Vicious to my opinion u use onion and garlic to add flavor to your oil/butter when u cook raw meat/seafood..in the case if you use bacon or salted meat then you might not have to..unless you are like me, adding onion all the time

I have eaten carbonaras in a lot of restaurants BUT none of them are as good as Genaro's recipe! I always follow his recipe, and it's always delicious!!!!! The best carbonara I've ever had (no joke!). It's so simple and quick to cook!

If you can't find pancetta just use smoked pork belly. I prefer to use local ingredients so for my carbonara I use for smoked Swedish pork belly!
