I have made this dish at least four times now. Our family love this dish. I want to share with you and your viewers what I do. I use the Trader Joe's 10 oz bag of shredded kale. I shred it further in my food processor. I find this easier to bake and eat. I also add 1 cup of frozen green peas and 1 can of beans, usually white beans. I find this is the perfect amount and does not overflow. We love love this dish. My husband is not vegan and he loves it. Thanks you for this recipe.

Hi Jill, We are seniors, and new to the WFPB lifestyle on the recommendation of our Doctor. I was a pretty good cook pre-WFPB, but have been feeling insecure about cooking under this new lifestyle. I came across your channel, and have found your recipes to be inspirational, so I decided to make your kale/potato bake. I'm so glad I did - it was delicious! I should mention that I seem to be incapable of following a recipe without making changes, so I doubled the garlic, and added chopped red pepper and artichoke quarters, which enhanced the tang of the tofu sauce. My partner has been having a much harder time adapting to WFPB foods, but he loved this! I will be making this many times in the future and will be supporting your channel. Thanks!

Yukon Gold potatoes have less starch than other potatoes so they are always firmer when cooked than other potatoes. For people who need to monitor the sugar/carbs in their diet this is a much better choice than any other potatoes.

I made this today, but the only tofu I had was from when I made vegan 'feta' cheese left over from a week ago. So i used it instead of plain tofu, and the result,,,,,,,, tastes amazing.
I made this today, and it is very scrumptious. However, I would use less broth when steaming the potatoes because it came out a little bit watery in the end. Also I used a 2 quart casserole dish and it barely fit so I think that would help. Either that or I have to use a larger casserole dish because I don’t like cleaning my oven. 😂
We freeze a tonne of kale from our garden, so I'm always looking for new ways to use it. I made this the other night, and really liked the flavour of the sauce. There was enough sauce to double the amount of potato. If you slice the potato instead of cubing, it would be similar to gratin potatoes. The only thing is the colour of the casserole the next day is very grey and unappetizing looking. The kale is not bright green anymore. I suggest adding a half a teaspoon of turmeric to the sauce to give it a golden colour.

Made this tonight with one change. We didn’t have any tofu so substituted a can of white beans, drained and rinsed, in the sauce. Delicious recipe so will definitely try it with the tofu next. Thanks, Jill!
Jill, thank you, I made this today and it was very tasty. I added more Kale (about 6 cups) and I baked it in a bit bigger pan so there would be no threat of bubbling over. I also didn't add any additional liquid for the extra 2 cups of kale as there was plenty - and the kale wilts.
I’m the beginning of my WFPB journey 5 1/2 years ago I couldn’t stand kale. It tasted bitter and woody. During the last maybe 10 months I’ve started to warm up to it. I’m looking forward to trying this recipe. Although it makes a huge amount and I’m only one person so I’m going to have to cut it in half and then half again lol thanks for sharing

Washed greens can be easily stored in a ziploc bag in the freezer (kale or spinach) and then use them as slowly as you want. Just crush them while still frozen, instead of chopping, and add to soups, or casseroles like this. We freeze a lot of kale from our garden, and then use is all winter this way. It's very convenient, and nothing goes to waste.
I have a LOT of trouble enjoying adult kale, and the kale I had was just too old so made this with frozen broccoli instead. Also was low on tofu (about 1/4 cup at most) so filled the rest of the cup with cooked chickpeas. Looking forward to how this comes out!

Oh my goodness!!! That looks really good. What I'm cooking, right now, is green bananas (fig) in my electric/digital pressure cooker, and will be adding Chinese spinach. It is amazing how (certain) green vegetables go so well with fibrous and/or starchy foods like potatoes. Thanks for sharing! 💜💜
Sounds delicious. Did you saute the mushrooms first? I just made her Vegan Mushroom Lasagna. OMG - it was to die for (I increased the veggie broth from 1 cup to 1 1/2 cups.) If you haven't tried it yet - please do. It's definitely going into my rotation. I'm going to try this Kale & Potato Casserole next. Someone suggested sprinkling vegan Parm on top; that sounded like a great idea too.

I did have about 1 cup of sauce left over to use somewhere else. We both felt it needed more seasoning though. I will make this again maybe with carrots next time.

We made this with the kale we harvested from our little garden! 🥦 Sauerkraut on the side really went well with this recipe!

If you freeze kale leaves, then crush them while frozen, they crumble into very tiny pieces easily, and are not chewy when added to recipes like this.

Lemon juice will work fine and the larger dish too 👍You might not have to bake it as long
