I love how I feel as though I’m right there in the kitchen with Becky just chilling and hanging out. Becky from my grandmother and great aunt who were great bakers. They taught me that when using a glass pan in baking reduce the oven temperature 25°. Makes for more even baking.

I'll give my thanks right here. I had no idea! I love how we still pass down knowledge from those before us ❤
That makes total sense to me. When my dad was alive he loved bacon and egg pie that he had when he was a child. My mum made it in a glass dish and the bottom was a bet raw while the top was over done. Mum didn't really enjoy cooking so from a young age I used to make the bacon and egg pie and the Sunday roast amongst other meals. I used to heat up the oven with a black cookie sheet in it and I would use that to help heat up the bottom of the pie. Both my parent passed away in the last three and a half years only 13 months apart. The 13 months after Mum passed away I cooked all my dad's dinners and I made the same amount as before because on days that I wasn't very well I could heat him up a homemade freezer meal. I was the one that was given two years to live 14 years ago so I never thought I'd be the last one left.
Just a thought from experience. Ask your farmer if he would like the half pint containers back. They can be reused if not damaged and when farmers can recycle they like to(even my local apiarist appreciated the honey bottles back).😊❤

I just sat down from washing, stringing, paraboiling, drying, and finally putting four gallons of my garden’s green beans in the freezer. Now to enjoy watching Miss Becky process some yummy berries! It’s a good day!
Sorry for all the typos. My aunt would always pour boiling hot water over a very sticky, and it was like magic, it would disappear before her eyes. Very standard no trouble.

I used white cotton tea towels for this process as well, I am also a mixed media artist so if the stains don’t come out they go to my studio and get other colors added.

I watched Stacey - of Doug and Stacey - make 'shrub' one day. Don't know if you know what it is, but you probably do. When she said that you can literally make it with any fruity flavour, it straight away popped I to my head to do a raspberry, pomegranate and vanilla shrub... IT IS AMAZING!! So, in a half gallon jar I fill it 1/3 with 2 punnets of raspberries, 1 whole pomegranate (seeds) and a good squirt of vanilla paste, 1/3 with organic honey and 1/3 Apple cider vinegar. I put it in a cupboard for at least 6 weeks, trying to mix all the ingredients every few days. Sometimes it may get left for 8 or so weeks. Then I strain and bottle the syrup that has formed. I mix it with soda water - you can use just water. But you need minimal to make a lovely glass of pink lemonade! Not sure where the idea for these ingredients popped into my head, but it is literally awesome! My daughter in law and her parents love it and keep asking to be resupplied with it!💞
For anyone on the fence about ordering from Azure… I was that way a couple of years ago but finally took the plunge based on Becky’s recommendation. I’m so happy I did. I like the fact that you are using organic as it doesn’t have any additives that somewhere down the line turns out to be one of the bad guys but you also know the value of modern medicine. I love your tips for dental health.

My daughter and I just picked a bunch of wineberries. They look like miniature raspberries. Boy, they had a ton of seeds, but I strained most out and had a beautifully delicious jam. Those raspberries look wonderful.

My step mom always made strawberry freezer jam. It was wonderful. But she never thawed it. She used it in toasted English muffins with a little bit of peanut butter and the freezer jam, straight from the freezer tub. Then it got out right back in the freezer. It was SO GOOD!!!❤
We’re having an unexpected bumper harvest of raspberries from our garden too. 🇬🇧 They’re always so expensive in the stores, fresh or canned. So this year we’ve spent hours picking every day and canning them in light syrup. Not nearly enough room in the freezer for even temporary storage. Also made tons of raspberry jam (seeds filtered) and raspberry cordial. Never know if we’ll get such a bumper crop again in the next few years.
We’d love to have a freeze drier if HarvestRight sold them in the UK. So shelf stable processing is all we can do.
Great recipes, Becky. But after picking from our own garden for hours, we need to process something quick before bed! We’re soooo thankful though. So blessed.

I canned Sunday in a Jar last year. It is raspberries, strawberries and chocolate liquor. I have the strawberries in the freezer ready to go for when I can get raspberries. I have an Aunte that has a raspberry patch that produces all summer, until the first major frost.
A friendly suggestion. In washing a few or many items, maybe let them dry on cookie sheets or trays, as well as the dish towel. That way, you can move them if you need space or don't/can't continue with the project. You can also let the berries air dry outside on a table or on top of BBQ, if in the shade.
Literally went raspberry picking today with the thought of looking up your freezer strawberry jam and making it raspberry and here you show up w this gem! I might try to the curd too, wish me luck.

Hello Becky. I am the only one who likes raspberries in my family which is great for me lol. I make yoghurt coated raspberries that can be frozen also and they are delicious because you can use fat free ones so there is hardly any calories.
Raspberry white chocolate bark is good. Or you can stuff the raspberries with the yoghurt. My own yoghurts that I make have a raspberry compote on the bottom and then yoghurt delicious. All of these can be made and are good for those who are trying to loose weight. I love this channel.
I also get such a kick out of Becky when her big brown eyes get even bigger as she takes a bite of those brownies! Really enjoy the videos. You make everything look easy🌸❤️

And now, as you put raspberries on your freeze drier sheets, it looks as if the trays are half on & half off the island & about to tumble off the island!!!

Raspberry and chocolate are a sublime combination! Being a chocoholic I may add a drizzle of dark chocolate over the top when I make this recipe. Thank you for another delectable video.
As a child my mother made butterfly cakes. They are cup cakes with a filling. You cook cup cakes and cut a circle out of the top. You then fill the hole with cream or curd. You cut the circle in half and place back to look like butterfly wings. With the cream you can then add a small scoop of jelly/jello, or fruit. These were a great success at parties with both adults and kids. The curd ones are especially popular with kids who don't like cream with their cake.
A couple of years ago I bought some blueberries, strawberries and cherries to can. After washing, I*j> realized I was the proud owner of "drying" towels. 😂 Whenever I need to replace them, I will get some dark multicolor ones.
I just water bath canned my first ever batch of strawberry jam the other day and it was a success! I’ve seen you make it so many times in your videos it gave me the courage to try it myself and your tips and tricks helped me out so much. ❤ Me and my mom love watching your cook with me/ kitchen project videos, thanks for sharing.
With that raspberry curd, you could make an amazing trifle, with poundcake, and maybe also your lemon curd! Layer up some stabilized whipped cream with it and then top with the freeze dried raspberries dust!

Those brownies look incredible. Try baking in a shallower pan and cutting into 1 inch cubes for a party. Each one bite sized and perfect.

Becky, you could also make Raspberry Vinegar....I made some years ago and it is delicious to use in a salad dressing. Today we picked our first Native Raspberry (Australia) a different taste to the cooler climate raspberries, but the same beautiful colour , slightly rounder, flatter fruit with smaller sections and not quite as tart. Hopefully next year we will have a bigger harvest. (We only have 3 berries on the plant but it is a new planting).
Love your videos so inspiring. The crabbing video brought back memories, we would go crabbing in the local creeks, looking for the Queensland mud crabs - they have thick meaty claws.

Becky- raspberries grow like a weed once planted. Never buy again. We have an L shaped raspberry patch that encompases part of our garden. We pick from end of June to Sept, with the bulk in July. They are so easy to grow, we start to trim back in August Sept and cut them right back, throw our grass clipping on roots to keep wet. 2 End of row fence posts with wire staking to keep upright (they get heavy with berries) Easy easy. Havent done anything else for years to them. Looking forward to trying what you do with them as i get too many to use myself. I usually bake them into raspberry white chocolate scones, which i freeze…or freeze for smoothies or muffins later. Usually give away! Never tried raspberry curd. Thanks!

Just a tip. Any kind of berries especially raspberries should be floated in water with a little salt to get any bugs or any little worms out of the raspberries. Then scoop out gently with your hands. You would be shocked how many little bugs come out of them.
I was thinking the same thing as she was popping them in her mouth. Hopefully those didn't have bugs!
I literally have eaten them fresh (raspberries , blackberries and strawberries) out of the garden my entire life and never given a single second of thought to any bugs (or dirt for that matter) that may be on them.
Same goes for tomatos, etc.....live a little lol it's all good.
We grew and cleaned raspberries growing up and often found little black bugs or little leaves inside the berries when cleaning. I always look inside each berry when cleaning. I don’t want any protein in my berries.

I always kept the flats and containers from one year to the next for you-picking strawberries here in west mid-Florida, but you should certainly keep the half flats and containers in for gifting from your garden.
You should save some and make ice cream with it in the creami!!
I made, hands down, the best strawberry ice cream I’ve ever had! Just last night!
I had a ton of stuff from the farmers markets and so I cooked some strawberries down with some white sugar and just a smidge of lemon juice.
I froze most of it in its syrup because Im famous in Louisiana for my strawberry cupcakes and my recipe calls for strawberries in the syrup, puréed! So I’ve got some fresh syrup made up and I took some heavy whipping cream, a little sweetened condensed milk, some of the strawberries in the sugar syrup, and then I took 3 fresh strawberries and mixed them up and threw in there.
It is SO creamy, has incredible strawberry flavor and NOT the articulated flavors in all the store bought brands, and it’s perfectly sweet but not overly sweet.
My family ate the whole pint in one day😂
I bet it’d be INCREDIBLE with raspberries and add like a table spoon of cream cheese or a tablespoon of cheesecake pudding mix?? Kinda like a raspberry swirl cheesecake ice cream. I bet it’d be DIVINE

Among the things I miss most about living in the PNW is the berries! When we plan trips I try to be there for at least one of the berry seasons. I grew up where we had wild strawberries in our yard and wild blackberries grew everywhere allowing you to pick a years worth in an afternoon! Any kind of berry seems to thrive there. Now I live where there are no berry farms around me and I see the prices in the grocery store and can only bring myself to indulge occasionally in the summer. I grow some strawberries and raspberries of my own but they are a lot of work in my climate.
I’m in California and nothing compares to Oregon blueberries. I bring a huge ice chest for them to come home with me when I go.

Becky, if you get Tide laundry soap that comes in a box and put one scoop of the laundry detergent in a bucket or sink and let it soak for a few days it should come out.

When at catering college I was told bake in a tin, cook in glass. It’s because the glass is an insulator, rather than a conductor, it heats up slowly but keeps the heat so you get an uneven bake. Glass is far better for stews etc.

Becky, I for 20 years have made the regular raspberry jam recipe on the low sugar sure jelly pectin pamphlet and rather than canning it, I freeze it in plastic ziploc containers. I like that it retains the bright red fresh raspberry color and tastes very fresh even after a year or so in the freezer. It retains the regular a nice thick consistency. Perhaps give it a try next time.
You can totally play with the ratios in jam using the low sugar pectin. I use way less sugar and more fruit than it calls for and my jam might not be as thick as the recipe would make, but it’s delicious. I’m using more fruit and less sugar per packet of pectin and it retains more of the fresh fruit flavor. Delicious and the perfect texture for my family.
I want you to know that I have made some of the basil salt you shared about😋. Not only does it smell amazing it tastes amazing! I'm currently doing some lemon basil salt. Super easy.
Every year at Christmas I gift my adult children and their families homemade jams and jellies ( plus I make candied nuts). I'm thinking this year they are getting some basil salt! I'll keep making it until it bolts. Thank you Becky💞🙌
