The Best Vegan Albondias Soup

  • This is a take on my mom's albondigas soup a hearty and delicious soup filled with veggies and a wholesome broth I made the "meatballs" from Impossible Meat but you can use any kind of plant-based meat you like. You can even make these out of lentils! So yummy! It is the perfect soup for the fall/winter! Enjoy!
    Recipe
    Ingredients
    2 Packages of Impossible Meat (or your favorite plant-based meat)
    1 White Onion
    3-4 Celery Sticks Chopped
    3 Large Carrots Chopped
    3 Medium Zucchinis Chopped
    5-6 Red Potatoes Chopped
    4 Corn on The Cobs Cut in Half
    1 Red Bell Pepper
    1 Yello Bell Pepper Chopped
    2 Cups Spinach
    2 Medium Yellow Squash Chopped
    3 Garlic Cloves Minced
    1 Can Tomato Sauce
    1 Tbsp Tomato Paste
    1/4 Cup Fresh Mint Chopped
    1/4 Cup Fresh Cilantro
    1/3 Cup White Rice Cooked
    3 Tbsp Bread Crumbs
    3-4 Containers or Veggie Broth
    Salt and Pepper to taste
    2 Bay Leaves
    1 Tbsp Garlic Powder
    1 Tbsp Onion Powder
    1 Tbsp Cumin
    1 Tbsp Paprika
    1 Tbsp Dried Oregano
    1 Tbsp Dried Parsley
    1 Tsp Chili Powder
    1/2 Tsp Chili Flakes
    1/4 Tsp Celery Seeds
    3 Vegan Boullion (Not Chicken and Veggie)
    Fresh Cilantro (Garnish)
    Lemons (Garnish)

    Ah, impossible meat..i thought made with jackfruit...looks good!!
