My Savannah Georgia maternal grandmother , a homemaker was a phenomenal home cook ! When she made her red rice , She added pieces of pre- boiled then pre-fried streak of lean streak of fat to her recipe. No salt was needed as the fatback provided sufficient salt . I never saw her add sausage which was readily available at the supermarket . Everything else was the same as your recipe except she used no blender & cut the vegetables by hand ! Red rice was a side dish to go with a protein .
I was born and raised in Maine lived all over the United States then traveled and lived all over the globe and now I am back in Maine. I always had a huge interest in southern food and low country food and I don't know why. I began cooking at 6 years old I didn't watch cartoons I watched PBS cooking shows instead. :-). Appear in Maine we cook a lot of southern stables that you wouldn't think we do and have for generations including hush puppies. We served our hush puppies mainly with Yankee pot roast and real Maine maple syrup to dip them in.
I hear a lot about Maine's food. I have a friend who lives up there and he was describing the process for making maple syrup... he says fresh maple syrup is the best! He also talks about the seafood. Being from Savannah, GA, seafood is a big thing for me. So I'm also interested in the seafood up there.

The old Gullah man that taught me said absolutely never any meatbut he was making it like the old days when they would have it with fried chicken and collards. Salt pepper garlic powder and thyme along with tomato sauce. He used water and double that amount of tomato sauce. He was in Georgia on the coast on what was almost a little island made of sand mostly and trees and stuff like that. :-)
Yeah a lot of families do it with their on touch. My Dad adds celery to his, while others do not. Some use bacon and sausage, some use only one, and some don't use vegetables. It definitely made to your tastes.

Yep! Funny you mention shrimp, because we make jambalaya in Savannah as well. And the way my Daddy makes it, he puts shrimp, lobster, and crab in it along with the sausage. Very similar recipe to the red rice, but with the seafood.
Tomato paste comes in 3 oz 6 oz and 12 oz I've never seen an 8 oz but that's okay. I wouldn't use any more than 3 oz because they don't even use it in the real low country. The amount of sauce and paste is going to depend on how much rice you are making that's good for three cups of rice cooked which amounts to 6 cups. You increase as the rice increases of course but you don't necessarily need to add more meat and vegetables if you need more just increase the rice and sauce.
I honestly don't like cutting on our countertop... Surprisingly, I did it for this video. But I'll make Fallon get me some nice cutting boards for Father's Day lol.

Pour uncooked rice in it stir. Then add tomato sauce, paste, some water just a little. Cook on low till rice cooked and fluffed up. That's the Gullah way. No baking. Has anyone ever had this with grated cheddar cheese on the top of it? I think it’s put on in the final 10 minutes in the oven. It was a childhood favorite of mine but I can’t find anyone online that makes it like that so I’m just guessing. It’s the same exact dish outside of the cheddar

I have seen other people cook it this way and it looks more like Spanish rice to me it just isn't red enough. The red rice I have had all over the South when it's good it's really red and low country people will tell you that. Yes I talk a lot I'll shut up now! ;-)

I wasn't going to respond to this comment, but decided to anyway. Hopefully this is a teaching moment... Gullah/Geechee culture is directly linked to West Africa (and even Central Africa) since the Barrier Islands on the Southern Coast is where many Africans were able to maintain their traditions and habits. One of these traditions or habits was the use of rice for much of their cuisines. One specific cuisine that has a direct relation to jollof rice is red rice. They are not prepared in the same manner, but the concept of red rice was influenced by the tradition of jollof rice. The enslaved Africans who were allowed to live on these barrier islands (exclusively) utilized the crops around them to mimic what was produced back on the Motherland... hence how red rice has a direct relation to jollof rice.

The rice from Africa they brought over is indigenous and a separate species from Asian rice and became known as Carolina Gold

I don’t use a blender when I cook it. But the husband is picky and doesn’t like chunks of veggies in the rice🙄.

Hush puppies are also a Gullah creation. They’re not meant to be eaten with syrup…
