When I was little my uncle's wife my late Aunt Cynthia whom we all affectionately called "Auntie Cheryl" made red rice and fried fish every Friday for dinner and it is one of my most memorable recipes from her. Over the years I've tried to recreate her dish from memory and always had trouble with it. Your recipe uses smoked sausages but my aunt used bacon in hers. Your rice looks beautiful and I'm definitely going to give your recipe a try. Again thank you so much for sharing.
Hi Imari. Our Mom, Aunties and Grandmas really knew how to put a good pot together. My mom used to use fatback and sausage in hers. It was soooo good. I’ll share a funny story. When my brother and I were younger (during the 80’s) my mom made a pot, and after dinner there was just a little bit left, not quite enough for both of us to get another round, but we both wanted it. We started fighting over who would get the leftovers and fell onto the kitchen wall and made a huge hole in it (my parents had paneled walls back then). We just knew our dad was going to get us really good as we were taught not to fight one another. My mom’s rice was just that good. Well our dad let us off the hook that one time, because he was a believer in having us get a belly full at each meal. He repaneled the entire wall instead. Thank God for mercy because he let us off the hook.😂😂

I haven't cooked with it in years as it's getting harder to find in my local markets. Great story and thank you for sharing. 🙂

Hey Ms Shawn. I have one Question. Can I use Minute rice or Uncle Ben's Rice in this recipe? Can do I have to wash the Minute Rice as well before putting in the pot?
Either rice you use, I’d encourage washing it first. In regards to Uncle Bens, I have used the brown rice in this brand but not for red rice. I would suggest you use any brand parboiled white rice for this recipe. Please let me know if you have any other questions.
The sugar is to cut the acidity in that big batch your not getting much of a carb increase at all just think 1 tablespoons shared by 25 people. Not much at all.

What kind of Rice did you use in this recipe? Minute maid rice ,Uncle Ben's, or Regular rice?

Why add sugar?
Adding sugar cuts down on the acidity and tartness of the tomatoes and tomato juice. It is optional however, as some may decide not to add it.
