Please would you mind telling how you make carrot and swede? What you buy and how you chop and cook them? I always struggle to get mine cooked through and resort to buying the Aunt Bessie's pre-made stuff but it's expensive and hard to find where we live. Thanks in advance!

I have seen chicken fillets coated in a thin layer of hummus then coated in either breadcrumbs or crushed cornflakes then baked in the oven.

My weekly budget is 30 quid for me and 3 kids 2 are teens its really hard but do able, home cook everything including sauces,no takeaways, i have sciatica and lower back problems aswel as arthritis in my hands n feet but not cooking isnt an option haha i did treat them to a mcdonalds yesterday using some birthday money i had saved n to see thier faces when it arrived omg i new it went to good use instead of the curtains the money was originally going too haha use to be 60 n then cost of living struck it went to 40 n now my rent and council has gone up its down to 30 but im soo surprised of wot i can do with what i get just gotta use my brain a bit more😅 ur meals looked lovely❤

Nice meals. Sometimes its wortt buying the packet mixes ( i only buy when on offer tho) just to see if you like them , then if i do i then make them up myself. Yesterday we had the montreal steak mix, but i put it on chicken, & it was realky nice , so im going to make a jar of this up. Also when i bouggt this last week i didnt have my reading glasses with me to see the ingredients ( which i have all the spices/ herbs to do it) so thats also why i bouggt it. Thats good you stuck to your plan & used things up.

Really great meal plan I could do with doing same towards end of May. Used both those packet mixes in the past the lamb kebabs in warm pitta bread with shredded lettuce grilled hallomi is nice. Packet mixes are so handy packed lunches / snacks / drinks is what bumps our food bill up

I like these challenges just shows what we can make if you put your mind to it & try & use things up. Abd save some money and can still pick up reduced stuff within that budget as well !! Win win
