I recently went to Tennessee and they served this huge pancake one got 1...( 6in circle about 1 in thick) one side was dark, so I think they must have cooked in black iron skillet in oven. Then flipped on a plate....do you think this recipe would work like that? Kinda like a pancake baked like cornbread
Ok guys.... her pancakes are LEGIT!!! They are soooo good. I followed her exact recipe and I did not have a problem with mine. HELPFUL HINT: in order for them not to fall a part you need to cook them on really low heat for about 6 minutes on the first side and then another 2 to 3 minutes on the other side and they will turn out perfectly. The key is LOW HEAT and a long cooking time for the first side. I tested mine and they were cooking for 6 minutes exactly on the 1st side and they came out perfectly!!

Started Keto beginning March. Found this receipe today. OMG these are amazing. Just like normal pancakes. I used skinny foods maple and cinnamon syrup. Zero calories Saved some batter for tomorrow. I also topped with blueberries and a drizzle of double cream. Yum.

Sooo... I definitely did something wrong. I cut the recipe into fourths. But my batter came out extremely thick. So I put some of it in a ramekin and baked it. It made the best vanilla cake. I added some whipped coconut cream. OMG, heaven!

I will say mine took WAY longer to cook than 3 min per side. I was afraid of burning so kept the temp low, but while they were cooking I could do other stuff in the kitchen, so it wasn’t really a problem. This will be my go to recipe. OMG, I just made these and they are delicious!!! I wasn’t sure how they were going to turn out because they were hard to flip but once I got the hang of it, it was easy peasy. The taste was neither eggy nor coconutty, it was just great! 👍 and yes, the yield was exactly 16.

Tried so many recipes and it’s either too eggy or too plain. These were amazing!! My only issue is I don’t own a skillet so I used a regular frying pan and the pancake did not want to flip. To be fair I did make them a lot bigger than yours. Maybe that was the issue. None the less they were amazing!!! Didn’t even need the syrup.
I love these pancakes too but I agree they are delicate and hard to flip until you get the knack of it. I do make mine smaller to make them easier to flip. Plus cooking them at a low heat and flipping them when a spatula can easily slide underneath helps. Glad you liked the recipe!

Oh and I added a dash or 2 of pumpkin spice mix to it as well, delicious! In honor of the fall season coming up. It is hard to believe there were eggs in it. But, i did learn a tip to use room temperature eggs to combat the eggy taste in recipes. But, some still taste like omelets, but not this one. Thank you again from a fan here in Reno on a cold rainy day.

I used almond flour. That's what I had in home and it taste just wonderful as well as the batter. It was a little difficult to flip over with coconut oil in pan and well cooked. Once flipped I let it cook for a minute and it has such a pretty color. I don't know if it was harder to flip because I use almond flour, although the end result was tasty and looks good. I have plenty more for the next couple of days. Didn't have syrup, so I topped it with Smuckers sugarfree strawberry jam.Thanks for this pancake recipe.

I paired them with Joseph’s sugar free syrup because I couldn’t get my hands on the choczero one but they still turned out so good! I have a great pancake recipe too: Brush avocado oil in pan In bowl mix 1 1/2 TBS butter , melted 2 room temperature eggs 1 TBS whey protein powder 2 TBS WHOLE psyllium husk 2 TBS almond flour (OR White Whole Wheat for non-keto and 1/2 tsp baking powder) Whisk well together 1/2 tsp maple extract 1 tsp vanilla 4 TBS almond milk 1 tsp swerve brown sweetener Optional: pinch of cinnamon Whisk well together Pour into preheated pan (just under medium heat) and wait until bubbles cover the top and they pop then flip, cook briefly Top with cream cheese, strawberries and (keto) maple syrup if desired

This was posted on my birthday 15th! I only discovered this today when i am craving pan cakes. I will make this for school tomorrow and have some fatty beef cuts with it! I will skip any sweetners as they make me feel like there is a coating on my tongue.
Thank you so much! They were delicious!!! I cut down the sweetener to 2TBS and the cream cheese to 6oz. I used two pans to cook the pancakes and covering them while they cooked made flipping them manageable.
Actually we make ours using only cream cheese, eggs and baking powder. They are excellent and the texture is like traditional pancakes. We cook them in a pancake maker which does both sides at once. You could also use a waffle iron.
Skyfire yes it is 1 egg to 1.25 ozs of cream cheese. Beat by hand or with a mixer until smooth and let stand for a couple of minutes before cooking.No other ingredients are necessary although from time to time we will experiment by adding baking powder or vanilla or erythritolIt. This makes 2 small or 1 large pancake. Just scale up for more. We cook in a pancake maker but a frypan with a bit of butter should work quite well. We originally got the recipe from a 28 day keto meal planner.
I definitely am happy with this recipe.. The taste is so delicious and unique that I actually don't miss the original all purpose flour mix.. Definitely a game changer for my family's new healthy lifestyle.. Thank you so much for sharing this recipe with us.

I made these but they raised so high they burnt on the bottoms before they were cooked inside. I think they need a little more cream to thin. They were very good though. I will adjust maybe the cream and baking powder and low heat. I had blue berries and sugar free blue berry jelly. I melted a few tablespoons of it and added a handful of blue berries; poured it over and sifted some Swerve confectioners sugar on top. You could even whip up some cream. I miss my thick Mrs. Buttersworth and this was even better.
Tried this recipe today. First, they are delicious and that slight coconut flavor was delightful to me. The only thing I saw different from your recipe was that my batter was very thick. It was thicker than cake batter, more like biscuit dough. However, I spooned them onto the griddle and pushed them flatter and they were fine. All my ingredients were room temperature, except for the cream. What did I do wrong? It wasn't wrong exactly, but I'm more curious than anything. Thank you so much for putting this recipe out there.

I made these for dinner alongside air fried bacon. These pancakes taste BETTER than IHOP.
There were NO leftovers.
I halfed the recipe and added 2 tsp of chia seeds. So far so good. The batter tastes delicious. I'll update after I flip them.
I bet the chia would help support the pancake and make them easier to flip.

I have a great pancake recipe too:
Brush avocado oil in pan
In bowl mix
1 1/2 TBS butter , melted
2 room temperature eggs
1 TBS whey protein powder
2 TBS WHOLE psyllium husk
2 TBS almond flour
(OR White Whole Wheat for non-keto and 1/2 tsp baking powder)
Whisk well together
1/2 tsp maple extract
1 tsp vanilla
4 TBS almond milk
1 tsp swerve brown sweetener
Optional: pinch of cinnamon
Whisk well together
Pour into preheated pan (just under medium heat) and wait until bubbles cover the top and they pop then flip, cook briefly
Top with cream cheese, strawberries and (keto) maple syrup if desired
Just made these, lickibg the blades of the blender as we speak.. That good. The only challenge is flipping them, they break and they cook very fast.

Thank you so much! They were delicious!!! I cut down the sweetener to 2TBS and the cream cheese to 6oz. I used two pans to cook the pancakes and covering them while they cooked made flipping them manageable.

I think some people have substituted with coconut flour. Just use 1/3 the amount.

Actually we make ours using only cream cheese, eggs and baking powder. They are excellent and the texture is like traditional pancakes. We cook them in a pancake maker which does both sides at once. You could also use a waffle iron.

Skyfire yes the only ingredients we use are cream cheese, eggs and baking powder. The eggs provide the moisture to the mixture.

Skyfire yes it is 1 egg to 1.25 ozs of cream cheese. Beat by hand or with a mixer until smooth and let stand for a couple of minutes before cooking.No other ingredients are necessary although from time to time we will experiment by adding baking powder or vanilla or erythritolIt. This makes 2 small or 1 large pancake. Just scale up for more. We cook in a pancake maker but a frypan with a bit of butter should work quite well. We originally got the recipe from a 28 day keto meal planner.

I made these but they raised so high they burnt on the bottoms before they were cooked inside. I think they need a little more cream to thin. They were very good though. I will adjust maybe the cream and baking powder and low heat. I had blue berries and sugar free blue berry jelly. I melted a few tablespoons of it and added a handful of blue berries; poured it over and sifted some Swerve confectioners sugar on top. You could even whip up some cream. I miss my thick Mrs. Buttersworth and this was even better.

Tried this recipe today. First, they are delicious and that slight coconut flavor was delightful to me. The only thing I saw different from your recipe was that my batter was very thick. It was thicker than cake batter, more like biscuit dough. However, I spooned them onto the griddle and pushed them flatter and they were fine. All my ingredients were room temperature, except for the cream. What did I do wrong? It wasn't wrong exactly, but I'm more curious than anything. Thank you so much for putting this recipe out there.
