    I grew up in Panorama City in the 70s and went to Tommy's every chance I got on Roscoe bl. I moved away but every time I go home I get a Tommy's burger. I wish we had them here ❤

      @@marciayoung8735 The Tommy's on Roscoe is awesome! I frequented that location in addition to the Van nuys on victory location since the early '80s. Every now and again I still have to go have it Tommy's burger. Too bad they are not nationwide. They sure deserve it.

    Thank you KJ Andy-O! Great vid 😎👏, LA native here, however temporarily on the E coast and I miss three things, Tommy's, the coastal/inland landscapes of Cali and In-N-Out, lol. Can't wait to try the recipe this weekend 💗 So iyo what is the 10% that is missing? Btw very commending to thank/shout out to the person responsible for the recipe, not a lot of ppl do that nowadays, honest is integrity and integrity is everything!

      You are very welcome! Thank you so much for the kind thoughts. Yeah I think it's only right to give credit to who made the recipe. Otherwise in my opinion it is almost like theft. Plus I like to give credit where credit is due. Tommy's is amazing, I totally believe you miss it! In-N-Out Burger is great too. I recently did their double-double animal style recreation. Still needs a little work but I was pretty close. I posted a video for that. This chili is pretty dang close although I will say the chili at Tommy's is a big greasier. It could be due to the fat content in the meat. I used 80/20 ground beef. Thanks again and I hope yours comes out excellent!

      Oh yeah I wish I could figure out the 10% that's missing. Could be the extra fat in the meat or perhaps an additional spice that the original poster of the recipe hasn't figured out. But it's close. It's really done close. Just make sure you have the variety of flour in addition to the exact two chili powders. I also believe the carrot in jalapeno is pretty important.

    Look up "RC Provisions Chili Con Carne". They only sell wholesale but It is available at Smart and Final wholesale store in California. It is what they use at Tommy's and The Hat as there main base. Both places modify it slightly different. It's only $20 for 80 ounces tube. Even has the exact classic orange fat layer.

      Someone else mentioend it in the comments so I looked it up. You are definitely correct. I have quite a few Smart & Final stores in my area and unfortunately none of them carry RC Provisions Chili Con Carne. There are some in Los Angeles that do carry it but that is a bit of a drive from the San Fernando Valley where I live. I do want to try it one day and it is in my plans to take the drive soon. I wonder what modifications each of those restaurants do to the chili base. I love chili from Tommy's and The Hat and I am sure RC Provisions is a big part of the reason.

      Well check this out, I went to my local Smart & final on Devonshire. Asked one of the managers where I could find it. He told me I probably can't because of the TikTok videos. He said they hadn't sold that stuff very much and all of a sudden everyone's buying it. I don't have TikTok so I wouldn't know. But that's some straight up BS! Lol lol lol

      @@HootOwl513 I usually order mine with extra chili. They will tip it on its side and give a couple more ladle fulls of chili on top. In my opinion, that's the best! Besides the best part for one person differs from person to person.

    Definitely the closest recipe to actual Tommy’s chili, couldn’t agree more with you tho, Tommy burger does have the best chili. 10x better than the chili from pinks. I usually go to Tommy’s when they have their 2.99 specials. Love getting the chili cheese fries and topping it with thousand island dressing.

      That would be negative. Most chorizo that I know of is pork and there is no pork in Tommy's chili. There are beef versions of chorizo. I honestly don't think they use it though. I really wish I could talk to someone who previously worked there and knows about the chili making process. I bet they had to sign non-disclosures otherwise this should be well-known information by now. All I do know is what I made tasted pretty dang spot on.

      Usually I do mustard and onions however this time I was out of onions but I did use plenty of pickles which I really enjoy. That's the great thing about a burger, you could order it any which way you like.

      I don't eat raw tomatoes. My preference is mustard and pickles and usually onions but I was out of them. It's a to each their own deal. Lol

    You forgot to add one thing, the orange fat that builds up on chorizo when you cook it up and throw in the fridge over night. True story yo.

      @@zaa-flips-it You know I was thinking of adding some chorizo with the ground beef which definitely would have given it that orange fat floating on the top of the chili before it is stirred up. Next time I try making this I'll add some.

      @TheFoodExperience i think the chorizo really takes it to at least 95 percent accuracy but we're all missing that one ingredient that would make it 100% spot on. Some people say it's mustard, the problem is the people working there only know as much as we do

      That's so hard to say about the missing ingredient. It's hard to also say that any copycat recipes are even close to being correct. I truly don't think that most employees at a store level know the recipe. It sure would be nice if it was leaked one day. Someone out there has to know. I have a feeling the employees signed a non-disclosure contract.

      @TheFoodExperience yeah, the recipe is actually only known between 2 people and they're family. The brother was sued by his sister who has a majority stake in tommys years back because he started his own chili brand that was in stores and it was basically tommys. I think they came to some sort of agreement but yeah, somebody out there knows what's up. The comment section on some of the tommys video are filled with tidbits about peoples personal experiences. The chorizo thing comes from me reading comments about people that said they worked there in the 70's and 80's and using chorizo in the mix. I guess they were more nilly willy with the recipe back then lol.

    There is no AP flour in Tommy's chili, as they say it is is gluten free.

      Tortilla flour is a pretty loose term. You're not indicating whether it's flour or corn tortilla flour. I believe they do use masa which is corn tortilla flour and gluten free.

    I’ve never seen anyone put flour in a dry pan. It’s supposed to be a roux. Make a dark(like dark chocolate) roux next time and you won’t have that unhydrated flour taste that I know you tasted.

      Oh I'm very familiar with making a roux. Lol actually you don't taste the flour that's why it's cooked. It's not my recipe. I wanted to try it and make sure I could vouch for it. You may not like the idea of it or understand it but I assure you it is definitely pretty spot-on to Tommy's.

      @@TheFoodExperience It's a way to get a roux flavor without using fat. You toast the flour in the oven. Then mix it with water to make what's called a whitewash or bull####, you then use that to thicken up your base.

      I absolutely do go there! I was looking for a way to make it at home. All I could say is it tastes very similar just not 100%. I've been going to Tommy's for at least 30 years now. I grew up going to the Van nuys location and the one on Roscoe. I've been to the one on rampart a couple times, the real OG.

      @@TheFoodExperience thank you for taking the time to respond. I did find an alternative. I made my own barely flour so i didnt have to wait. It was super easy. And the recipe was really good by the way. It does taste alot like the tommy’s recipe
