    FYI......to achieve "cake" flour for every cup of all purpose flour remove 2 tbsp and replace with 2 tbsp cornstarch.

      A lot of these little details are more just to make the tempura have the best texture possible. What's really fascinating is how such small details can make such a huge difference.

    This is one of the best tempura videos I have ever seen. To some in the west, the Japanese way of explaining may sound somewhat pedantic but this is what produces fine results everytime. Compliments to the chef 🙏

    That coating with the flour was the step I missed when I made tempura recently. And yes, I did over-mix my batter with a hand mixer no less. So much to learn!

    wow, just so easy to follow. the consistency of the batter is absolute key as there's nothing worse than soggy tempura or thick and floury batter after cooking. yours looks absolutely delicious. i've never tried to cook it myself, but after watching your video, i just might! perfection! thank you!

    I do cooking regularly , almost all kind of cooking . But I have never been this systematic like keeping a towel , keeping a sieve to remove the batter etc . But now I feel like doing everything systematically like him . The best cooking video ever ❤

      I researched Bonita flakes. Most interesting history and how they are made. I ordered the best I can find and the Dashi seaweed. I will be watching more of your wonderful videos Thank you again.

    Excellent tutorial Kunihiro. To keep the tempura batter cold, would it be ok to place the bowl into another bowl filled with ice? 🍤

      That's nice to keep the batter cold. But please try not to drop water into oil. Oil will splash a lot.

    i will try and cook this very soon. thank you for the amazing instructions. if i had a question, all i needed to do is just rewatch the video. like later in the video i was lost at how much water to use with the egg and cake flour. then i go back to the beginning and BOOM there it is...question answered haha now to try and cook them!

    Great videos, Kunihiro-San. Is cake flour the same as plain flour used for making cakes?

      Yes, it is. You can use SWANS DOWN CAKE FLOUR if you live in the US. Regular flour makes tempura batter kind of heavy. So I recommend using Cake flour. Thank you for watching.

    when i was young and learning how to cook for the first time i watched a show called "cooking with dog" it was this wonderful woman named lady and her "co host" dog. she would go through all the steps of preparing and making a meal while dog narrated everything plainly and concisely. it was a very calm and helpful show for teaching young people how to cook with minimal stress.
    your voice sounds a lot like the host's voice and it made me feel really nostalgic and happy for that long-ago time

    I follow this recipe for everytime I make ebi/moriawase tempura at home, its very detailed tutorial, since following this steps I never had failed tempura at home ever!

      I just Google-searched stinging nettle leaves. They are also harvested on mountains in Japan and eaten as Tempura. They have less herbal flavor than shiso leaves but are enjoyed in the countryside. 😊
