Form kebabs into a ball about a dozen and pan fry in coconut oil. I say one can use avocado oil as well, has high heat point. Chutney: Next in clean pan add black mustard seeds in oil& fry until they pop, ( though I noticed he added something else. To me it looked like dried cumin seed) add chopped onion, garlic, fresh chile-sauté until browned. Add fresh curry leaves & sauté bit longer, add 3/4 turmeric, teaspoon cashmerie? masala, add fresh chopped tomatoes-cook. Add some salt& heaping tablespoon sugar. Finally add fresh chopped cilantro-some now and some later. Can cook separately: steamed basmati rice, roti, naan. Not perfect-mixed order maybe-but this is what I understood!

It was already in the pot cooked when you started the instructions so I was not able to see what type of banana you boiled. If it was not plantain and just ordinary banana, was it unripe or was it ripe? The last question is what was that seasoning you used right after salt and before the ground black pepper. Shuma Dev was about to say in the sauce he does use mustards seed and he didn’t mention the other seed I agree it looks like cumin seeds it was funny yrs ago a friend had moths in her panty and her mother came to us and said she found where they were coming from she had the cumin seeds but we Aussies pronounce them Cummin my friend said no mum they are cummin seeds and her mum answered yes they are Coming They Are Going ... lol ...
Funny. In Indian cooking, a lot of the dishes start with splutter of either cumin seeds, mustard seeds or nigella seeds or combination of these. Other times if you want the garam masala flavour you would add whole cinnamon, cardamom and cloves into the oil first before the onion.

Its called Graham Masala. It's a spice used a lot in Indian cooking. Very flavorful

Let me help you. He used in ripe plantains, so he boiled it.
After salt he added a pinch of Dash’s mixed herbs . Hope this helps

He said no binder required ( I believe because the banana itself is binding)

Coconut oil is not best for frying either. You need to use grapeseed oil.
Maybe using some ground peanuts in your chutney would also make it interesting.
