I would just like to make a suggestion...I know that we caribbean people often like to cook and eyeball the ingredients, but maybe for people who are really clueless about cooking, it would be nice to have measurements that they could use to replicate the dishes. Nevertheless I love your videos!!! Keep it up 🇩🇲🇩🇲
Never saw Scotch bonnet whole in a recipe, nice idea ! I don't like much heat just the flavor. Unlike my Nigerian girl who loves to cut five and six into her recipes and I said, no way don't put more than two for me !! 🤪🙄 Perfect ! Love the Ford hook lima beans and carrots near the end. Thx my Lovely woman ! 🥰

@frugaly T im cooking this while following your recipe, its similar to my own but smells amazing and look better than my usual oxtail. Just got to add my carrot 🥕 and butter bean....I forgot flour so no spinners tonight. Only got corn meal 😬
I love your video! I just have a question about the caramelizing process. What temperature do you burn the sugar on and for how long? Also, how much water do you continue to put in the pot during the 2hrs of cooking?
Put the stove to 7 and just keep stirring until it’s a dark caramel brown color then go in with your oxtail to sear then off! Good luck on your recipe, have a great day.
It can be made or bought in a store. Onion, garlic, scallion, thyme, peppers, parsley and any other favorite fresh seasoning you may like with a little water, oil or some use vinegar

@@HandMeDeals it depends on how much oxtail you're cooking..if you are cooking about 3 pounds yuo can pressure it for about 45 minutes, if it's not soft enough you can put it on again for another 10mins..

Finally someone adding brown sugar before anything. In most stew bases i always brown off sugar it gives such huge depth of flavour.
Does it make it slightly sweet? That’s how I like mine but I never add enough.

What is the green seasoning? I learned a new trick using brown sugar to brown like a Roux but we use flour.
Brown sugar is for a browning(most Jamacians use) but it's not the same for making a roux like for a gravy.
