    Wanted to make this last month, store didn’t have chimichurri or the monchego cheese. So I used some Mexican spicy basting sauce and chipotle smoked Gouda.
    Outside of the hodads bacon it was nothing like yours. But, it was delicious, thank you Greg for inspiring me to grind up some good meat and make a huge, juicy burger. For anyone, Boars Head Chipotle smoked Gouda is faaaaaantastic.

    It incorporates flavors and ingredients from all of the Americas. The burger, bacon, and sesame seed bun from north America. The Mexican cheese from central America and the chimichurri from Argentina in South America!

BTW that burger idea with the grilled cheese... wow! simply wow! The good thing about boiled bacon is that when it's cooked it doesn't get hard as nails as some chitarrone can get!     A burger with grilled Manchego cheese, grilled sweet onion, red chimichurri, and that boiled then grilled bacon makes something better than just a basic burger. Going back to the basics with ground chuck makes this a no frills burger with no extra condiments like ketchup, mustard, or mayo being necessary. I would call it the Keep It Simple burger.     Hola, soy de Argentina. Antes que nada, muy bueno el canal y los videos son increibles. Quiero contarles, que aca se usan varias salsas, pero las mas comunes son 2. Una es el chimichurri y la otra se llama criolla. Respecto al nombre de la hamburguesa pienso que se puede llamar "gaucho".

    Question, if i wanted to make that bacon as a side at a cookout for people to optionally put on, would it retain its crispiness for awhile or would it eventually get chewy from air humidity ?

      It would probably be fine initially, but I would expect the texture to change as time passed. I would run a small batch text though.

      thanks for the reply, i used alexthefrenchguy's youtube channel to learn how to dry age at home and this will be my second run at using ground dry age brisket for a cookout. The problem is people are picky eaters and i was putting caramelized onion on my burgers , pickles, etc. People were asking for those things to be omitted and even though i personally thought it destroyed the flavor profile i was going for i realized it'd probably just be more convenient to create a base burger and have the extras on the side just incase.
