    @David Olenick. In the days before refrigeration, most of the pork that was slaughtered in or around hot and humid New Orleans was preserved not by smoking, but by pickling. True red beans and rice is seasoned with the tangy goodness of pickled pork, and once you taste it, you’ll know why. Pickle meat is very hard to find outside of Louisiana. You can use other meat like a used holiday ham. They also give your beans extraordinary flavor!!!!

From Alton Brown, to the New Orleans mama in the kitchen, to every single recipe by professionals. So they can avoid using sodium phosphates, sodium erythorbate, sodium nitrite like in the PACKAGED VERSIONS. IDIOT.

    EXCELLENT job showing people how to sort their beans! I hope you know how valuable your videos are for beginning cooks. People don’t know how to cook these days because of fast food but it really is cheaper to cook yourself because you will have a meal that will last you a few days rather then just one.👍🏽

    I'm in Dallas Texas and found pickled meat in Fiesta grocery.I only bought a little so I'm going to have to save the rest.lol I will use a ham hock too. This is an excellent video. I could even hear the dog crying to get in a eat some beans.lol.

      queenie6000 WOW I've been hearing about the Fiesta Grocery. You know what I remember when i went to a fiesta 10 years ago after katrina.I was in Houston Texas. I had purchased some crawfish tails for my crawfish pasta. NOW I remember. OHH OKAY good. So you have the Pickle meat and you some hamhocks too. AWESOME. GOOD!!!! :) Let me know how it turns out.       Charlie Andrews Charlie, there is a yearly fiesta in St. Bernard Parish, usually in March or April. There are lots of people in St. Bernard of Spanish descent. Look at the names in St. Bernard Parish in Louisiana , one of the main highways is Judge Perez (an extension of N. Claiborne) and the community college in St. Bernard is Nunez community college. Descendants of Spaniards/Spain. These Spanish descended Louisianians are considered Spanish Creoles, rather than the French Creoles and Creoles of Color you find in places like Metairie or the city. Spanish Creoles are the creators of jambalaya. Just a lil info...

      Yes pickle meat or pickle tips lol Make sure you boil it first for about an hour to remove some of the salt then add some fresh water then add your pickle tips along with your beans and let them cook. The pickle meat I used for this recipe had little salt in it!

    Yes in deed! Baby go head! These beans are the real deal. Looks so creamy and delicious! These people don't know NOTHING about pickled meat honey. Back in the day 80s, I used to walk to the corner store/butcher to buy pickled meat for my momma's beans. "Gimme a dollars worth of picked meat" LOL. The pickled meat does make a difference in terms of flavor! I only use Camellia beans or canned blue runners when I'm lazy. I used all the same ingredients but I fry all my meat and seasonings down first, cover beans with stock (not water) and cook until beans are cooked. I usually cook beans every Monday This video has my mouth watering. Thanks for sharing! :-)

      Thank you Windy! This is one of my first video's I released on my TH-cam channel! Oh yeah you are right about that. I get so many questions about the pickle meat LOL It does play a big role in flavor for your beans just like with any other meat you add! I never used those canned beans especially those blue runners. I had some of the canned blue runner beans when I went by a relative long time ago and I didn't like them at all. I'll always recommend you make them from scratch I don't care how lazy or tired I am I gotta cook some beans from scratch right out my pot. LOL I don't cook red beans as much as I used to. You're welcome!

    I love your videos, reminds me of my Mom cooking California, fuion stuff, you think it's fusion cuisine but her approach was so trafitional. When I watch your videos, I feel like I'm watching the real old school New Orleans shit, and that was exactly what I wanted to see. I love experiments, but I have respect for tradition and that's exactly what I wanted to see. I'm not from the south even so you guess are great, and I want the real tradition.     You do an amazing job at cooking and with your videos. Some people will never understand New Orleans style of cooking but there are so many , especially since Katrina, that want to know!!!     I made some last night and used smoked sausage, Earl Campbell hot links (I grilled them first) and bacon. Since I'm Mexican, I used a little cumin when I cooked down the onions and peppers and used chicken stock. I finished it with butter like you do and that put it over the top. I really like how you cook.... Thanks....

    Thank you, Mr. Andrews for the pork bones idea. It gave my broth richer flavor, as I had to hold back on the creole seasoning. Once when I had no red beans, I used lentils, a double package. I also like to add at the very end of cooking a splash of Worcestershire to zip it up; but, your recipe is great and instructive

    I made this recipe a week ago and forgot to post on it. I could find the pickled pork so I used smoked pork ribs tips and the smoked sausage. I absolutely loved it. I must admit that it would have tasted better without smoked sausage. Overall the taste was great. I made your sweet potato pie again..lol I love that recipe ( I made the one with boiled sweet potatoes

Wait you think it would of tasted better without the smoked sausage? That's different! What type of smoked sausage did you use? Well at least the overall taste was good!       +Selice Burns Oh noo. That's not the type of sausage you use in Red Beans you need a GOOD quality smoked sausage. Do they sell good quality smoked sausage in your area? If so give me the names of the brands so I can do researchave to determine if that's what you need to use next time! :)

      You're welcome! Wow cool! I'm glad that I was able to help you learn a few things! When cooking the pickled pork make sure you boil it in fresh water for about and hour to get rid of some of the salt then you add the meat into your beans and let it cook. :) Hope this helps!

      When you eat these beans they'll be a staple in your beans repertoire!!!! In New Orleans the old timers would always
      have red beans and rice on Mondays because Monday was laundry day and the cooks could put on a big pot of red beans and rice and let it cook while they did the laundry ( and after a week-end of rich foods and partying the beans were a welcome comfort food. ) And if you have ever been in New Orleans on a week-end you will KNOW what I mean by party! No place on earth parties like New Orleans!!!!!!!!!!

    Pickled brisket bones? Didn't know about it. Didn't think I could get it here in Houston, a stone's throw away from New Orleans. But Walmart's had it all along! Charlie I learn something new every time I watch you cook. Thanks! My red beans aren't aweful, but they're not good by any Cajun standard.       Hello there! Not sure if that will work as the beans need to be cooked at a certain temperature. I've never cooked my beans in a crock pot. I guess you can try it but do so at your own risk. :)

    Yes, he can cook. In my family charlie, We put the beans with smoked meat on first. Then we render the fat from the sausage, saute the vegetables in the rendered fat, deglaze the skillet with juice from the pot with beans. Add the vegetables give it a good stir, and let beans continue cooking. We eat our beans cornbread and fried chicken. As you know that's lunch on Monday's, you did good .

      Hey there, I read below that holiday ham can be substituted for the pickled pork.. What is that and where can I find it. I live in the Houston, TX area. Can I use pork neck bones as a substitute too?? I wish I can find those pickled pork brisket bones though!!

      I used to live in a little Cajun town 50 miles south of New Orleans, and they did not use pickled pork so far as I was aware, though my Cajun mother in law rendered a little salt pork to get started. Though there is overlap, Cajun and New Orleans Creole can be quite different. In fact, one Cajun town cooks different from the next. All are real tasty. Left over ham works, especially if you make ham stock with the bone, etc, and use that instead of water. I also always sauteed the vegetables and browned the sausage before adding it. Everyone does it a little different, so use what you have, and enjoy!

    😊..yes keep doing what your doing..I'm from Atlanta and I've been trying to master Gumbo and alot of New Orleans dishes and I came across your videos and I like watching you, you're very detailed and clean when cooking the food and the end result looks delicious. I want to sit down and taste it with you. keep posting them cause I'm gonna keep watching them..and disregard the people writing and responding with bs..they can't Cook nothing no way!!😉

    Nothing better on a cold winter day than a pot of red beans, and a pan of corn bread. Of course, beans are good any time of the year.
