Today we prepare a very creamy PANNA COTTA without using the classic gelatine glue.

EGG WHITE PANNA COTTA
350ml fresh cream
100ml milk
75g sugar equivalent
1 drop vanilla extract
pinch salt
2 egg whites
Gently heat ingreds, except egg whites, until sugar's dissolved. Allow to cool to room temp. In a separate bowl lightly whisk egg whites. Beat into cooled ingreds. Pour into 4 small containers, place in tray & pour cold water to reach halfway up sides of small containers. This is a bain marie.
Bake in oven 160deg celsius for 60-70mins or until set.

Sorry to hear that. Following are some tips that work for me. Maybe half the recipe as you experiment, to save your ingredients, while you get the right formula for you.
Tips:
*Ensure milk is not skim or very thin milk
*Perhaps reduce milk quantity by 25ml
*Perhaps replace the 100ml of milk with 50%cream/50%milk or even all cream
*Ensure egg whites are from large eggs
*If after 60-70 mins cooking in the bain marie, it is still runny when you gently jiggle the containers...then allow to cook another 10mins + or more.
*To release from moulds if stuck, once fully refrigerated & very cold ...
-Put a teatowel in a clean sink. Pour over boiling hot water. Wearing dishwashing gloves to protect hands, wring out the water from the towel. Quickly wrap the sides of the mould, for a few seconds in the hot towel.
Tip mould out onto a cold plate.
-Alternatively dip the sides of the mould carefully in hot water. Tip on to cold plate.
I made this recipe a while ago and it turned out fantastic. I also infused some mint into the milk and strained it out before using it in the recipe, which made a really light tasting dessert when combined with a pure caramel sauce on top.

I absolutely love that his eyes roll to the back if his head when he tastes his panna cotta. He's likely had it it hundreds of times but still loves it. And I'm sure it's more delicious because he made it himself. Beautiful in it's simplicity. Will need to try it sometime.

Grazie! This is an excellent recipe. Simple and delicious. I like the flavor that the egg whites contribute. Previously I have only ever made panna cotta using unflavored gelatin. This will now be my standard panna cotta recipe.

I tried this recipe just days ago... and it was a winner!
I was the one who earlier commented that I am glad to find this “no gelatin recipe”, as I didnt like the panna cotta I made before bec. the gelatin was overpowering the cream. It became to gelatinny.
Changes I made: since I didnt have the metal cups for the baine marie, I used small clear glass containers (like shot glass or a little bigger ones hoping they wont break/crack and they didn’t! Yey!). I wanted to use clear glass so my toppings will be clearly visible from the sides.
This recipe was the best! 5 stars for this recipe from cuoredicioccolato, I hope I spelled that correctly LOL. Love this recipe! Thank you! 😊

I’ve tried many recipes with agar agar, and it’s not always good. Either too soft or too compact. Then I found your recipe with egg whites and tried it, SO SO GOOD!!!! Perfectly creamy!

No gelatin but egg whites only and baking in oven in a Bain Marie. Very nice. Although, you could do it both ways. Gelatin will make it firmer not as soft. Both are equally nutritious and no starches in them. Very nice. Molto grazie signore!

Rahil MARAH I used almarai whipping cream. Cooking was 60 mins.

I made this dish today and it was delicious. Really creamy and light. I will make again but with a little less sugar per my taste.
Q: I made this in ceramic ramekins as opposed to metal containers. The surface turned light brown by the time the 70 mins were up and it was still a little wobbly. Does the type of container make a difference? Should I have kept it longer than 70 mins since it wasn’t in a metal container? Thanks. Graci.

@@Spectacular-cuoredicioccolato Hello again my friend. Somehow unable to prevent the dense brown top layer. I am thinking of a different approach: sous vide instead of the oven. I am thinking of cooking the cream mixture at 75C for 90 minutes. What would you recommend? Thanks in advance.
Sorry but never tried with sous vide but in the oven you can cover the panna cotta 🍮 with aluminum foil or a dish 😉 and remove it the last 5 minutes

Hi. I'd think you can substitute the quantity of milk for the fruit juice. Maybe it's even better if you can use a juice that is pretty thick or blended with the pulp, or one that was previously cooked to be reduced, so that the end product doesn't end up too liquidy

Hi there! I tried making these for the first time but was unsuccessful 😅 Mine came out with a brown top which I figured out to be the egg white and was still very liquid when I flipped it onto a plate. It still tasted very nice tho 😁 What did I do wrong? Please could you give some advice on how I can make it better next time? Thank you!
Have you used heavy cream or double cream?
Probably too close to the top of the oven, too close to the grill
