Da profano espongo umilmente una semplicissima deduzione, ossia, ma in fase di cottura, con forni che arrivano anche a 400°, mi spiegate la famigerata acqua all'85% che fine fa? Immagino sia completamente evaporata, dunque l'affermazione che ci mangiamo più acqua che farina mi sembra quantomeno azzardata
Can you please please answer a question for me. I am a home pizza maker with a small oven and it does go up to 850F, however whenever I make dough at 65% or higher the semolina always burns on the bottom of the pizza. I have tried everything but can’t figure it out. How do you have so little flour on your dough but it doesn’t stick to the peel? Thanks!

La tradizione del impasto dei vecchi pizzaioli era di prima mettere l'acqua sciogliere il lievito e il sale e poi poco a poco introdurre la farina. Non so tu però a me così me lo hanno insegnato.

El secreto también es la cantidad de proteína en la harina a más proteína mejor red de gluten y más hidratación soporta
Ciao, è molto semplice. La pizza digeribile non dipende dal tipo di impasto o dalla quantità di lievito che metti. Semplicemente dipende soprattutto da QUANTITÀ E QUALITÀ degli ingredienti che si utilizzano per condire la pizza. Sale, grassi sono anche dei fattori importanti che determinano la digeribilità di una pizza. Non esiste un impasto più digeribile rispetto ad un altro,non considerando gli impasti con farine integrali che possono causare delle fermentazioni e quindi gonfiore. Ma è sempre in secondo piano. Non fate malainformazione!

This style is all right I rated in the top five but it will never compare to a New York City pie it is what it is you cannot compare glorified naan bread with tomato sauce to a nice big fat sliced fresh mutts perfect amount of tomatoes fold that sucker in half like a taco and wop it down
