Instead of using coconut to combine the ingredient, You can use tahini (sesame past). Tahini and dates go very well together. In middle east, tahini is not only used in savoury dishes, but is used in sweet dishes. One simple recipe, you can stuff the dates with any type of nuts (ground or whole nuts) spread some tahini one top, and you'll have an easy and healthy recipe.

My favorite flavor was using Mexican vanilla extract, with cocoa powder, fresh toasted peanuts, coconut oil, and chopped up Mexican cacao nibs. To enhanced the chocolate I skip the salt and the liquid I add a splash of balsamic vinegar and dark soy sauce... it really does something!

Try using a tin can of something to steamroll the mix flat. It should help speed things up so you only need to press the edges flat with your fingertips.
ooh i wish i could eat these they sound yummy. but I'm allergic to half the ingredients. lol. I thought it was another bar i could just take the nuts out but its mostly nuts and coconut( which is both what I'm allergic to). but it looks soooo good....Worth the hospital trip? haha love your recipes.

I think you can also make Protein Bars pretty similar to this. I made a couple a few years ago from another channel called Scooby something. (a guy without a shirt on talking lol) they turned out pretty nice as well and was pretty easy to do.
CJ i read that dutch-processed [ie treated with alkali] cocoa actually removes much of the flavonoids and antioxidants, so ive been trying to only buy high quality cocoa that is NOT dutch or treated with alkali...
i make something like this only i put 151proof rum, frangelica, toasted hazelnuts, mini chocolate chips, shape them into balls and roll them in super fine hazelnut ground coffee.
you can find the dates at middle eastern grocery stores or fruit markets. I live in Detroit, We have a lot of those here. I always see the medjool dates at these places.

it's really amazing, how long can we store it? I mean the shelf life and where to store it. India has quite warm climate..
I did this before i know it was a thing!! So proud of myself, I didn't use cocoa powder though i just covered the top with dark chocolate.

Chef John to stop the sticky or tacky, roll the bar in either oat flour or rice flour. before wrapping.

i was at the store with my mom today, and she gave in to getting me the fancy chocolate protein bars that are so unhealthy but i love them so much
This is energy instead of protein bars, but yeah, the ones in the store are full of corn syrup, hydrogenated soybean oil, sucrose, etc.

Artificial vanilla flavouring comes from beaver balls. I had a bit of a Soylent Green moment when I first read that.
I believe that is typically packaged under "natural flavors" there is nothing artificial about beaver balls.
