A Vegan Italian Feast in Idyllwild The Best Vegan Arancini's, Meatballs, Marinara and Caesar Salad

  • Took a wonderful little trip up to Idyllwild with a few friends just to unwind, quarantine together lol, cook and just enjoy being somewhere else for a bit. We had an amazing weekend filled with food and laughter. I made dinner Saturday night which included these amazing arancini balls stuffed with mozzarella and parsley they were to die for! I made those ahead of time in the 2 part video then frozen them put them in the oven and they were just as delicious as they were fresh out of the fryer! To accompany the arancini balls I made a simple yet delicious tomato sauce, a classic caesar salad, and impossible meatballs. SOOOO delicious. Those weren't on the original menu but they were on request by the birthday girl so we added them last minute to the menu.

    6 Cups Water
    2 Cups Arborio Rice
    1 Tsp Saffron
    Miyokos Moz Cheese
    1/2 Cup Fresh Parsley
    My Vegan Parm (Recipe link below)
    1-2 Cups Bread Crumbs
    2 Tbsp Vegan Butter
    Oil For Frying (veggie or grapeseed is best)
    Salt and Pepper to Taste
    Batter
    1 1/2 Cups Water
    1 1/2 Cups All-Purpose Flour
    1/4 Tsp Salt

    3 Packages of Impossible Meat

    1 Cup Chopped Parsley
    1/4 Cup Vegan Parm (mine or Follow Your Heart)
    Salt and Pepper
    1/2 Cloves of Garlic (Grated)
    2 Tbsp Cup Bread Crumbs

    Caesar Dressing Recipe Ingredients
    --------------------
    1 Cup Cashews Soaked
    1 Cup Water
    2 Tsp Dijon Mustard
    2 Tbsp Nutritional Yeast (or my Vegan Parm)
    1 Whole lemon Juice
    Salt Pepper
    1 Garlic Clove
    1 1/2 Tbsp capers
    1/4 Cup Olive Oil
