      Yes her husband asking her why she is overwhelmed is funny to me. It makes me think he has no idea of the actual scale of the wok involved. I have been canning tomatoes for 7 years and I know the work effort and time it takes. There is nothing more rewarding then growing and preserving your own food but it does get overwhelming. I always use the food mill with mine but I have never done it roasting them and I may try this method. Shes amazing :)

    Have you ever thought of doing a canning club? It is just getting together with one or two other women who like to can and help each other. One can clean, one can cut other ingredients and the third can do whatever else is needed. It means you all can do it for each other and save time. Plus it is fun.

    I am at my son’s home and he wanted me to teach him how to can tomatoes. It fills my heart that our sons are asking their old mama to teach them our family traditions! I think I will try this marinara recipe when we get back to Ohio! My canning cupboard is filling up!

    My favorite method for sun dried tomatoes is to dehydrate halved cherry tomatoes and 75% dry so they stay pliable and chewable, not hard and crispy, then freeze them in a freezer bag. So easy and quick!

    I don't even cut my tomatoes in half... just cut the top of the romas and put them cut side down... broil for 5 to 10 min in oven and slip the skins right of... I also pick them from the oven sheets so all the tomato water which I don't use stays on the plate... then I don't have to cook the sauce down that much... saves so much time ❤❤❤

      Becky has propane oven and stove top and regular gas, I think. That way, when the power goes out, they're safe.

    I look at you wide open doing things. I used to make decorated sugar cookies. Sometimes I did 75 or more at a time. All of a sudden I developed lupus and that has changed my life. I have praying for a miracle that I can start my cookies again. I can watch you work really hard and cheer and pray you along hopefully for a lot of years. I guess I am saying I am living my life through you😀❤

    Who else lives for Becky's tomato processing day each year? I would have weighed and washed all the tomatoes and onions the day before - three steps done and out of the way before the real work begins. Also don't be afraid of asking folks for help!! You give away so much food to other friends and family members, let them be some labors in return. You don't have to do it all yourself, even though we know you enjoy it.

    I have the same kitchen scale as you and I noticed you struggling to get to the front panel under the sheet tray. Just in case you didn’t know, the front panel of this scale actually pulls out so you can always see it and press the buttons no matter what size bowl you have on it!

    I love how you & Josh communicate. You ask, give suggestions & coordinate well together. Most importantly you thank him. This is SO VERY IMPORTANT for any successful marriage. Being able to have clear communication, ask & don’t demand or tell. Compliment each other & always thank the other for their help. Looking back at my marriage over a 24 year period we did NOT have or do this. I think if we had it would have encouraged us to be there & supportive of each other. Couple either grow together over the years or go apart. It doesn’t happen overnight & you really don’t even notice it until it’s too late. You can always accomplish & conquer more as a team. Great job to you both!!

    The cookie sheet that was burnt can be saved if you put it in the oven and set the oven to a self cleaning cycle. It will turn the burnt part to ash and then you can wash it off. Cookie sheet will be like new.

    One thing I learned about any owner's manuals you get with any equipment....there are always instructions in English, French, and Spanish.....use the blue painters tape, tape off all of the different languages that you don't need leaving only the instructions you use. It keeps the manual neat and the painter's tape can be removed easily if there is ever the need. I bought some outdoor power equipment from someone moving out of state. He had every manual taped that way, put into a protective sleeve and hung in his garage. I never saw someone so organized, but I have been taping manuals like this ever since.

    When I roast my tomatoes, I use mini tongs to take the skins off. If they are little stuck on the tomato I use the tongs in one hand and a fork in the other and zip right through without burning fingers 😊

    My daddy used to get culls from a farmer for me to can. I miss those days. Culls are the imperfect ones here in NOLA. They were creoles which are my favorites. I wish you could taste them. ❤❤

    I use a handheld suitcase scale and baskets to weigh my toms. All af my baskets have their empty weight marked on the bottom. Works for potato/apple harvest too.

    After watching you last year, I was intrigued by the idea of canning the juice from the tomatoes. I canned 6 pints of plain liquid in addition to my sauce. I have 1 left. I used it to cook rice for tacos and enciladas. It was delicious!

    I don't know how you do it... In a span of 5 days I processed about 260 pounds of tomatoes (I have the same electric mill) and my feet hurt, my back was killing me and I was so overwhelmed... I really admire your attitude when you're dealing with big projects... I'm following your example of having a game plan and tackling the project as efficiently as I can.     I absolutely agree about having appliances working for me. I do my roasted marinara exactly like you did, always having the oven going while I'm doing something else. I also try to wash my tomatoes as I bring them in so that I can skip that step on processing day.

    Wow Becky, what a long day. I've done that many times over my 42 years of marriage. One weekend I canned 500 jars of green beans. I didn't think I would ever get finished.     Becky, I deem you an honorary process engineer. What you did was define the bottleneck in the roasted marinara process and you adjusted what you were doing to optimize the process. Was there time lost in switching between tasks? yeah, maybe. Was that time more than the time lost by not having tomatoes in the oven.... probably not :)

    Hi Becky, I just love watching your videos. I noticed you use Santa Cruz lemon juice for canning. I didn’t see any acidic count on the jars I bought and didn’t know if they were 5% and safe for canning. I decided to contact them and they told me they don’t check the levels of acidity of their lemon juice. I just thought you may want to know in case you didn’t. Please let me know if you know something I don’t. Thanks so much for all your great videos and entertainment. 😊

      It’s a great gadget. How kind of you. I have a 1950’s apple corer that has the same type of teeth edge. It works great for coring tomatoes but the handle is a little too long so I hold the metal tube for angling. Sometimes use a grapefruit spoon for really large toms.

    Wow! That was a lot of work! Well worth it, so nice for Josh to come help as well! Don’t throw away your cookie sheet, it can easily be scrubbed back to normal with a steel wool pad. I love your dedication and commitment to your home and family! 🤗

    I think you can save your cookie sheet by soaking it with baking soda and water. It may take a few tries, but should be worth the effort. Love the roasted tomato recipe!

      Add some cleaning grade white vinegar to your baking soda.

    Becky I drain most of my tomato “broth” off before I run them through a food mill to reduce the liquid so I don’t have to cook them down so much. Then I freeze that broth and use in soups and when I make rice in replacement of water. This adds a huge amount of flavor in those dishes that would otherwise call for water.

    Wowzer Becky. Awesomeness on two feet! I actually watched you canning marinara sauce last year. I was so intrigued that I went to a local farmer this year and purchased twenty pounds of Amish tomatoes since my pitiful garden did not produce. Wow it really is perfectly delicious! Now you have encouraged me to go bigger! Planning 2025 garden and purchased lots of Hoss seeds. Can’t wait! Thank you so much for sharing!

      Add lots mushroom compost to your garden. I did it last year & couldn’t keep up with the harvest. This year I was in so much pain all I could do was plant a few plants & I didn’t get 1 tomato. Next year if I can’t do it myself I will hire a high school kid to get & put the mushroom compost on for me. It’s definitely worth the cost.

    I made this recipe for the first time this year. While making it my husband tasted it and said boy that would make some good tomato soup. So I didnt cook mine down as far as I would have for pasta sauce. When using it for sauce I will thicken it then IF need to. Thank you so very much for all the great information you share with all of us. You have such a loving family.

    Hi! My friend is an efficiency expert (IKR?) and suggested this time saver. And it does!! When using your knife, do all the knife work first. ie: onions, cut all your ends and in half first. Then peel and wash. Then do all the chopping without putting the knife down. Surprising how much faster the process goes! I have become very motivated, because of you! Thank You!!!

    Becky, you inspired me to give home made canned marinara a try. I bought 25 lbs of Romas from a local farmer and it took me all day. I got 10 pints and 1 quart. It is delicious, although it didn’t thicken up as much as I would have liked. I guess I should have cooked it longer.

    I did this recipe last weekend, a double recipe, and I washed, cut and baked my 1 oven full then got cookie sheets ready while those were cooking then when I had all the cookies sheets ready I started milling the tomatoes. I think it worked great that way. I did not core since I was milling and the attachment I use on the KitchenAid and it takes them out. We love this sauce. I have 10 quarts and plan to make more as I get enough tomatoes.

    Great job! Someone has probably stated this already but if you use a soapy SOS pad on your cookie sheets they would look like new and the burnt tomatoes would need a little elbow grease with the SOS pad but it is salvageable.
