I made a batch yesterday and I used it for tacos. They were so tasty and so savory I almost couldn’t believe it. This recipe is so much better than anything I’ve tried before to make tacos. Good thing I have a store near me I can buy dried shiitake mushrooms and saitan flour in bulk! I froze the broth and will be using it for my next batch of soup.

This is great- - when using dried shiitake, the tough stems are cut away & discarded (work!). Leaving them in the mushroom mixture and pulsing them must give the alt meat just the perfect chewy texture.
This is a great recipe. I seasoned it with tomato sauce and chilli spices and froze it. Last night I put it on nachos with salsa, cheese and green onions and served it to my son who loved it and couldn’t believe it wasn’t made with meat. Thinking of spicing it with tomato sauce, red pepper paste and onions ( maybe a bit of rice as well) and then stuffing green peppers with it next.

I find ordinary white mushrooms and red or green lentils a good combo. This might work for cooks who don't have access to shiitake mushrooms, either because of no supply or because of cost.
I use *shiitake mushrooms and walnuts* with fresh garlic and other spices. I can't compare textures to her version since I haven't tried it yet, but my version certainly gives a strong "aesthetic" of beef or turkey crumbles. Tastes amazingly umami too 😊👍 I'll have to try her recipe next!
Yep. I do mushrooms and walnuts also (walnuts that are soaked overnight or boiled for 15-20 mins to soften). My family eats it on the regular and never knows there are walnuts in there. lol. Curious about adding in gluten flour. May try that and also try a bit of tapioca flour or a chia seed meal for a gluten free version.
i use mushrooms and walnuts along with some black beans with the (setan flour ) i just call it that i know its really gluten flour works well with just about any dish i try

Love it ❤ You can also try it with giant griller mushrooms or portobello mushrooms. I blended with chopped garlic, jalapeños and cooked black bean blended to a paste. For a delicious burger, you can add grated cooked beets and cornflower. I made sourdough buns with sesame seed, added cultured cashew yoghurt, lettuce (grow in kitchen from scraps, very easy), sliced roma tomatoes and hou have a super healthy, gut friendly vegan burger! What I use is equal portions of shitake mushrooms (rehydrated) and eggplant (do not peel) and pulse it in a food processor. Cook it down with garlic powder, onion powder, rosemary (optional) and salt to taste. On the side finely mince and sweat one large onion. Then add the onion to the eggplant shitake mixture, and let the flavors marinate. Take off the heat, and add finely chopped cilantro. That’s what I use as my ground beef substitute.

I've been using dried shitake mushrooms for ages to cook vegetarian beef balls and other recipes and they are yummy! I would use fresh garlic and onion to saute and i love black pepper with it! But we can use other ingredients depending who is eating it! Some people may want to add a little of Paprika, Cumin or any spice ...but i really want to make vegetarian Swedish meatball out of Shitake and i prefer fresh tomatoes over canned tomato sauce, more healthy and a lot tastier!!! I just subscribed to your vlog!, just as me, i think you have unique ideas in vegetarian cooking!!! By the way, i'm Filipino and i'm exposed to different cultures. I like Japanese, Korean, Thai, Vietnamese, Mexican, Italian, Mediterranean and Middle Eastern food and many others!!!, just anything healthy and yummy!

Many people who think they are gluten intolerant actually are reacting to the fodmaps in wheat. 10% of the population has SIBO and fodmaps excaserbate this. Gluten doesn't contain any fodmaps at all so you may react to wheat but probably won't react to vital wheat gluten. Sourdough bread may also not cause a reaction because the fodmaps are converted in the fermenting process. Try seitan and see if you have the same reactions as you do with regular wheat.

That was very nice.,.. I live in such a rural area I can't buy shiitake any more at the local grocery store...What is similar in texture and taste is brown lentils... Whenever I heat up veggies in my steamer I use the heated water to make a cup of lentils... It's healthy and has a good texture...thanks for the video....

They look and taste better than any kind of meat. As additional ingredients, I added: Panko, Nutritional Yeast, Garlic and Onion powder, Raw Wheat Germ, Oregano... I appreciate so much for sharing with us your amazing culinary skills. Super presentation! I also have a bonus for you. Mushrooms are the only vegetarian food that can make Vitamin D when exposed to the sun’s ultraviolet (UV) radiation. Because I do not know how the commercial mushrooms are dried, I will buy fresh and dry them outside at Florida Sun.

Made these a few days ago with fresh mushrooms. I have so far used them in lasagna, as potato patty filling and as meat balls. Success every time. Flavour and texture are great. My teenager who hates mushrooms loved the meals as I only said it’s fake meat ahahhah Thank u so much.

Thanks for the tips! I have a cool tip for you to make your stainless steel pan non-stick, too! Put the pan on med high-no oil. let it heat up. THEN add the oil. Let the oil heat up, and THEN add your food. eggs to this, I promise if you heat the pan first and then the oil, it will be non-stick. Let me know how it goes! Thanks again, and cheers!
Ok, I just made this for brunch. I formed it into patties and cooked in a teaspoon of olive oil. I made open faced mushroom burgers on homemade toasted onion herbed bread. Avocado slices under burger, melted provolone, home grown beefsteak tomato, mustard, pickles, horseradish mayo, and mixed greens with "no oil oil" balsamic vinaigrette . My carnivore husband said it was "stupid delicious"!

This is quite an expensive and strong tasting vegan mince.great for things like mixing with rice and stuffing red peppers and lots of dishes where you want a small amount with a good flavour punch. For things like a cottage pie, or things that are going to be strongly spiced anyway use brown lentils. Brown lentils make the base for mince because they hold their texture to just the right amount and have a savoury hint of black pepper to their flavour and aroma as they cook.

Yes, I've relucted for years cuz I didn't want to buy a food processor but now making the videos, I've had to... :) The mushroom broth is precious, gives depth in stews, it's really a lifesaver.
What a great recipe, except for the oil. Also, you probably can't find "Seitan Flour" as this flour is usually sold as "Vital Wheat Gluten". The cheapest way to buy Shitake in my area is a 5lb bag of large "premium" mushrooms. So after the 20 minutes rest, some were still woody inside, so I cut them in half and simmered an additional 10 minutes.
You can fine dried shiitake mushrooms in Asian supermarkets go on Google maps and type Asian Indian Mexican etc. And their is Utube channel that shows how to shop vegan at their just type Vegan shopping at the Asian or ___________etc. Maket .

I have made 'omelettes' with chick pea flour. 1/4 cup chick pea flour, 1/3 cup of water and a Tbls of nutritional yeast. I also use 1 tsp of lemon juice. the lemon juice cuts the taste of the chick pea flour. I think that ratio would work with the seitan replacing the chick pea for the vital wheat gluten and using the 1 tsp of lemon juice!. I'm going to make some today!
Try Konjac flour.. I think you can get it from Amazon.. I tried a version that was made into like shrimp and I really liked texture really good I just can't remember the name of the company.
You are right about adding a bit of vinegar. I roast roughly chopped mushrooms, avocado, onions. Hickory sauce, soy, smoked paprica, mustard and brewers yeast and coconut oil. All to your own taste. When it's roasted I mash it with a fork . Then mix in minced beetroot and tomato. I use two cups of gluten to one cup of plain flour. A few other spices and it came out like sausages. Oh I forgot. Almost two cups of grated cheddar. Love your two ingredients mince. Mine was a lot of work

For a gluen free "meat" use equal parts cooked: steel cut oats, quinoa and lentils. It has a great texture and good flavour. Add whatever spices you like.

I find ordinary white mushrooms and red or green lentils a good combo. This might work for cooks who don't have access to shiitake mushrooms, either because of no supply or because of cost.

I use *shiitake mushrooms and walnuts* with fresh garlic and other spices. I can't compare textures to her version since I haven't tried it yet, but my version certainly gives a strong "aesthetic" of beef or turkey crumbles. Tastes amazingly umami too 😊👍 I'll have to try her recipe next!

Yep. I do mushrooms and walnuts also (walnuts that are soaked overnight or boiled for 15-20 mins to soften). My family eats it on the regular and never knows there are walnuts in there. lol. Curious about adding in gluten flour. May try that and also try a bit of tapioca flour or a chia seed meal for a gluten free version.
i use mushrooms and walnuts along with some black beans with the (setan flour ) i just call it that i know its really gluten flour works well with just about any dish i try

An excellent alternative to a ten-minute, arm-numbing workout, kneading Seitan dough. Great in Spaghetti Bolognese, Tacos and Shepherds Pie. It's a great base recipe to experiment with. Subscribed.

Love it ❤ You can also try it with giant griller mushrooms or portobello mushrooms. I blended with chopped garlic, jalapeños and cooked black bean blended to a paste. For a delicious burger, you can add grated cooked beets and cornflower. I made sourdough buns with sesame seed, added cultured cashew yoghurt, lettuce (grow in kitchen from scraps, very easy), sliced roma tomatoes and hou have a super healthy, gut friendly vegan burger! I usually serve with crumbed potato wedges. I love to use Olive Pomace to cook it all with.

I prefer not to use oil, due to my husband's heart health
What I use is equal portions of shitake mushrooms (rehydrated) and eggplant (do not peel) and pulse it in a food processor. Cook it down with garlic powder, onion powder, rosemary (optional) and salt to taste. On the side finely mince and sweat one large onion. Then add the onion to the eggplant shitake mixture, and let the flavors marinate. Take off the heat, and add finely chopped cilantro. That’s what I use as my ground beef substitute.

Just wanted to ask (1) if either liquid aminos or coconut aminos would work just as well, and (2) to be oil-free, if the "meat" could be cooked with water or veg broth instead ???

I've been using dried shitake mushrooms for ages to cook vegetarian beef balls and other recipes and they are yummy! I would use fresh garlic and onion to saute and i love black pepper with it! But we can use other ingredients depending who is eating it! Some people may want to add a little of Paprika, Cumin or any spice ...but i really want to make vegetarian Swedish meatball out of Shitake and i prefer fresh tomatoes over canned tomato sauce, more healthy and a lot tastier!!! I just subscribed to your vlog!, just as me, i think you have unique ideas in vegetarian cooking!!! By the way, i'm Filipino and i'm exposed to different cultures. I like Japanese, Korean, Thai, Vietnamese, Mexican, Italian, Mediterranean and Middle Eastern food and many others!!!, just anything healthy and yummy!

Many people who think they are gluten intolerant actually are reacting to the fodmaps in wheat. 10% of the population has SIBO and fodmaps excaserbate this. Gluten doesn't contain any fodmaps at all so you may react to wheat but probably won't react to vital wheat gluten. Sourdough bread may also not cause a reaction because the fodmaps are converted in the fermenting process. Try seitan and see if you have the same reactions as you do with regular wheat.

That was very nice.,.. I live in such a rural area I can't buy shiitake any more at the local grocery store...What is similar in texture and taste is brown lentils... Whenever I heat up veggies in my steamer I use the heated water to make a cup of lentils... It's healthy and has a good texture...thanks for the video....

I just made 18 Shiitake mushrooms balls and placed on parchment paper in the oven.
They look and taste better than any kind of meat. As additional ingredients, I added: Panko, Nutritional Yeast, Garlic and Onion powder, Raw Wheat Germ, Oregano...

Made these a few days ago with fresh mushrooms. I have so far used them in lasagna, as potato patty filling and as meat balls. Success every time. Flavour and texture are great. My teenager who hates mushrooms loved the meals as I only said it’s fake meat ahahhah

Having lost my gall bladder and a kidney recently, and having a damaged heart, I have to eat very strictly and healthily. No dairy, no soy, nuts, tomatoes...the list of cannot eat items is endless! Thanks for the tips! I have a cool tip for you to make your stainless steel pan non-stick, too! Put the pan on med high-no oil. let it heat up. THEN add the oil. Let the oil heat up, and THEN add your food. eggs to this, I promise if you heat the pan first and then the oil, it will be non-stick. Let me know how it goes! Thanks again, and cheers!
Ok, I just made this for brunch. I formed it into patties and cooked in a teaspoon of olive oil. I made open faced mushroom burgers on homemade toasted onion herbed bread. Avocado slices under burger, melted provolone, home grown beefsteak tomato, mustard, pickles, horseradish mayo, and mixed greens with "no oil oil" balsamic vinaigrette . My carnivore husband said it was "stupid delicious"!

It really, really looks great, but what would you recommend as a substitute for seitan flour? I am wheat/gluten sensitive.
This is quite an expensive and strong tasting vegan mince.great for things like mixing with rice and stuffing red peppers and lots of dishes where you want a small amount with a good flavour punch. For things like a cottage pie, or things that are going to be strongly spiced anyway use brown lentils. Brown lentils make the base for mince because they hold their texture to just the right amount and have a savoury hint of black pepper to their flavour and aroma as they cook.

What a great recipe, except for the oil. Also, you probably can't find "Seitan Flour" as this flour is usually sold as "Vital Wheat Gluten". The cheapest way to buy Shitake in my area is a 5lb bag of large "premium" mushrooms. So after the 20 minutes rest, some were still woody inside, so I cut them in half and simmered an additional 10 minutes.

I have made 'omelettes' with chick pea flour. 1/4 cup chick pea flour, 1/3 cup of water and a Tbls of nutritional yeast. I also use 1 tsp of lemon juice. the lemon juice cuts the taste of the chick pea flour. I think that ratio would work with the seitan replacing the chick pea for the vital wheat gluten and using the 1 tsp of lemon juice!. I'm going to make some today!

You are right about adding a bit of vinegar. I roast roughly chopped mushrooms, avocado, onions. Hickory sauce, soy, smoked paprica, mustard and brewers yeast and coconut oil. All to your own taste. When it's roasted I mash it with a fork . Then mix in minced beetroot and tomato. I use two cups of gluten to one cup of plain flour. A few other spices and it came out like sausages. Oh I forgot. Almost two cups of grated cheddar. Love your two ingredients mince. Mine was a lot of work

For a gluen free "meat" use equal parts cooked: steel cut oats, quinoa and lentils. It has a great texture and good flavour. Add whatever spices you like.
