I grew up in a similar situation. you cannot possibly know right now just how much your mom appreciates what you are doing. now that my mom is in her late 70's and our roles are switched, the gratitude cannot be expressed in words when you come home from a crappy day of hard work to a warm meal and good company. much respect for taking care of what you can. I know it's not always easy or fun, but trust me, down the road, you will look back at this time with her as some of your favorite memories.

I can tell you this I love a lot of Mexican food so I would say that yes we have our delicious food in America but you have your delicious food down South of the border that's for sure so you have nothing to be shameful about when it comes to cuisine because Mexican cuisine is one of the top three in my opinion!

Never in my life have I put an egg in a batch of biscuits, or cooked them in a cast iron skillet. Never again will I do it any differently than this recipe. Beautiful, tender, crispy on the outside, and buttery are how mine turned out. I did not have cream of Tartar, so I added some vinegar to the mix, and they rose nicely. I love watching Kent cook, much like my grandparents did. Good stuff!
Thank you for sharing your experience and substitutions. I don’t have any cream of tartar either. I, too, have never put eggs in my biscuit dough. I’ll try it this way. My biscuits usually turn out pretty good.

The perfect recipe. TIP: Use a coarse cheese grater to grate frozen butter, saves the time/effort of cutting it up, makes even size pieces, and helps keep it in cold little chunks for extra flakey goodness!

My mom was born and raised in Oklahoma on a hog farm. I may have been born and raised in California, but I was blessed to grow up with Okie cooking! Biscuits and gravy (with sausage or pork steaks or bacon), fried eggs and fried taters every weekend. Whenever my Cali friends growing up would be at the house and have breakfast with us they would flip out over her cooking! Our neighbor who was originally from Pittsburgh PA laughed to Mom about how her boys kept going on and on about her cooking.
I'm crying watching this. I miss my Appalachian grandma and grandpa sooo much, and her biscuits and gravy were literally THE BEST!!! What I wouldn't give to taste them one more time... Thank you Ken for making these wonderful videos and giving us a glimpse back to when American life was good.
About 12 years ago, I was working as a moose hunting guide in B.C., Canada. Our cook was a marvelous lady from Oregon that introduced me to biscuits and gravy and I have wanted a recipe ever since. Thank you sir!!

gotta reccomend appalacha style w/ maters instead of sausage Appalachian Gravy Recipe for 4 people 2 tbsp bacon drippins 1 big tomato chopped 1/2 cup finely chopped onion (half a normal sized white onion) 2 Tbsp flour 1 cup milk 1/2 tsp salt 1/2 tsp black pepper 1/4 tsp dried thyme Bacon grease into pan, cook onions first until brown and softened, then add diced tomatoes, and thyme. Bring to simmer stir often. In mixing bowl combine milk, flour, salt, and pepper. When tomatoes soften pour in milk mixture Gravy done. (Add more milk to get it to consistency you want) usually add extra half cup during summer phase
I always tell people from other countries to try this if they visit the US. I've only met a handful who didn't love it. Make sure you always add enough sausage!

Abigail Wood, I would add that biscuits and gravy is the quintessential Southern comfort food. All cowboys and Southerners were raised on it. I'm pretty sure my neighbors to the north don't understand it either, even if they are a part of the States. It also delicious baked in an oven and on the stove top.
My grandmother and mother were from Texas. They made gravy from a roux of bacon grease and flour. When it turned light brown they addd a can of evaporated milk and a bit of regular milk, added pepper and salt to taste. They never made it with sausage.
As someone from the UK the thought of Biscuits and Gravy to me sounds insane - however after seeing those beautiful things you pulled out of that pan I'm going to have to come get me some.
Yeah these aren't sweet biscuits they're more like savory scone. Great with just some butter as side or split in half for a crispy chicken sandwich or eggs and cheese and bacon. Now I want some thanks ya muppet.
Mr. Kent just here recently found your channel and i have great respect for what you do. My dad was and old cowboy here in Missouri that broke wild horses as a young man. He passed away in 2010 with leukemia and i wish i could share this with him. He would have loved this more than his cowboy movies lol. If for no reason except to know how, people should learn both male and female.) yet I’m surprised by the amount of people who don’t, won’t and can’t cook. My parents had some but never cooked on them when I was young and now that I'm grown your channel and recipes made it accessible to me so I gave it a try and fell in love. I have an ever expanding arsenal of cast iron cookware and my skillet is well seasoned enough omelettes come out clean every time! Seeing as it is ash Wednesday and the beginning of Lent, maybe you could do some fried fish recipes for the viewers that observe Lent? I can't wait for the new book, keep up the great work! I just found your channel today. My Dad passed in March of 2020 and he loved to cook and bake. He used to make "Angel Biscuits" with a homemade apple butter, much similar to how you make your biscuits. Your channel brings me comfort and I love all of your recipes. I' am excited to make your biscuits and gravy.

I remember my mom making gravy. She would use Pet milk and she would make a roux my adding the flour to whatever fat she was using and would brown it. It gave the gravy a lovely brown color, depending on how long she cooked the flour. Absolutely delicious.

Haha I was thinking a similar thing, hi also in the UK and I made the chicken fried steak for my dinner today. Was good even though the steak I had was thick, it just took longer to cook that's all. I will try it again if I can get a thinner cut.
Thanks for another great cooking video. I cook biscuits like my mother taught me. I'm the middle of five sons and she could always use a hand in kitchen. My wife never minded me helping out either and I remain the official biscuit baker for the family. I do not recall seeing a recipe with egg or cream of tartar but I'm not to old to try something new that looks like a delicious alternative. BTW, it is a pleasure to hear Shannon in the background and see her on screen occasionally. It's clear you married up and it is obvious that you treasure her as a Christian husband should.
one thing Ive learned about cookin is to improvise. thats what makes any item have yer own personal signature on it. when Kent cuts the bottom out of a can and uses it as his biscuit former you know its a winner. awesome.
Hey Kent. I made these Saturday *and* Sunday. The first attempt, I used 1 teaspoon of baking powder, instead of 1 Tablespoon. The gravy was awesome both days! (I used 1 lb instead of 1/2 lb - highly recommend - love the bacon grease in the roux). The biscuits were vastly superior the second day, you can imagine. Thanks again for the ideas and knowledge you share.

Just found this channel. Biscuits and Gravy has to be one of my favorites. My grandpa used to make it a lot when I was younger. I'd always go in for seconds and if there was any left after that I'd clean the rest up. He passed a few years ago, my grandma still makes it here and there, or if I ask nicely. It's one of my many ways of remembering him. I know one day I'll see him again, somewhere. And when I do, I'll make us some Biscuits and Gravy with coffee.
I have made the gravy like this for years. My mom and grandma taught me and I’ve never forgotten it. I showed my wife how to do it and she comes close, but manages to mess it up. I don’t know how she does it. I think she doesn’t want to make it and screws it up to make her point. Lol anyway bless you and your family brother. Have both cook books, awaiting the third.
Same here, my wife messes gravy up everytime. The most common mistake is rushing the roux. You need to cook the flour long enough to get a good taste without burning it. And if you want to spice it up a bit use 1/2 sausage and 1/2 chorizo, my family insists on it now adays.
I know the butter cutting method is traditional, but one day I melted my butter and dumped it into the cold buttermilk, and got these delicious little butter shards as they re-solidified. Took seconds. Haven't used my pastry blender since.

When I was in the Army before never had biscuits and gravy, wow did I fall in love with them. We would exercise at 6am for about an hour and a half and then head to the cafeteria... something I always looked forward to. Great memories. Thanks for the recipe :)

I have always been fairly good at making the sausage gravy... at least my family likes it. However I have always had to resort to biscuits in a tube. No more! These biscuits were easy and very tasty! The dough came out exactly as Kent described it. It really helps that he tells you what to look for when making them. Very clear instructions and easy to follow along. I did follow your recipe for the sausage gravy. Again... very good. Thank you for sharing your talents and techniques. You are a true living legend.

Kent you remind me of my pops. He loved southern cooking & talked just like you do to. His mental cookbook consisted of VA, SC & TX recipes. Southern cooking has definitely been my source of comfort. I love this! Grew up in Alabama and learned to cook from my mom and grandma (She can make gravy from cardboard and make it taste good, lol). This recipe and technique is a good bit different from what Ive always learned. The recipe Ive known is a lot simpler, Buttermilk, Flour, & Shortening. I love how cultures can make the same thing but incorperate their own ideas and techniques just to make it just that little bit different. Keep on keepin on and yehaw.
First time ever this morning making homemade biscuits & gravy and I followed along exactly except I cooked the biscuits in the oven at 425. Everything came out PERFECT! Wow!!! Love ya, Mr. Rollins!!!
I made these biscuits in a cast iron Dutch oven heated with charcoal briquettes. Amazing! Best biscuits I’ve ever had. Could not find cream of tartar and used one teaspoon of white vinegar instead. First time I’ve ever baked anything outside in a Dutch oven.

I'm crying watching this. I miss my Appalachian grandma and grandpa sooo much, and her biscuits and gravy were literally THE BEST!!! What I wouldn't give to taste them one more time... Thank you Ken for making these wonderful videos and giving us a glimpse back to when American life was good.

About 12 years ago, I was working as a moose hunting guide in B.C., Canada. Our cook was a marvelous lady from Oregon that introduced me to biscuits and gravy and I have wanted a recipe ever since. Thank you sir!!

Appalachian Gravy
Recipe for 4 people
2 tbsp bacon drippins
1 big tomato chopped
1/2 cup finely chopped onion (half a normal sized white onion)
2 Tbsp flour
1 cup milk
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp dried thyme
Bacon grease into pan, cook onions first until brown and softened, then add diced tomatoes, and thyme. Bring to simmer stir often.
In mixing bowl combine milk, flour, salt, and pepper.
When tomatoes soften pour in milk mixture
Gravy done. (Add more milk to get it to consistency you want) usually add extra half cup during summer phase
I always tell people from other countries to try this if they visit the US. I've only met a handful who didn't love it. Make sure you always add enough sausage!

Abigail Wood, I would add that biscuits and gravy is the quintessential Southern comfort food. All cowboys and Southerners were raised on it. I'm pretty sure my neighbors to the north don't understand it either, even if they are a part of the States. It also delicious baked in an oven and on the stove top.
My grandmother and mother were from Texas. They made gravy from a roux of bacon grease and flour. When it turned light brown they addd a can of evaporated milk and a bit of regular milk, added pepper and salt to taste. They never made it with sausage.
Take some scones, make a béchamel sauce and add cooked and crumbled Jimmy Dean sauseage and you’ll be pretty close.

Yeah these aren't sweet biscuits they're more like savory scone. Great with just some butter as side or split in half for a crispy chicken sandwich or eggs and cheese and bacon. Now I want some thanks ya muppet.

Mr. Kent just here recently found your channel and i have great respect for what you do. My dad was and old cowboy here in Missouri that broke wild horses as a young man. He passed away in 2010 with leukemia and i wish i could share this with him. He would have loved this more than his cowboy movies lol. Kent, I would like to thank you and Shannon for getting me into cast iron cooking. My parents had some but never cooked on them when I was young and now that I'm grown your channel and recipes made it accessible to me so I gave it a try and fell in love. I have an ever expanding arsenal of cast iron cookware and my skillet is well seasoned enough omelettes come out clean every time! Seeing as it is ash Wednesday and the beginning of Lent, maybe you could do some fried fish recipes for the viewers that observe Lent? I can't wait for the new book, keep up the great work! I just found your channel today. My Dad passed in March of 2020 and he loved to cook and bake. He used to make "Angel Biscuits" with a homemade apple butter, much similar to how you make your biscuits. Your channel brings me comfort and I love all of your recipes. I' am excited to make your biscuits and gravy.

I remember my mom making gravy. She would use Pet milk and she would make a roux my adding the flour to whatever fat she was using and would brown it. It gave the gravy a lovely brown color, depending on how long she cooked the flour. Absolutely delicious.

Haha I was thinking a similar thing, hi also in the UK and I made the chicken fried steak for my dinner today. Was good even though the steak I had was thick, it just took longer to cook that's all. I will try it again if I can get a thinner cut.
Thanks for another great cooking video. I cook biscuits like my mother taught me. I'm the middle of five sons and she could always use a hand in kitchen. My wife never minded me helping out either and I remain the official biscuit baker for the family. I do not recall seeing a recipe with egg or cream of tartar but I'm not to old to try something new that looks like a delicious alternative. BTW, it is a pleasure to hear Shannon in the background and see her on screen occasionally. It's clear you married up and it is obvious that you treasure her as a Christian husband should.
one thing Ive learned about cookin is to improvise. thats what makes any item have yer own personal signature on it. when Kent cuts the bottom out of a can and uses it as his biscuit former you know its a winner. awesome.
Hey Kent. I made these Saturday *and* Sunday. The first attempt, I used 1 teaspoon of baking powder, instead of 1 Tablespoon. The gravy was awesome both days! (I used 1 lb instead of 1/2 lb - highly recommend - love the bacon grease in the roux). The biscuits were vastly superior the second day, you can imagine. Thanks again for the ideas and knowledge you share.

Just found this channel. Biscuits and Gravy has to be one of my favorites. My grandpa used to make it a lot when I was younger. I'd always go in for seconds and if there was any left after that I'd clean the rest up. He passed a few years ago, my grandma still makes it here and there, or if I ask nicely. It's one of my many ways of remembering him. I know one day I'll see him again, somewhere. And when I do, I'll make us some Biscuits and Gravy with coffee.

I have made the gravy like this for years. My mom and grandma taught me and I’ve never forgotten it. I showed my wife how to do it and she comes close, but manages to mess it up. I don’t know how she does it. I think she doesn’t want to make it and screws it up to make her point. Lol anyway bless you and your family brother. Have both cook books, awaiting the third.
Same here, my wife messes gravy up everytime. The most common mistake is rushing the roux. You need to cook the flour long enough to get a good taste without burning it. And if you want to spice it up a bit use 1/2 sausage and 1/2 chorizo, my family insists on it now adays.
I love how he picks the flour sifter off the ground and just throws it in. It ain’t trail gravy without a bit of trail mixed in.
I’ve made sausage gravy biscuits for 35 or more years, nothing beats this on a cold morning.
I know the butter cutting method is traditional, but one day I melted my butter and dumped it into the cold buttermilk, and got these delicious little butter shards as they re-solidified. Took seconds.
Haven't used my pastry blender since.

When I was in the Army before never had biscuits and gravy, wow did I fall in love with them. We would exercise at 6am for about an hour and a half and then head to the cafeteria... something I always looked forward to. Great memories. Thanks for the recipe :)

I have always been fairly good at making the sausage gravy... at least my family likes it. However I have always had to resort to biscuits in a tube. No more! These biscuits were easy and very tasty! The dough came out exactly as Kent described it. It really helps that he tells you what to look for when making them. Very clear instructions and easy to follow along. I did follow your recipe for the sausage gravy. Again... very good. Thank you for sharing your talents and techniques. You are a true living legend.

Kent you remind me of my pops. He loved southern cooking & talked just like you do to. His mental cookbook consisted of VA, SC & TX recipes. Southern cooking has definitely been my source of comfort. I learn from so many different cooks out there like Mr. Rollins here. I love this! Grew up in Alabama and learned to cook from my mom and grandma (She can make gravy from cardboard and make it taste good, lol). This recipe and technique is a good bit different from what Ive always learned. The recipe Ive known is a lot simpler, Buttermilk, Flour, & Shortening. I love how cultures can make the same thing but incorperate their own ideas and techniques just to make it just that little bit different. Keep on keepin on and yehaw.

First time ever this morning making homemade biscuits & gravy and I followed along exactly except I cooked the biscuits in the oven at 425. Everything came out PERFECT! Wow!!! Love ya, Mr. Rollins!!!
How long did they stay in the oven?
I made these biscuits in a cast iron Dutch oven heated with charcoal briquettes. Amazing! Best biscuits I’ve ever had. Could not find cream of tartar and used one teaspoon of white vinegar instead. First time I’ve ever baked anything outside in a Dutch oven.
great recipe. I added a few onions and jalapenos while cooking the sausage and it kicked it up a 1/2 notch. it was good. Thanks Mr. Rollins, I learned how to cook good watching you
