That pork is very versatile..........I had a Puerto Rican style pork butt that I was using for Cubano sandwiches........awesome.........I was looking for other ways to use it because I was getting tired of Cuban sandwiches.........I had thought of homemade tamales as another use for that meat.......I have the MASA and corn shucks at home already.

Definitely an interesting way of cooking a pork butt via Italian. Heretofore, I've gone the "Texas" route, Kosher salt and 16 ga. black pepper, with a bit of Lawry's. I'm going to have to give the Italian's a try. Well done.
