    I like cream cheese in my gravy, then thin if needed with HWC! I need to make this soon, but I bake my meatballs then scrape drippings into a pan for gravy. I also add sour cream sometimes!

    Comfort Food!! So glad to see you in your bright yellow apron, feeling better. Instead of sour cream (I often run out of it) you can use cream cheese which adds a nice flavor of its own, or a good greek style yogurt (I use FAGE 5%) which flavors things a lot like sour cream. Thank you for another easy recipe❣️

    I use a little butter at the end and JUST barely melt it as a thickener. I don't have anything carnivore crisp because I am cheap....er, frugal.
    (I looked it up and it is called "mounting"🤣)
    "Sauces can be finished with butter, to luxurious effect, with a technique called mounting: for a rich, glossy, butter-mounted sauce, add pieces of well-chilled butter to the heated sauce and rotate the pan steadily, allowing the butter to emulsify slowly"

    Look SCRUMPTIOUS Anita! Great option to make hamburger taste differently! I’m getting an aversion to hamburger for sure. I was raised on BROWN GRAVY. (Definitely a SOUTHERN FOOD GROUP 😂🤣😂) I’m gonna have to break down and order that meat flour. It would be so good on cauliflower rice. Oh, and Anita I have started losing weight again. I praying it doesn’t stall again.

      @@KetogenicWoman me too Anita. I’ve been teetering back and forth from a 63-67 lb loss for months. A sweet lady told me to eat my first meal until satiety (put the scales away) then don’t eat again until hungry! I started the very next day and lost 4 lbs in a week. I hit the 70 lb mark today. Plus, I haven’t gained one ounce back this week. Steady loss! No TEETERING! HAPPY 💃
      🤣😂🤣🤣😂🤣. I was about to give up. I’m doing 65% fat 35% protein about & I’m sticking to it as long as it works! I claiming this as win.

    My Dad cooked SOS. Chipped Beef or Ground Beef in Milk Gravy! I think he learned it while serving in the military. Steak Um and gravy! So glad that you are feeling better!

      I boil/concentrate my broth before freezing it. More intense flavour and takes less space in my freezer

    Great idea for getting some extra nutrition in there! I'm excited to have another way to use some of the dehydrated liver powder I have. I bought some in bulk, as it was less than I could make it myself for. Definitely has proven more economical to make my own chicken & beef "flours" however~ much easier than I initially thought it would be. Even living full-time in our RV now, w/limited tools & appliances, smaller work space etc., I can still manage nicely. It seems we adapt to our environment, & many things I thought I'd be giving up are still doable. Thanks again Anita~ & good to see you're feeling well.=)

      @@rfross64 Sure thing=) Just cook a large, lean beef roast (the bigger the better)~ I usually buy a few when on sale, such as bottom round or eye of round, trimming off any outer visible fat. Once fall apart tender, let cool until able to handle, then shred it all up & grind in food processor until it's a mealy texture. Spread out on silicone or paper-lined sheet pans & dry it out in the oven, stirring every half hour or so, until no moisture remains. Can also use a dehydrator, if you have one. Same process applies for chicken or pork. The key is ensuring that all moisture is gone~ I use paper towels to test it, pressing a bit in my hand w/paper towel until it no longer shows any dampness at all. Then the meat "meal" goes back into processor or high speed blender to turn into powder. That's it. *After writing that out, I just realized I could link a couple videos that show the steps & likely explain it better than I can😁so let me go grab the ones i initially learned from, & I will drop them in here as well....

    I like to add fresh cream and eggs to the meat and let them in the fridge for few hours. Also some times instead of using the pan I prefer to cook them in the oven

I've made this & served over noodles that I made using Egglife Wraps just by cutting them into long strips. I boiled them in water for a little bit just to help them become morre soft. Man oh man... deee-licious!

    I make mine lil onion also ‘Swedish meatballs. Had a bit left in frig of cream cheese. Worked well
    I did order the jarred beef flour. I did not see the bag size. Next time tho. Pretty warm & hearty, freezes pretty darn good too.

    I’ve thought about using the carnivore Melba toast and grind them up to use as a binder for meatloaf and meatballs! I think that would be so yummy! By the way I love the little toasty’s they work so good with dips!❤

      Most of my cooking just spills out of my head. There is no printable recipe card for this one yet. But in the description video notes I did write out the what is in the meatballs.       I'd just use a concentrated beef/bone stock. When I make bone broth, I boil it down and concentrate it well before freezing it. Takes less space in my freezer

      I did say in the video that you can just leave it out! I like the flavor and thickening it brings but in the video I also talked about alternative ways to make the gravy.

      @@KetogenicWoman Still trying to find my sweet spot. I fall short on protein and fats most days. Yesterday, I bumped it up and drank salted water. Felt a lot better. I had been experiencing vertigo and fatigue for a week, but much better today. I started carnivore eating sometime in February. I’ve dropped 24 lbs. Slow, but not so steady. The stalls are brutal. I’ll take it as long as I feel good. Your videos help so much. Best wishes to you. Stay strong and well. Angela

    Hey, I'm so glad I found your channel. You're very good at this! And your videos are taped and edited quite well. Very pro!
    I'm going to make this tonight. Tonight is a hamburger night, but I'm tired of hamburgers - so Swedish Meatballs it is. The only difference is that to make them "Swedish" we add, iirc, nutmeg. I'm ketovore, so a wee bit of spice (and minced onion or onion powder) is okay for us. I'm also gonna use pork rind dust as you suggested, cuz it's what we have.
    So thanks much!
    Oh, about half a year ago I found a video claiming that whey isolate protein powder and butter (or some fat) can be cooked together in a pan to make a sort of "roux". Have you ever tried this? The one time I did, it didn't work that well for me. But I may have done it wrong. It would be nice if there was a keto roux.
    Now that I think about it, if pork is on sale, I may get some and "grind" it in my food processor - and mix it into the ground beef. That sometimes makes meatballs like this a little better. So weird - ground pork is always expensive at my markets. But some "lesser" pork chop version is always either on sale or almost half the price of ground pork. I guess they use chops or version of pork chops as a "come in" sometimes (low price to get people in the store) but never ground pork for this, cuz ... I guess it's not as popular. Anyway, I'd love to know what you think about that "roux" thing. I may try it, if I can find my whey isolate. Thanks again!!

      There is a store near me where I can buy it "bulk" - meaning I can choose the amount I want. I may experiment with it.
      Our gravy was just reduced, and I added hvy cream. It was good. But I miss roux gravy.

      ​@@FreedomLovingJyou can use beef gelatin powder to thicken sauces. Use about a tbsp, or two, sprinkled over hot sauce. Stir in and allow to cool slightly. You can add more if needed, but too much can make it a little bitter. Hope this helps.

    I’ve made meatballs twice lately, and without bread and milk they seem to come out too tight and dry. The flavor is good, but I’d like to improve upon them. I combed the snack aisle at the Jewel, looking for pork rinds and finding nothing: I guess they’re not so common here in Illinois. I tried some in Alabama many years ago, and they smelled and tasted like old, cold, stale grease. Perhaps there are better brands you could recommend?

      Well I am in Canada so my brands won't be in your area. But one tip that surprised me is that I found some super clean pork rinds in my local walmart in the ethnic food aisle. Look for pork rinds that contain just pork, salt and lard. The other option especially if you are using for meatloaf or meatballs is the pork panko on Amazon. I know that is clean! amzn.to/4aIjGRA

      Sorry I didn't measure it, you can use as much or as little as you want depending on how thin or thick you like your gravy! If I had to guess I'd say about 1/2 cup?

    In the Philadelphia, PA area, meatballs and gravy means meatballs and tomato sauce aka gravy in Philadelphia-speak. Not keto but delicious.

      There are some versions of carnivore that don't include those things such as the Lion diet which is beef and water only. I think most people understand carnivore to be all animal products and the items you mentioned are animal products. Ketovore is meat based with some spices, seasonings, coffee, a little veg here and there.
