    Ah , people have been using that for a long time on pork. I remember my stepfather using it like 30 years ago on pork chops.That's where I learned it from. It is quite good.I've never tried it on ribs.I'll have to do that.

    I assembled my new Weber Performer during Beryl! I can't decide whether to use foil boat or wrap in foil for the first brisket cook? Have you tried the foil boat method on your kettle? I have that same roaster so that'll be the resting place. Really enjoy the videos. I tried to purchase a fat stack offset but got my money back, thankfully! It looks like the kettle will be my cooker for a while now.

      @@user-vd4ki5ri9x you can’t beat a kettle. I’ve tried foil boat and it works but since there is minimal bottom heat it looks pale and unappetizing. Tastes fine though.

    Covering the meat with foil etc. you're only making the ribs drier than they were. Plus, you won't have the same original smoke aroma anymore.

    Ok, im always for trying something new. My question is did you finish them in the foil or remove them and how many more hours. I don't use foil and smoke with apple wood and for 8hrs at 225. What wood works best with your recipe. Thanks G

    i did a brisket on my webber once... once. It tasted like charcoal and the fat didn't render properly. I'm sure wrapping in tallow and putting it the warmer helped a great deal, but there's noting like actual wood smoke in a proper pit to make brisket taste right. But with that said, I'm open-minded and would like to have tasted it with the bullion and method used.

    Looks great! Nice job. Glad you got your power back on. Would you say the salt level is comparable to a heavy salt and pepper brisket? Or does it need more salt in addition? Also, if you just bank your coals to one side in the Weber and light one side of the coals and cook the same exact way, but without the slow and sear, (you can also use the snake method) you will get a lot more even cooking on the bottom. The slow and sear really directs the heat straight up and blocks the heat underneath and turns it into a pretty much top down cooker. I don’t use mine for this reason, much prefer the results without it. Either way, your brisket looks great though. Keep up the great work.

      @@THutch556 Thanks for watching!Salt level was good for me but the addition of a small amount of extra salt would probably still be good. I use without the insert occasionally as well. Hard to make anything bad on a kettle. Really impressed with that low and slow from Kingsford, first time using it.

    I have always marinated ribs with Italian Dressing,, good with country style ribs too! I usually bake mine in a roast pan on 350 for 2 hrs then sauce them up & 15 min more uncovered, Melt in your mouth

    Ok…you deserve some sort of award for smoking in a hurricane and filming a video when the power is out. I think this is a first on the bbq TH-cam. Did the salt in the bouillon tone down after the cook? It sure was good looking and your videos are always so creative. Glad you weren’t without power for long. I’m north of Dallas and we barely got any rain. Wished we’d gotten more (we need it).

      @@crazymonkey9611 lol, thanks for watching. Salt was not overwhelming at all. Tasted pretty much like normal salt and pepper rub, just a little more “beefy”. We were definitely lucky power was not out longer. Still lots of hot Texans tonight.

    Kraft uses cheap soybean and dangerous canola oils in its dressings. Learn to make your own italian dressing using a very good olive oil from Italy, Sicily, Sardinia, Corsica, Spain, or Greece.

    I do ribs very well in my oven. I will definitely try his zesty Italian dressing but I do my ribs in the oven at 225 for about five or 6 hours until I get pull a bone out clean. Time to eat!!!! Thanks for your recipe.

    Why didn’t you wash the meat before marinating it ? Also why did you cut the fat off. That’s where the flavor comes from.

      Never wash meat, spreads germs. Fat isn’t flavor. Fat helps transmit flavor and there is plenty of intramuscular fat in ribs for this.

    Tallow is latest gimmick. Check out Truth BBQ cook on Meat Church. Far superior to Goldee’s. I live in FTW. Goldee’s is very good but still just another salt/pepper knockoff. Panther City BBQ here is much better. Goldee’s has changed 3 times in last 2 yrs. First paper wrap. Then foil boat. Now foil. All they care about is finding easier way to produce more. Pit master Chuck left and started her own restaurant in Lockhart. Johnny has started secondary rib only business in south FTW. They’re cashing in while the iron is hot. Don’t blame them but don’t expect to see them #1 in Texas again soon.

One day in a supermarket I saw a bottle specifically labeled 'Italian Dressing Marinade,' and figured "well heck, that must be even better!" It wasn't; it was in-your-face strong and nasty. I used it once, and poured out the rest. I'm partial to Newman's' Own, and when I checked the ingredients list I found it contains Worcestershire sauce. So if I happen to be using a budget brand for salads or as a marinade, I upgrade it with a little Worcestershire. It makes a difference.....

    Why did you cut off all the extra bits ? Sometimes they're the best part. 👌 I've been using salad dressing for 30 some odd years, it's basically the same as store bought marinade but cheaper.
