Calcutta Mutton Biryani - Kolkata Meat Biryani

  • Calcutta Mutton Biryani
    INGREDIENTS:
    Mutton - 500gms
    Ginger garlic paste - 2 tsp
    Oil - As required
    Salt - As per taste
    Water - As required
    Milk - 500ml
    Yogurt - 1 cup
    Chilli powder - 1 tsp
    Garam masala Powder - 1 tsp
    Rose essence - 1 tsp
    Kewra water - 1 tsp
    Mint leaves - 1 cup
    Peppercorns - 10 nos.
    Shahi jeera - 1 tsp
    Whole garam masala - 2 tsp
    Kebab chini - 1 tsp
    Basmati rice - 1 cup
    Saffron water - 1 tsp
    Kewra water - 1 tsp
    Rose essence - 1 tsp
    Mint leaves - 1 bunch
    Plumps - 5 nos.
    Coriander leaves - 1 bunch
    Brown onion - 1 cup
    Lime juice - 1 tsp
    DIRECTIONS:
    Heat oil in a pan,add ginger garlic paste, brown onion paste saute it and until all the raw flavors are gone.
    Then add mutton pieces, salt & water cook it for 30 minutes with the lid closed, and add some milk, yogurt, chilli powder, garam masala powder, salt, boiled potatoes cook till they are soft.
    Now add rose essence, add kewra water, mint leaves, plums to it and cook it for some more time.
    Heat hot water in a pan, add oil, salt, peppercorns, shahi jeera, whole garam masala, kebab chini, soaked basmati rice mix it once and cook it till its 70% done.
    At last, add boiled rice, saffron water, coriander leaves, brown onions, lime juice and keep it on dum on a slow flame for 15-20 minutes. Then switch off the flame.
    Serve the Calcutta Biryani in a plate by topping up with the eggs.

      Because u like does not mean it is best ....no Biryani is best than Hyderabadi biryani ...when the Name Biryani come ...The City Hyderabad comes first in mind and then Lucknow

      @@MrShreetam Bro I have eaten a lot of hyderabadi biriyani.. Its more spicier and you will need raita to eat.. but kolkata biriyani is so juicy and moist.. you dont need any external curry.. Kolkata people dont like to eat raita with biriyani..

    Sir. It's awesome and looks delicious. But Kolkata Biryani also contains a few drops of Meetha Attar. Is there any specific reason why you haven't added to this? Because I feel the main essence comes from that only.

    Purists will pass comments to put your efforts down. According to me, you did justice to the recipe by putting disclaimer that in original recipe certain things you added aren't usually used so they're totally optional. I'm pretty sure your preparation would've turned out very delicious.
    It's nice to see you appreciate this style of Biryani cooking without any inhibition or comparing it with your usual Hyderabadi style, inch by inch. One small suggestion, in order to make your version absolutely rich you can think of adding "Mawa" and "Mitha Itr" those are considered to be "Star of the ingredients" at many of the legendary outlets in Kolkata.

    Thanks for uploading my favorite Calcutta Biryani...it’s like no other Biryani.. No mint or Cilantro. I think one can use the same method with your choice of meats/chicken. Chicken doesn’t take too much time to cook unlike beef, also, depending on the size. If you trying to purchase mutton in Canada/USA you’ll have to ask the butcher for GOAT meat, otherwise, you’ll end up with New Zealand lamb/sheep which has a strong smell.

    Thanks for your inspiring videos, have again tried this method of cooking and it was similar to those Biryani as if it was brought from Aminia / Arselan or any famous hotels, I bet there was no difference in the taste.

    But I have a question. In case of mutton kachhi biryani how mutton is cooked? As mutton is quite more hard than chicken.

      To make it tender, that's why in kacchi mutton biriyani one of the ingredients used in marination is boiled green papayas.

      you can use any basmati which is long grain but less flavour . This rice has to absorb flavour of the mutton stock.

But this time I am sorry to say...that this recipe is not even close to kolkata style biryani..I am saying this because I am from Kolkata myself..and have been eating this biryani since childhoood..and even seen it being made by local chefs from hotels in marrige ceremonies and other parties many... many ...many times during my lifetime..

      There are hundreds of Hyderabad biriyani’s And so are Kolkata Biryani is Armenia biriyani Arsalan Biryani and have eaten in all those places and I modified it for home cooking

    Biryani's are not plenty, there's only one biryani ....The Hyderabadi biryani, the rest of them are pilavs. Dont mislead the people chef, you are getting naughtier day by day or i must say since you became commercialised.

      @@sreyashichakraborty3833 A majority of info available on google is misleading so dont trust everything blindly on the net and secondly i know where it came from but when it came to hyderabad the local chefs of the nawabi kitchen of the nizam took it to a whole new level and then it got world famous. The mix of spices in hyderabadi biryani is totally different from its place of origin .....so you better not utter BS Because half knowledge is not only dangerous but lethal.
