How to Cook Smoked Creamy Bacon Mac and Cheese (on the Rec Tec Pellet Grill)

- This Smoked Creamy Bacon Mac N Cheese Recipe is a BBQ fans must. Did I mention it has bacon on top? Make sure to blow your family and friends away with this outstanding dish. Its very simple and easy. (Recipe Below)
2 tbsp butter
2 tbsp flour
2 c heavy cream
8 oz sharp cheddar cheese (shredded)
8 oz m jack/Colby blend cheese (shredded)
8 oz parmesan cheese (shredded)
1 lb medium size elbow noodles
1-2 tbsp hot sauce
1.5 tbsp white truffle oil (optional)
1/2 c sour cream
Salt and Pepper to taste
1 normal size pack of thin sliced bacon

You really know how to cook! I found the mac & cheese! Wow what got you into cooking if I may ask? I been cooking from before 8 yrs. old, but a stroke & being a very severe Epileptic, my seizure also took alot of my cooking skills away. I use to even make up my own dishes. I love your videos & cooking & dishes. I have made a few & love them! Thank you alot!

Because you seem to know cooking so well; I still want to hear want YOU think about the Stumps Gravity Fed smoker that uses charcoal and aromatics (oak, peach, hickory) VERSUS the Rec Tec pellet grill. I'm still learning more about cooking/smoking/grilling and various cookers to do it with, so your own take would be valuable.

Hey Leonard, I'm sorry but I don't have any information or experience to do with the Stumps Gravity Fed Smoker. I'm always into new things but I'm just not in the market for a smoker as of now. That may change real soon though....
We used this recipe except we used panko bread crumbs instead of the bacon because of a vegetarian in the family. OMG, it was great. I can't wait to do it with bacon... Thank you! Love George

What kind of cream are you using?
Do you stir it while it's on the smoker to get more smoke flavor mixed in with the mac and cheese that's not on the surface?
I don't normally because it has plenty of smoke flavor but you could in order to give you a little extra smoke flavor. Great idea, thanks for watching.
For some reason my sauce was much thicker than yours before combining with noodles. Any ideas? Followed to a T.
Not sure anyone answered you. For creamery sauce, shred your cheese from a block. Pre-shredded cheese has cornstarch and other additives that keep the shreds from clumping, but in the pot they act as thickeners.
Not to step on your toes Mike, bacon is beautiful. I actually would make this with hot dogs that I would cut up. It looks fantastic.

no bagged cheese, buy blocks and shred it. That non stick stuff they spray on bag cheese changes the taste of food.
I would agree the bagged cheesed doesn't taste as good but I'm not sure its a big enough difference to warrant the work on a dish this size. Thanks for the tip though and I appreciate you watching.
They put wax on it so it doesn't stick together in the bag shredding your own would definitely make it taste better and creamier
