Tommy's Original Double Chili Cheeseburger Copycat!

  • Tommy's Original World Famous Double Cheese Chili Burger! Yeah!
    Chili Recipe: (Ballistic Griddle linked at bottom)
    1 pound ground beef (not lean)
    1/2 cup masa corn flour mixed with 1/2 cup AP flour
    1 1/3 cups beef broth
    4 cups water
    3 tablespoons chili powder
    2 tablespoons grated (and then chopped) carrot
    1 tablespoon white vinegar
    2 teaspoons dried minced onion
    2 teaspoons salt
    1 teaspoon granulated sugar
    1 teaspoon paprika
    1/4 teaspoon garlic powder
    1/2 stick butter
    1. Prepare the chili by first browning the meat and carrots in a large saucepan over medium heat. Crumble the meat as it browns. When the meat has been entirely cooked (7 to 10 minutes), pour the meat into a strainer over a large cup or saucepan. Let the fat drip out of the meat for about 5 minutes, then return the meat back to the first saucepan. Cover and set aside.
    2. With the fat from the meat and half stick of butter, we will now make a roux. Heat the drippings and butter in a saucepan over medium heat (you should have drained off around 1/2 cup of the stuff). When the fat is hot, gradually add the flour/masa mixture to the pan and stir well. Reduce heat to medium low, and continue to heat the roux, stirring often, until it is a rich caramel color. This should take 10 to 15 minutes. Add the beef broth to the pan and stir. Remove from heat.
    3. Meanwhile, back at the other pan, add the water to the beef. Add the roux/broth mixture and the other chili ingredients and whisk until blended.
    4. Crank the heat up to medium high. Stir often until you see bubbles forming on the surface of the chili. Turn the heat down to medium low, and continue to simmer for 15 to 20 minutes, or until thick. The chili should be calmly bubbling like lava as it simmers. When it's done cooking, take the chili off the heat, cover it, and let it sit for 30 minutes to an hour before using it on the burgers. It should thicken to a tasty brown paste as it sits.

      I live around the corner from Tommy's here in Norwalk and Tommy's is trash......u want a good chili cheese burger...homemade is the way to go.

    Thanks, I’m a transplant Californian, I made this today and it is damn near perfect. Made it exactly like your recipe and while it was cooking all I could smell and think about was Tommy’s. Thicken up the way it should have and made my burger taste phenomenally. Thanks again!

    I lived in LA in the early 80's and I used to go to the 'original' Tommy's and get a double chili cheese burger, plus a handful of pickled serrano peppers and a soda for breakfast 5/6 days a week - it was really cheap but oh so good - I've had withdrawal symptoms ever since I moved back to OZ and I've never managed to successfully recreate the 'Double Chili Cheese Burger', tomorrow I'm having a crack at copying this recipe. Hand on heart, the double chili cheese burger is the best burger that I've ever tasted, thanks so much for bringing back so many good memories.

    I looked all over the web and found the same recipes for Tommy's chili as well. I'm very excited about giving this a try. FYI, a wire potato masher is the best tool I've used for breaking up the ground beef to get those small chunks you're looking for.

    I live in Los Angeles and had the original Tommy's from the rampart location, with that being said we here are lucky that they sell the chili in separate size containers.

    That burger was off the charts Greg. Very interesting call with the masa roux for the chili, I think you are right with the 50/50 masa to flour. I'm going to have to give that a try.

    My wife and I made this.
    We followed this recipe as best as we could, given the availability of ingredients.
    Our ground beef did not have that much fat. We had to add more butter.
    This is the perfect hot dog chili.
    We can not wait to try it on burgers. We can't stop eating it. Thanks, it's close I'll give you that.

    Love your videos. When I want my ground beef in fine crumbs, I hit it with a potato masher as it cooks.

    You'll get better flavor with the chili if you add the dry spices to the meat when it's cooked. Adding spices/salt to chili after the liquid is added requires a lot more to get the flavor right, especially salt. You'll never get caught up. JMO. I use cumin/chili power, GP and OP too. Using serranos or jalapeños to the meat mix is nice too.

      Thank you James. I just made in prep for 4th of July and I couldn't just spices right, over seasoned! Also, my masa and flower did not turn brown. All and all it was a great video but I'll try it again using your tips

      Totally agree. Whenever I make chili, I always spice the meat while it’s cooking. If using onions an fresh peppers, I normally caramelize them slightly before throwing the meat into the pan. It gets the right flavors blended just the way you want them.

    I better check out Tommy's one day. There's one 20 minutes from where I live (Cypress) and it's so close to Cal State Long Beach. Can't believe I never heard of this joint until now. Been searching for a good chili cheeseburger for the longest time ever and boy am I glad you uploaded this video. One of these days, I'm going to Tommy's and I know I'm gonna love it.

    You got the masa right, that’s what they use. They don’t add water, only beef broth. In fact the meat is cooked in beef fat too. Increase the amount of spices about 1/3. Between skipping the water and increasing the spices that will take care of that bland flavor you spoke of. So remember, no water! If you put it in the chili it has to also add flavor.🤗
    I’m not allowed to tell you how I know this either.😂

      Miss Smarteepants hello, you made a comment on the Tommy’s burger recipe. You said don’t add water just beef broth. Did you mean 4 cups beef broth to a pound of meat and does it matter what type of broth ( cubes or already prepared liquid ) . Also you said cook beef in beef fat. Do you mean add beef fat besides what the cooked meat already has ? If so what type. Thank you for your time.

      Garage crazy I don’t measure, never have, but that sounds about right.
      Yes, they use beef fat the way we would use butter or olive oil. So in addition to what the beef already has.

      LA native here. Tommy’s is where I go when not near Carney’s (blows away Tommy’s). Anyway, I can tell this chick knows her dealio-no water, baby, and use beef tallow for the fat (Why? Because you CAN). Xtra flavor. I also add a big tsp of Accent (MSG). 🤟

    Looking for a CC Tommy's chili brought me to your channel. Yours was listed first. So I clicked on it So glad I did! Liked your video content. So clear and concise with very little fluff. Just subbed you and all new content:) Looking forward to trying your CC recipe for Tommy Burgers. A bit of background. My husband grew up in Socal and introduced me to this culinary crack!! LOL!! Tbh..at first I wasn't sure as I was never a fan of chili burgers. And this chili was definitely something new to my palate. But it sure didn't take long for this to grow on me and now I can't get enough of the stuff! FF a few years and we now live in Southern Utah. But that puts us close to Las Vegas. And we recently were thrilled to learn that Northern Vegas has a Tommy Burger!! We just tried it two days ago and it was clean, well run and the food was just as good if not better than the one we frequented in Socal. We even stopped at Walmart and bought a small cooler so we could order a couple of their breakfast burritos to go home with us and put in the fridge for breakfast the next day. OMG!! I've yet to find a better tasting BB!! yum!! Will update as soon as we give your CC recipe a go! 😜

    Great tip about the mustard. I made a copycat yesterday. They had a special on the chili--normally 16 bucks on a quart but 4 bucks for Labor Day. Got two quarts...but may have to freeze...because waist line!

    I love Tommy's they have Willie's in downtown Sacramento which is the same. My God I miss their chili cheese fries! Perfect hangover cure!

    Looks great, Greg. If I was going to take the time and effort to make a nice dark roux like that I'd probably make gumbo, wifey's favorite :) Thanks for sharing!

    I went to the original across the street from the CBS studios. A neighbor used to get a regular steady supply of free tickets to the Carol Burnett show tapings. We'd hit the Tommy's where I learned that you HAD to dedicate a hand to holding the burger until it was eaten. Arizona doesn't have this chain yet but maybe someday. But I can see several uses of this chili - It would be fantastic on pasta.
    Thank you, Greg, for your perseverance to creating the knock-off. Now, if you want a real good challenge... Red Cabbage Salad from North Woods Inn, another iconic SoCal restaurant. All the knock-offs are no where close to nailing it.

    Primanti Brothers "Pittsburger" sandwich.
    bias cut Italian bread, tomatoes, provolone cheese, fresh cut fries, coleslaw. all on sandwich and mash it flat enough to get in mouth. I used to work there.
    the hard part is matching the coleslaw because its good coleslaw. they kept that secret.
    the burger made 2nd place on Big Eats one year.
    it can be made with two eggs optional.
