Vegan "Beef" Empanadas

I took my mom's traditional Chilean Beef Empanada recipe and put my own vegan twist to them. I used Beyond Meat, for our "beef" you can use any plant-based meat alternative you like I recommend using Impossible Meat as well. They were crispy and delicious!
