    Worked at a super high volume McD in the 70's and as a mgr in the 80's. It is very interesting to see the changes in process and equipment that McD has evolved into since. One store I worked in where I met my wife was demolished for a new road. When it was torn down I recovered the floor tiles where I was standing when I first saw my wife.

      What you wrote here, reminds me of Rocky Balboa movie, when Rocky visits the demolished ice rink and tells Paulie how he spent time with his sister there. Just another example of how Rocky movies show the bits of life situations :)

    So, I once got a sausage egg mcmuffin where they had obviously pulled the egg off the grill 30 seconds or so early. What I got was an egg with a slightly runny yolk. I've been chasing that high ever since.

      @@queenbe420 I've asked for it many, MANY times but they've never done it for me. I've only been able to get it a few times in the last several years, but it's enough to keep me searching.
      Oddly enough, yesterdays weekly McDonald's cheat day had 2 with almost runny yolk. Not quite the real deal I'm jonesing for, but it was pretty close!

    We actually cooked the folded from a carton mix with a rectangular multibracket back in the '90s (and fresh hotcakes from a mix!); it's unfortunate they're both now premade. At least the round eggs are more or less the same.

      That was how it was when I worked at a McDonald's in the 1990s also....though for the round, we had a metal plate with a water thing on top that steamed the eggs.

      I had the same experience, working at a couple of the stores in SoCal in the late 90s. I didn't know they scrapped the the liquid egg product, and changed to frozen pre-made. Crazy.

    My wife always tells me to ask for the round egg on my bacon egg and cheese biscuit. I figured it didn't matter since they're all fake. Guess I was wrong, please don't tell my wife. :)

    Boy things have changed since I worked the McDonald's grill back in 1991. The biscuits were scratch-made as were the hotcakes. The folded eggs were also cooked fresh to order. At least the McMuffin eggs are still cooked fresh.

      To be fair it is probably a lot easier to cook fresh eggs on a grill than also doing hotcakes and whatnot. Although I definitely would prefer fresh biscuits and hotcakes…

      when they went to the new grills they kept two of them so the do the eggs in the morning, and then they dont have a mess or the annoying transition from breakfast to lunch, it was a very good idea to do that, then during the day a grill person cleans the breakfast grill using cleaner and stuff and shuts it down

    Honestly had no idea they used real eggs for some of them.

      I've worked in several mid to higher-end restaurants. McDonalds is way cleaner than all of them. The corporate standards and standardization goes a long way. @@xtremeentertainmenttv9664

      Define real eggs? The ingredients says “eggs.” How do you fake eggs? Even egg substitutes like Egg Beaters is just egg whites with coloring and vitamins you’d get in the yolks.

      @@nikelegend77 You clearly never worked in the food industry. EVERY grill is like that in EVERY restaurant, from fast food to fine dining. You have to use cleaner to get that grease off cause it's baked on. To use cleaner, you have to turn the grill off and let it cool down or else you'd be inhaling fumes. If you don't like it, I suggest you don't eat out at all, cause any place that has a grill, it'll look like that unless they just opened for the day. It's not even gross, it's just a little bit of oil.

    It's going to sound silly, but I was a fast food manager for about 7 years before I had my kids and started staying home...and honestly, I kinda miss it 🤣 But your videos give me a way of sort of "reliving" the fun times 😊

    It was different back in the late 80s. The McD's I worked at used the old bin system, not the warmer trays like in this video. We were right on an interstate exit and used to see crazy rushes 3x a day. It was crucial to have someone who knew how to run the bin and keep the waste down. Folded were egg mix from a carton but actually folded by hand, too.

      Mid 70s no folded eggs. No water. No machine. We had a metal ring that we'd crack eggs into. Mix them up a bit. There was a timer. Remove the ring thing. Flip the eggs. Hit the timer. Put the eggs on the premade muffins that you assembled while the eggs cooked. Assemble. Then slide the pan forward where they were wrapped and put in the bin

      Combi ovens do pretty much the same thing happening on the grill. They use a combination of steam and convective heat to cook the food.

    When i worked for BK in the 80s our omelets were made from scratch on the grill. Whoever opened had to crack & scramble hundreds of eggs. We also made the salads from fresh produce. Nothing was precut or prepackaged. We did it all by hand. So much has changed & this makes me sound old. ROFL

    I like the old egg cookers that had iron rings ..we used butter to coat the grill and ring cracked the eggs broke the yokes and then placed a lid that had a cap in the center you added the water in ..one time i scoured the internets looking to buy one of those cookers with the rings ..could not find one ..

    In 2004, we didnt use the clamshell for the round eggs, just a metal cover that had a reservoir that held maybe an ounce of water. We'd put the cover on and the water would drain slowly into the area between the egg molds and steam the eggs.
    Folded eggs, we had a mold with 6 rectangles to pour the liquid eggs out of a carton into. When the eggs were cooked about halfway through, you would fold 1 third and then fold the other third over with a spatula. You'd have to dowse it in liquid butter in a spray bottle to keep them from sticking to the mold.

      The mix is frozen then thawed out in the cooler over night. You make them. I should know, i make them.

      I like how some people close 2 ends of the burrito while others close 1. I'd say it's a half step up from frozen. Adding the mix, half a slice of cheese, rolling then and the microwave for 15ish seconds. I like them!

    At my McDonald’s, we just microwave our folded eggs. Glad your store actually USES timers on your food. Ours just sits no matter what because we’re understaffed and super busy, so most stuff gets used within the regular times anyway.

    The key to eating at McDonald's is to choose the items that most resemble food. I always get the white egg over the yellow egg.

    I've been a manager at McDonalds for about 2 months, such an underrated job. I went into my career with the thought "This is McDonalds, my job is gonna suck". But I was very wrong, depending on the location your going into, and what position. McDonalds can be made as enjoyable as any other job.

      I worked there for 5 years in high school and university.
      It is pretty fun, especially when everything is working efficiently.
      But the problem is the effective hourly pay rate (especially for managers).

    It's actually interesting. When I worked at McD's in the late 90's and early 2000's, folded eggs were still poured, and rounded eggs were being switched to pre-made. I think it was something about the risk of egg shells. I very much miss the prices from back then.

    God bit. All the eggs East of the Mississippi comes from Herbucks Lake Odessa MI. The ones used for round eggs go straight to Martin and bower locations. The eggs for the liquid eggs are sent to Iowa and out of state to be broken then shipped back to Lake Odessa in tankers for further processing. It's illegal to break eggs in Michigan at "breaker plants". ALWAYS request a Round egg because it's fresher but don't ask for a fresh egg, it's above the terminology of today's employees

    '79-'81 I was a cook in a restaurant. I am so happy that I didn't have to follow all the glove up rules.....I think it would be hard to do fast, high quantity meals while wearing slippery, ill-fitting vinyl socks on my hands....And I am quite sure that even though I touched every bit of food I prepared, I didn't kill anyone....

    Damn.. I never thought working in a kitchen full of sweaty teenagers could bring forth such an overwhelming feeling of nostalgia. It was a morning shift when I realized I could go Ultra Instinct and crack two eggs at the same God damn time. It saved so much time during the rush hour and is a skill I use to this very day cooking breakfast for my hungry ass family. Having to shut down and clean those grills was a pain in the ass though. I still get PTSD from having to scrape off all of the build up from behind the clamps.

    At the store I used to work at we had a separate egg cooker that was extremely old and was so broken and worn out the eggs came up raw most of the time but management didn’t seem to care and we also didn’t use it for folded we where told to just put that in the microwave

    Cool to see your videos from behind the scenes. Never imagined anyone ever really cracked an egg at a location. Just figured it was all done in a plant by some fancy machine and then loaded up with preservatives. Makes me want to do your job for a week. Lotta respect for people who feed people. God bless you!

      Some of them are. While the round eggs are freshly cracked and cooked on-site, the folded eggs are pre-made in a factory, while the scrambled eggs are basically "liquid egg mix in a carton" that's also cooked on site. Still, that doesn't mean the folded or scrambled eggs are inferior to round eggs; they're all still made with real eggs, just with different forms of processing. If freshness is really a priority to you though, definitely do go with the round eggs.

    Dang they've changed the folded since I worked there. Used to pour the folded into this jig to give them their shape and let them cook. Folded when done.

    When I worked there in 1986, the grills were way bigger, and the egg McMuffin holder was not fixed or automated like that. And WTH is with the folded egg? We cooked it fresh and folded it ourselves. We also built the sandwich’s when done cooking. Man things sure have changed.

    I work at maccas in Australia but I swear to god when you scrap the grills don’t go back and forth on the grills, lift after going forward and come back. This ensures the blade of the scraper is not dull every ten minutes

    I can tell this McD’s is never busy…back in the ‘80’s and ‘90’s, if I cracked eggs that slow, I’d still be there cooking all of the orders today.

    I used to be an assistant manager in the late 80s. The process for cooking the eggs for egg mcmuffin hasn't changed much but the tools for cooking them has. For the folded eggs - totally different process using real eggs beaten prior to the opening of the store (at 6 a.m.) and cooked in a rectangular form, then manually folded on the grill after the cooking process completed. I can't eat gluten anymore so I haven't tasted folded eggs as shown in the video to know if they taste the same or better than the way they were prepared 35 years ago or not. Also - not shown in this video - in the 70s when I was a crew person, we made our big mac sauce fresh daily in the store.

    Round eggs here get cooked on the egg machine, and double that amount at a time, folded eggs when we had them, were cooked from fresh as well. 2 eggs per folded. Crack the eggs into a stainless jug, whisk, then add to the sprayed folded mould

    I don't eat Mc Donald's but I find your videos so captivating Stephan! Living in Australia I also find it really interesting the difference in staffing, here Mc Donald's is predominantly staffed with Teenagers with the only Adult's being managers; working at Mc Donald's is generally not regarded as a "career path", plus I think here in Australia Mc Donald's much prefers younger staff so they can pay them much less. But I think it's really awesome that over in America it's a really great, secure job for all people!

      No offense, but this almost reads like satire. Don't assume just because it's not all kids working there that it's actually a good job for an adult. The US is a hypercapitalistic place with nowhere near the worker protections or apprentice programs you have in Australia (not to mention affordable college or universal healthcare). Some people just get stuck and since healthcare is tied to your employer it's hard to take the risk of changing jobs, especially if you have kids. Notice the guy in the walking cast... a broken ankle costs thousands here without insurance and even with insurance it can cost a grand or so depending on your plan as well as hundreds per month in premiums. Even an ambulance ride costs 1K in my area.
      I'm not saying the adults who work fast food are the cream of the crop or anything, but it's a hell of a lot easier for someone to fall through the cracks here than in the rest of the Western world. Also, the minimum wage where this is filmed is $9.30 for both kids and adults...

      Scrambled is easy! You just pour from a carton and move the fork spatula back and forth they cook really fast the flat top and non stick mats they use on the grill for breakfast make it easy

    I worked at mcds back in the late 90s and for the yellow egg it was actually liquid you poured into molds like the rounds and cooked them…interesting to see how things have changed

    If I recall correctly that grill scraper would give you a nice patch of rough skin between the thumb and forefinger after repetitive use. I can remember doing a 6/12 bun lay for 3 hours straight during busy holiday periods.
