- Hyderabadi Mutton Biryani
Ingredients 750 grams Basmati rice
1500 grams Mutton Biryani Cut
1/2 tsp black cumin
2 number boiled egg for decoration (optional)
1 bunch coriander leaves
2 bunch mint
2 cup Curd
2 tbsp whole garam masala
2 tbsp Garam masala powder
2 tbsp Garlic and ginger paste
2 cup Golden fried sliced onions
3 number gr chilli
2 number Lime juice
1 tsp meat tenderizer or Raw papaya paste
¼ dil/soya leaf optional
5 tbsp Oil
1 tbsp Red chilli pdr
1 tbsp coriander pdr
1/2 tbsp cumin pdr
1 tbsp Rose Water/Kewra water (optional)
1 pinch Saffron
taste Salt
1 pinch Turmeric powder optional

Directions • First boil the water ,add oil, salt and cook rice half cooked. • Next maranation of mutton, in pan take mutton, add all the spices and curd, onion, • Now n a pan add the maraniated mutton in the bottom and top it of with half cooked rice,add mint leaves, coriander leaves, fried onions.repeat the same process twice.cook for 30mins serve hot with raita and mirchi ka salan , follow the video recipoe of bagara baingan , make a thinner gravy ,substitute brinjal,eggplant with green chillies

Vah chef I just made Kolkata mutton biriyani last night which I learnt by following one of your earlier videos.
It took us almost 4 to 5 hrs from start to finish so now I understand all the 'behind the camera preparations' you go through..
I want to tell you that once we were done & the biriyani was finished there was no restaurant on this planet that could have made a biriyani that can match the sheer richness and flavour explosion against what we made!
We both had our own special Boomba - Boomba moment after the 1st bite ;p
This is the 4th recipe we have made thanks to you that has produced such outstanding results.
My various friends groups want us to cook for them!
Neither me nor my wife are cooks and are below amature level at best but your sheer enthusiasm has inspired us to create things that we would only dream off ..
My birthday is next month & I will be making this biriyani which you just showed us.. No more cakes!!

I don’t understand why i see your videos after a gym session. What happened next? Went to store just before closing at 11, requested him, got lamb and made biryani. By the time i made biryani date has changed. No regrets.. loved it. Thank you and i hate you for this :)

Hello chef, never knew about green Papaya to tenderize the meat, I use to package meat tenderize . I've just started using a pressure cooker

The packaged version has the papaya enzyme papin usually with lots of salt. Some times so much salt about 85% of the powder is salt. So read labels carefully. Fresh juice is best, the paste if it is much gives a distinct taste which is not good so juice is good. The readymade powder also adds a funny taste if it is too much.
