    All my life I've lived in fear of breaking the yolk while frying an egg, and here you go and do it on purpose. That was a bit liberating. Also, love the quick vs slow. It's a great idea.

      In my Royal Navy cooking days, a broken yolk was the norm for a 'banjo sandwich'
      That is a lightly fried broken yolk egg, salt & pepper, between two slices of well buttered soft white bread.

      My dad used to make these and now my partner's dad made them too! Smashed egg sammich!!! We just put an egg and a little mayo on the bun (or toast) - occasionally cheese.

    The four-minute version with the brioche bun and the ham is so good and repeatable ...VERY easy-to-make. I love it and yes it really only takes 4 minutes that's weekdaying

    • @Scale-Back
      @Scale-Back 2 ปีที่แล้ว

      I do this one too, but I also throw the ham in the pan after the egg is fried, fry the egg then plop it on the ham while it gets a little sizzle, if I have cheese, I often put it on the ham just before the egg to melt it all together, then the whole thing onto the bun. (I personally like a bit of jalapeno mustard on mine). sometimes I have a ham steak not sliced ham... but it all works.

    I’m trying to learn more cooking, and I’ve always had trouble with the Eggs over Easy (I think that’s what these are), but I decided to try the 4 minute recipe with just the egg, and it turned out pretty good. I put to much salt and pepper on (I’m using a salt shaker and a pepper grinder), but the egg turned out like what I always tend to see on other cooking channels. The key for me was that you mentioned that it should be over medium-low heat, and gave a time limit for how long to cook them. A lot of channels don’t say what the heat you should be using. I also stuck with the cooking time; normally, I wait until the thicker section around the yolk is also white, and end up cooking the egg way too long.
    Moral of the story: I’m not a great cook, but your show helped me get a grip on how to cook eggs the way I like. Thanks.

    That sausage patty looks really good for making a whole bunch and freezing them to easily use in the morning. Same with the english muffins. Make like like ten extra for the freezer and in the morning quickly make a breakfast sandwich. Good video, I'm usually a scrambled eggs and toast kind of guy for the convenience this can definitely fit in my repertoire. If you ever do breakfast burritos, the long version could become a short one with some defrosting/finishing recommendations.

    I work at a lakeside grill type place and when i work mornings that first egg sandwich is quite literally exactly what I make myself for breakfast, minus some bacon and avocado spread/hot sauce.

    The first sandwich was my sweet spot. The rest was gilding the Lilly Briboy style. :) But some good individual tips for bread and eggs methods.

    Brian, Brian, Brian....Your high speed, fact filled, skilled technique, fun and funny approach is as you would say.... SICK I love a high speed info bomb. Plus you look like you are enjoying yourself. As a kitchen designer, builder ,tile setter, installer and a fair cook/baker. I appreciate your raw kitchen. Properly equipped minimalist.

    I’m happy to see your channel taking off. Both of these look amazing even though I’m pregnant and have to cook my eggs all the way through now ughh 😭

    I've been watching your channel for a while know. I'm proofing up the English muffins right now. One of the things that are the best is that all measurements are in grams. I'm an engineer by trade and I'm shocked how easier it is to cook with a scale and in grams. Seriously blowing my mind.

    My trick for a quick from-scratch breakfast sandwich is to make basically an egg casserole, pouring a bunch of scrambled eggs in a very buttered dish along with crumbled sausage and shredded cheese. Cover, bake til it's set, slice it into squares, and now you have something delicious to slap on an English muffin. I keep them in the freezer to be warmed up whenever I want.

    both look really good. where I am from a lot of restaurants/deli's serve Taylor Ham (sliced thin, cooked well done), with egg/cheese, etc. I really just prefer Taylor Ham over other breakfast meats (it's better then the generic Pork Roll). If not avaialble I just go with bacon well done.
