This is so good!!! I used mushrooms and black beans instead of soy curls. I put it all in the pan with peppers and onions. I also put the corn in the mixture. I didn’t need the veggie broth at all. I will make it again and again. That is how good it is.

looks great. I've been making enchilada casserole instead of enchiladas. I can never get the wrapped ones to not split on me, so the casserole is all the same ingredients without that stress. Love the soy curls, clean and easy protein.

I love putting a bit of sauce on the bottom of the pan before putting the tortillas in. helps it not dry out on the bottom!
I like to toast the tortillas a little too.

That's what I was thinking--really reminiscent of enchiladas (just add some sliced olives)!
Stacked enchiladas are legitimate. I’ve had them around northern New Mexico, and took the idea home.

Since the sauces are going to be mixed in the end anyways, why not make one sauce with all the ingredients, from the beginning?
Lasagna is in layers. I prefer separate flavors. But you could totally do what you want, I would imagine.
I always wonder why TV cooks never scrape out the container with a spatula... A lot of your sauces were left behind!
It is just expedient for filming. No one wants to watch me scape the container for a whole minute 😉
