Original Tommy’s Chili Copycat Recipe

  • Thick, almost spreadable, my copycat Original Tommy's Chili is made using no tomatoes, no beans, uses several chili powders and masa harina to hit the spot. Perfect to top hamburgers, hotdogs, fries and my favorite, crispy tator tots!

    Ingredients
    4 garlic cloves
    2 jalapeños
    1 carrot
    1 medium onion
    5 cups water (divided)
    1 lb ground beef (See Note 1)
    3 tbsp chili powder
    2 tbsp Chimayo chili powder (See Note 2)
    1 tbsp Ancho chili powder
    4 tsp ground cumin
    4 tsp paprika
    3 tsp kosher salt
    2 tsp brown sugar
    1 tsp Mexican oregano
    1 tsp black pepper
    1 tbsp cider apple vinegar (or white vinegar)
    2/3 cup flour
    1/3 cup Masa Harina
    Instructions
    Peel and cut the carrot into 2 inch pieces. Peel and quarter the onion. Cut the stem off the jalapeños and cut lengthwise. In a food processor add the carrot, onion, garlic and pepper. Pulse until almost a paste.
    To the Instant Pot add the vegetable paste, 3 cups of water, ground beef, chili powders, cumin, paprika, salt, sugar, Mexican oregano and black pepper. Stir to mix and break up the ground beef (See Note 3).
    Close lid and vent. Select Manual Pressure and set timer for 18 minutes. Allow natural pressure release (10 minutes) not a Quick Release.
    In a small bowl whisk together the flour, masa harina and remaining 2 cups of water. Pour this in the chili mixture, stir to mix in and press the Saute option. This will sputter, so if your IP has the option, choose Saute Low, if not cover. Set for 10 minutes, stirring often. This will thicken considerably. Stir in the vinegar and let rest 5 minutes before serving.
    Spoon over hamburgers, hotdogs, French fries, tator tots, or baked potatoes. I also like to have diced onions, mustard and dill pickles alongside.
    Notes
    1. I get a 80/20 ground beef, If you can find it at your market, or ask the butcher, use a "chili grind" ground beef, it's finer consistency than regular ground beef and perfect for this.
    2. Feel free to substitute Chimayo chile powder with any New Mexico red chile powder if you can't find it. I order online.
    3. By adding the ground beef to the liquid and NOT browning it allows it to break down easier and the result is a smooth chili.

    Made this over here in England, had to order most of the dry ingredients from Amazon but managed to pull it off!! great recipe and unlike anything you can get over here!! brings back memories of when I lived in California many years ago...... Thanks! :D

    Instapot is great but I think ya gotta reduce it down with the lid off longer so that the chili thickens for that Tommy's smooth consistency.

    If I don't have a pressure cooker, how long should I cook the ground beef with the vegetables and spices before adding the water and flour mixture?

      Luke, I've found 50-54 minutes would be fine. Typically 3 times the time from an Instant Pot is my conversion rule to stove top.

    I tried it, so very close. Have you ever noticed how when the original chilli cools it has an orangy congealed oil/fat around it? I think the original might have mexican beef chorizo in it.

      i heard it was beef tallow...but just like KFC, no one really knows how to copy any of it. They just know how to get real close.

      @@totigerus ....yes, I would guess Beef Tallow or possibly ground Beef Heart's was used, or Beef Suet.

      I believe the original is made with a beef tallow and flour roux, cooked until brown and then added. Gives a smoother texture and a darker color. It's also much richer and holds hot longer, which is what you'd want for a chili stand. Folks ate heavier in 1946, and Tommy's chili is about as rich as it gets, especially on hamburgers and hot dogs. I love that stuff, I'm not quitting and I can't help it!

      People always grossly underestimate the power of beef tallow. For ONE, it took that to FINALLY get my cheesesteaks to taste EXACTLY like Geno’s! 20 years of failure until Steve from NACS changed my life! 👀😅👍

    Tommy's chili is noticeably darker than the one featured here. It has a chocolaty taste too.

    Tommy's is unlike any other, but this is a great recreation. I've made it a few times now. I use a cheese grater to shred the veggies, since I don't have a food processor.

    Tommy's chili is gluten free. There is no wheat flour in it.

    This recipe starts in the right direction, but gets derailed in multiple areas and lacks many steps needed to bring it right up close to the real Tommy’s.

    Pretty certain there is zero jalapeno in their chili, and, there's definitely no turkey meat. This recipe is a huge nope for me.

      There is zero jalapeno in Tommys chili. I lived 5 miles from the La Habra location for 20 year and ate there (probably) weekly. So I've got to agree with Nemesis.
