I literally type " vegetarian meal examples" in youtube and every single video that popped up was vegan...smh,im glad I found yours...the only vegetarian video on TH-cam I swear.
I've been eating so many greek salads, cucumber salads, tomatoes, etc lately. It just hits the spot. I eat them with feta cheese or some chickpeas, tuna fish/chopped chicken. Obviously you can use your source of protein you prefer, but it's just so good and so refreshing. I love acidic/briny things like olives, pickles, mustard. Sometimes I add noodles to make a Greek pasta salad or rice to make a nice rice salad
i'm the same as you-- I really enjoy the briny flavors and I think they are perfect for meal prep ideas because they store well and they taste good a few days later which is important!
@flourishingmiranda Yes, I was going to mention that I like meal prepping items (like the Greek salads/cucumber salads) that last a few days, and actually still taste good. I don't want to meal prep 10 lb of something that I don't want to eat bc it tastes stale or mushy now
I prepped the huge white beans for kale bean salads, lentils to add to veggies and potatoes, tomato sauce for my spaghetti squash and to add to lentils, washed and prepped all my fruits and veggies, froze a ton of bananas for smoothies and made a delicious hummus for snacks. Being prepared makes life so much easier.
This week I made, what I call, a fall pasta salad. It has rotini pasta, white beans, green beans and I peeled, cubed and roasted a butternut squash too. I used basic vinaigrette. Turned out pretty tasty!
Every week I prep a few jars of overnight oats. I do 2/3 cups oats, 1 cup of almond milk, and one scoop of protein powder. Then when I am ready to eat it I add fruit or yogurt. Very filling.
I shredded up zucchini for zucchini bread proportioned it and stuck it in the freezer for future me ( grown in our garden grown with just water and our 4 rabbit poop for fertilizer) also made 2 quarts of refrigerator pickles with cucumbers from our garden. I’ll make banana bread tomorrow and later in the week I’ll make zucchini bread.
I am currently making homemade pinto beans to add to a Taco Soup on Tuesday. The rest I'll freeze for future meals. I am also roasting cauliflower for a cauliflower gratin for tomorrow night. Making homemade tomato sauce from the last of the Roma tomatoes from the garden for a quick pasta dish later this week as well as the Taco Soup. I also prepped a batch of homemade rice a roni with a Spanish rice flavor pack. I already packed up several overnight oats for breakfasts. Sunday is my meal prep day too.
Thank you! 🙏 ❤️ Potatoes sallad is always good. Cooked and chopped potatoes and green beans seasoned with balsamic vinegar, mustard, salt and eventually cooked eggs. Very tasty even the next day.
these look amazing! my recent obsession and recommendation is homemade eggo style waffles. I make a batch of waffles in a mini waffle iron and freeze them for grab-and-go use. literally could not taste a difference but I know all the ingredients that go into mine! :)
I’m planning to use the last of the garden stuff for a batch of oven roasted spaghetti sauce and make a batch of apple muffins with some wrinkly galas 😂 Tonight is easy naan pizzas and tomorrow will probably be a stirfry over rice
Hey there, have you ever tried pureeing cottage cheese and cooking it with the eggs??? It's the 'viral tiktok egg/cc" meal going on right now. I tried it! It's actually very delicious, you don't even know cc is in there plus I think the cc makes the eggs more fluffy!

these are both high protein meals! (so is the boca burger pita!) but the greek bowl is 23g protein and each burrito is 13g protein
I eat tortillas without warming them. I make peanut butter and jelly roll ups. Simple ingredients, but I feel fancy.

You can pile on cherry tomatoes between two plates and cut right through all of them at once. Cuts down a lot of time!
I’m good that sounds like a giant mess. I’m not so strapped for time and I actually love cutting and chopping so I’ll continue to do it my way

It is! But they’re only about 130 calories each so I know my husband will eat a few each breakfast and it’s enough for the week!👏🏻
