’ Bacon McMuffin…comes with hash brown and drink.

I’ve been making sausage meat for a while and today decided to have a crack at these breakfast biscuits. The only thing I struggle with is the name, (being a Brit we’d call these scones 😂😂) But previously I’ve never had much success with scones but followed your instructions here and they came out perfect 👍 So today’s breakfast was epic, home made sausage and egg biscuit with cheese. I am going to try this for the biscuits only. I make mine a dozen at a time and freeze them in parchment paper and then aluminum foil. Put in toaster oven frozen until heated all the way through. I have been making home made english muffins and making my breakfast sandwich using home made english muffins. I will DEFINATELY try the biscuit recipe.

Some White Lily flour instead of all purpose and whipping half the pork with some baking powder would give you the softest butter delivery vehicle with a nice snappy sausage texture. Good recipe though, love the sausage flavor

I agree, we all can make better of that same food at home.

As someone who worked for the Golden Arches for almost 10 years, I agree with everything he said about the sausage egg biscuit. It’s easily the worst item at McDonald’s and it is the driest biscuit in the world. Just get an egg McMuffin or a sausage McMuffin, why do this to yourself. Take it from me

I just made the egg exactly like Josh did BUT....I added the cheese on top of the egg and then folded it. EXCELLENT results.

Ooh… so this is the US-counterpart of the McDonald's Chessey Eggdesal (Egg + Pan de Sal) here in the Philippines, and the cheese are folded/sandwiched inside the scrambled egg. My favourite McBreakfast. 💖
My son's a foodie. He is recommended by the doctor to avoid sugar and flour as much as possible. I don't like to give him outside food, as the ingredients have so many additives. So every time he gets a fan of some recipe outside, I search Joshua's channel, and every single time I find the recipe there. I have tried them, and he is not lying all of them are better than the bought ones. Tomorrow's school cafeteria menu is egg and cheese biscuits, and this recipe is going in his lunch box tomorrow from this mom's kitchen. (yes I am that annoying mom, to whom whenever you tell her you want to eat out, I make that recipe and feed it to you. Can't help it, I agree that's annoying)
Same I feel bad when I make other moms feel bad but I just love to do this. I don't have any problem with other moms raising their kids however they can. I personally though have the time and ability (and passion) to be making these foods from scratch.
I am so confused. Maybe the McDonald's in my area are different, but the sausage and egg biscuit is the only reason I'll go to McDonalds. The biscuit is only dry if it's been sitting under the heater for too long, the sausage is really good, and the egg... is whatever.

I always hated McDonald’s sausage. There was ALWAYS at least one bite where I felt like I bit down on a rock. Which is why I always get the breakfast sandwich with bacon instead

I don’t know where you are at but all our large breakfast sandwiches came with cheese. There is however non-cheese options because some people can’t have cheese. However, I hate the fact that the labels for biscuits and griddles specify that it comes with cheese but the muffins don’t tell you that.
I just found one of the attachments Mom had for my old girl KitchenAid mixer (she’s 47 years old)-a meat grinder! I forgot she’d gotten one! Now I need to make my own sausage for these sandwiches. And sausage rolls! My mouth is watering already.

I had a sausage biscuit with egg and cheese this morning. They changed the biscuits and they are certainly better than I remember them. My biscuit was not dry. I usually avoid the egg but it was tasty today so I'd be more inclined to do it again. Keep on keeping on McDs!
I think the biscuits reall depend on where you are, because I had one the other day and the biscuit was delicious. Not dry at all. I’ve actually never had a bad biscuit from McDonald’s.

Random tidbit but I love how you quickly disregard any comments telling you not to salt eggs before. Daniel Gritzer and Kenji both tested this and have multiple great articles on their testing on serious eats if anyone is interested. They found that salting around 15 minutes before was ideal, and in my own tests comparing the two versions I have to say I agree. The only comment that I would say on your eggs is more regarding appearance. It seems to be common in french cooking not to add pepper like that before, which I believe is just so it doesn't look like there's little specks in the eggs. I usually just add a bit of freshly ground black pepper on my egg as I'm plating the breakfast sandwich. I don't think it really makes a noticeable difference either way to taste though. The sausage and biscuits look fantastic, I bet it was a real treat!

Hi Josh, me again, I actually love sausage egg and cheese biscuits for breakfast and I already know for a fact I will make this tomorrow morning because I have to get ingredients. How could I store the biscuit so that I can take them out of my fridge whenever I want a sandwich. Sorry for the long message, but I love watching and making you food. As you would say, Papa loves you.
I tried cutting them all and stacking them together in a log, the way they come in cans at the store. Wrapped in plastic wrap (sorry), and if I remember, they weren’t bad when I took one or two out at a time. That said, don’t keep them around for a really long time. I think homemade biscuits and pie dough aren’t made for several days’ storage. Maybe a vacuum seal would help, if you could keep from smashing the goods. Edit: this is not a really expensive food item(& don’t take long to make), so it wouldn’t hurt to experiment a little.
Also, if you want them fresh each day, I sometimes speed it up by making only one or two and not messing with the butter. I do it by eye: about 1/2 c flour, salt, sugar, good amount of baking powder (but don’t go crazy, there’s not that much flour), tiny bit of baking soda (because acid in yogurt), and enough yogurt to get the right consistency. Mash together, do some folding similar to Josh’s (helps make layers) but always be gentle and don’t overwork. Pat out with hand and cut two biscuits. Bake 400° or 450° for maybe 15 minutes (when they look appropriately brown). Last hint: when cutting, cut straight down. Don’t twist the cutter or you risk destroying all the good layering.
Biscuits always dry out, no matter how you store them. If that's okay with you, knock yourself out. But I think a better idea would be to take the biscuits you cut out from the dough, wrap them in plastic and refrigerate. Then just take some out and bake whenever needed. You're gonna need some time to cook your sausage and egg anyway, so why not use that time to get (relatively) fresh biscuits as well?

How do you make this for a family quickly? I usually don't make biscuits for myself (never but glad you were able to demonstrate what a pain it was so I don't try). I truly like your work and follow you but no reason to take down the goodness of MCD. Take the high road and say you perfected the breakfast sandwich by adding a serious amount of butter, cheese, cost and time and one you can eat by yourself because there is no way I'm standing and cooking that egg for 5 people. It's one thing to improve on something a lot of us eat everyday but another to make it sound like you are better than us because you have a meat grinder, hamburger press, special flour, an unlimited amount time and no one to have breakfast with. MCD - I love you more after this. I realize what you do - you provide consistent high quality food we can all eat at the same time and not break the budget. This looks amazing but is not practical and I don't think the condensing tone is needed.
In Canada its called the sausage and egg mcmuffin and it always comes with cheese.

Ok, I just watched until the biscuits were made and went to the kitchen and made them, only difference was I had to use frozen unsalted butter cause I keep it in the freezer. They were awesome, they had so many layers and were so firm I called my father over and he ate one and said they reminded him of his Grandmother's biscuits, she died back in early '70's. She was born before the 1900's just to let you know how far back she was. lol

In Australia it's called a sausage and egg mcmuffin, because we use english muffins(savory bois) , and it comes with cheese. you can get bacon and egg mcmuffins too but can also have all three in one muffie boi
The only difference is the expiration date and the calories. 1,200 calories McDonald sandwich can last for centuries with all those preservatives, that homemade sandwich can last up to 3 days in the fridge.
In the UK McDonald’s we have the sausage and egg McMuffin that automatically comes with cheese and butter on it

Tip for biscuits (can't remember if I thought of it or read it): use a coarse grater on the butter instead of cubing/pastry cutter. Just make sure butter is very cold but not frozen.

In Australia, that is sold as a Sausage McMuffin that is basically sausage/egg/cheese; it also has a Bacon and Egg variant, clue’s in the name. If you really want to go full meat, you can also go Sausage, Egg, ‘n’ Bacon McMuffin…comes with hash brown and drink.

I’ve been following your recipes for a while now, I cure and smoke my own bacon and holiday hams now after following your instructional videos. I’ve been making sausage meat for a while and today decided to have a crack at these breakfast biscuits. The only thing I struggle with is the name, (being a Brit we’d call these scones 😂😂)
But previously I’ve never had much success with scones but followed your instructions here and they came out perfect 👍

I am going to try this for the biscuits only. I make mine a dozen at a time and freeze them in parchment paper and then aluminum foil. Put in toaster oven frozen until heated all the way through. I have been making home made english muffins and making my breakfast sandwich using home made english muffins. I will DEFINATELY try the biscuit recipe.

Some White Lily flour instead of all purpose and whipping half the pork with some baking powder would give you the softest butter delivery vehicle with a nice snappy sausage texture. Good recipe though, love the sausage flavor

Josh, can I make a suggestion. Just a suggestion. Try making homemade type biscuits from Pinterest. My mother had her type homemade biscuits she made and they were delicious. But..I follow different homemade biscuits until I find some I really love. I see what you’re trying in food, like Bacon, egg and Cheese breakfast sandwich and admire this. I agree, we all can make better of that same food at home.
