Vegan Porotos Con Rienda
After being in quarantine for 19 days in a Chile with no ability to even go walk the streets or the beaches of my mothers country I made peace with the possibility that this trip is not going to be what I thought or wanted it to be. Rather look for the silver lining that is spending time with my aunt and uncle and learning all the yummy Chilean dishes I didn't get to learn from my mother. This recipe was made with my uncle my mothers brother in his tiny kitchen in Vina Del Mar and I wouldn't of wanted it any other way. Accidentally vegan are my grandmothers Porotos con Riendas, a delicious bean and noodle soup made with squash and bell peppers. It is simple and yet so hearty and satisfying.
