Would there be a benefit to mounting the 16" left rear spring on a 2" tall cup on top of the rear in a stock car?
It could help some, better check to make sure you can do it.

So regardless of where the mounting points of the tops of the sliders are, the actual height of the springs will determine the degree of influence on the springs by the cg of the car?
No the pivot point is also a part of that, but you can change the spring very easily and get better results.
