This is exactly how I cook. A pinch, a smidge and just a hair. I go by how things look. Perfect recipe for some one like me. I have never used a measurement in my life. I am loving this!!!!!
I use evaporated milk instead of water when I make mine & sometimes I don't add the vanilla. It makes for yummy variations of your recipe (the first time I didn't realize that they harden up more after cooling). I always refrigerate my pecans to keep them fresh, & you can always make extra & freeze some for another time. I use them on my salads & also eat them as a snack, but the possibilities are endless for what you can use them for. Candied/Glazed pecans make great Christmas gifts for family, friends, co-workers, mail-person, etc. If you decide to refrigerate but don't want to eat them cold, it doesn't take long at all for them to reach room temp, especially if you use chopped pieces for use in your salads. (Tip: if you want smaller pieces for salads: chop the pecans *before* you cook them so you get the yummy stuff on all of the sides).
This looks amazing! I think that if you waited till the very end to add your vanilla it wouldn't burn off during the cooking process and you wouldn't have to add extra. But that's just me. Enjoy!
Couldn't wait to try this but had no brown sugar so used regular sugar. It got light brown as it caramelized - kind of like toffee. So good and so quick.
Good cooks really never measure! About that much ... works every time. That's how both my Grannies would cook. My aunts would call it eyeballing. But neither had pecan trees in their yard 😺 I'll be trying this for our next gathering - with the kids.

Teach him or her everything u know, they will never forget and you'll build an amazing bond with them that will last a lifetime. I'm not supposed to have sugar anymore, but I cheat within a very limited amt. I've learned I can pretty much hav anything if it's a tiny bit. Lucky you having a pecan tree too!!! Love the recipe one change I did was to keep it on the heat to continue the cooking till the sugar started to crystallize around each pecan. Maybe another 5 mins of cooking.Omgosh very good recipe. I like my pecans dry and coated with the sugar Crystal's not a fan sticky or brittle. Just me :) Thank you for sharing

I'm glad you are teaching your child how to make this. When I was little, back in the 60's, my father taught me how to make caramel-popcorn using butter and honey. You remind me of him. I still make Daddy's caramel, but I mix it with nuts (usually pecans and/or walnuts) instead of popcorn. Yummm!

We were poor coming up , so we used to make sugar candy. ( when we had it ) We just put sugar in a iron skillet and let the sugar melt down. Nothing else ! I personally need a recipe with measurements but he seems to be a little of this and a little of that cook like my Grandma was! I think he is almost making something like a pecan brittle but with not enough syrup. He isn’t making pralines. It still looks delicious and I’ll guarantee you complainers would gobble it down if you were there.
That's the way I cook. Its called "by eye"...so when my sister needs measurements I have to cook it again just to right down the exact measurements I used.
Heck. I want some too. I remember being a kid visiting my relatives in GA climbing trees and having Brown bags full of them with my Grandmother when we went back home up north. Sweet memories.
Great reminder for me ...... I used to make something very similar but I would pour out half and then to half left in the pan I would add chili powder and sometime chili powder and the 100% cacao powder, just a dash..... favorite gift for friends.... I need to make some up soon! Thanks!

Late to the party, but these we were awesome and so easy to make. My grandpa had a pecan tree and the only thing he ever cooked was pralines.
One day we are going to make real pralines and not quick candy. We are lucky to have these trees so we should make the most of them.

Pretty good recipe. I use white sugar and no butter. I cup white sugar, 2 tsp vanilla, I tbsp. Cinnamon, 2 cups pecan halves and 1/4 cup water.
