  • A brief look at the contents of Dexter beef box. This was a fairly small animal by our standards with the box coming in under 13 kg, boxes are normally between 17 kg to 20 kg.
    We market our beef from the Farmer P. Bradley farm face book page taking orders in advance, only sending an animal off when we have at least eight orders in the book.

      Tom and his dad obviously care about their cattle, as do we, he sells his beef in his own shop too. In some ways we have both extended our shop front window to a much wider audience through our you tube channels, showing our customers new and old how we produce what’s on display at the counter or in the box. Both of us can tell you where that beef joint came from, how old it was, what medication it needed (if ever) what it ate, where it was slaughtered, hung and butchered. No superstore will ever compete with your local farm shop for traceability and providence.
      The superstores may be cheaper, but their true value is far less.

    Very informative video Farmer P... You can see there is a tiny margin in the sales of this meat, with the costs you talk of and the final selling price, not to mention looking after the animal for 40+ months! Great work though and thank you for sharing all these wonderful videos 👍🏻

    Lot of super markets hang but its hung in vacuum bags so they dont lose weight. But seeing farners P he dry hangs this more flavor and better texture . When meat isnt hung right it boils when you cook . He offering great value great quality plus they had happy lives .

      Half the point of hanging is to get rid of excess water Sion. I sell my packs by weight, no one wants to buy water at £12.50 per kilo. You may buy super market beef at half the price, but it’s twice the weight...

      @@FarmerP totally agree plus its like chesse improves the flavor of meats by allowing the natural enzymes in the meat to break down the tissue through dry aging. Your right about the fat too cook with it . Idea you could do little recipe sheet with Holly eg shin of beef in local ale with dumplings a with root vegetable mash . Or pot roasted bisket in the slow cooker .

    Fantastic beef dexter is the best better than wagyu where's holli hope she's learning to drive tractor so whe see more of her shes lovely farmers wives and daughters are all angels in my book how lucky you are but coffee cake the best let's see video of other two making one it should be laugh I bet it will be funny I bet the have flour all over faces ha ha

    As a none farmer in real life, it's fantastic to learn about this stuff. Actually made me need to get something to eat looking at that wonderfull meat (That's what she said) Just out of interest without getting too personal. Does what you make on a box of meat cover the cost of rearing the cows? I understand if you tell me to pee off and not be nosy.
    Love your channel. I'm actually wanting to discuss something with you as well but that will be in privet.

      No, Ask away Wayne, if it didn’t make any money I would not be able to afford to do it.
      Take this box in the video. It was one of eight equal portions of one small beast.
      13kg x 8 = 104 kg of beef. ( our average is over 160kg, so you can alter the maths)
      104 x £12.50 = £1’300 gross.
      Deduct £420.00 for slaughter, hanging and butchering.
      Also Deduct £400.00 for fuel, time, silage, hay and water. We are on a meter and they drink a lot. (If you are renting ground, deduct another £100)
      £1’300 - £820 = £480.
      On average each beast earns me between £400 and £600, which is all invested back into the farm. If you average the margin at £500 per animal, I would need to do 40 a year to make a living. The farm does about seven a year because we would have to over stock to produce more, which would increase the burden on the land and reduce our quality.
      I would rather do low volume, high quality and never need a veterinarians services.
      So yes the cattle pay for themselves, but can’t produce a living by themselves, which is why we have the Tree company, and now this channel that is also starting to earn a small monthly edition, that is also fed mostly back into the farm.
      The days of farming earning your fortune are gone, unless you inherit a big modern farm with no debt, there are too many obstacles. Farming is a vocation, a way of life, if it’s in your blood you can’t help it.... Even if it tries to bankrupt you.
      I am happy to share real information with folks who don’t understand what it takes to feed them, I sincerely believe the vast majority of the UK population is so far removed from the fields and countryside it has blurred their vision of what’s on their plate and how it got there.

    As a chef i can see the qualitiy of the beef just by the looks and that one is amazing. Sadly we get most of the beef at my work place from Uruguay, mainly for the price point. I like how you sell the whole animal as a package and not just the 'best' parts. As you mentioned the 'cheap' parts are not mediocre, especially flavour wise. 👍

      Some of the cheap bits make the best meal in my humble opinion, nothing like a decent bit of shin beef, there isn’t much you can’t do with it. I would rather have ten ponds of shin in the freezer than two pounds of rump.

      Ever tried to make an ossobuco with your shin beef? Typically you use calf for it, but with your smaller sized, well hung dexters i can imagine that that would work awesome. Easy dish you can prepare ahead and when u need it just put it in the oven. Also i can think of a lot of really tasteful braised dishes.

      The fat on this pack is also quite yellow, some of that is down to how long it’s hung mind. Too much yellow colour in the fat can indicate corn reared beef as well.

    Well done most people don't have an understanding of what good meat is. Grass raised is the best meat I've only had a few that didn't like it and i found out they were trying to fast cook it on high heat and grass sometimes doesn't have the fat a grain fed animal has. Some in the United States are going to the smaller breeds even going with miniature a smaller family doesn't need a large amount of beef it's better to have smaller amounts that way you have fresh beef more often.

      I agree with all of that Lawrence, beef has lost its position as top table fare recently with scares about eating too much red meat. Supplying smaller quantities at the highest standards is gaining in popularity. I have a body builder customer who buys a pack from every animal I do, he is very fussy about what he consumes... I don’t think it lasts him very long mind... He is. Big fellow. 😄

      @@FarmerP one thing i thought about in watching your video is a comment made that the fast food Hamburger joints have wrecked the system. No longer are there butcher's that produces high quality cuts rather they have been replaced by anyone that can stuff a chunk off meat in a grinder. That's a second thing that your bringing back a good butcher

      It’s also supporting a small independent local abattoir Lawrence. Folks complain they cost more than the big ones, but there is a reason for that, they are small, and independent. But if we don’t use them, we lose them. Then there will be something to complain about....

    Man after my own heart,👍 people need educated about hanging beef and also about the colour of properly hung beef👍 don't know why but not so much ox liver available these days which is a shame😕 but yeh a nice piece o brisket takes a bit o beating, top job Ian 👍

    The texture and the marbling look great . Florida beef is always so bland bright red no texture seldom any marbling to speak of . Its all sand down here . Most folks will send them out to Oklahoma to the feed lots where they pump corn and T&A to them rich's them up . Same with the hogs lots of corn . Yes the taste comes from the marbling . That liver we usually get tiny cuts but Liver & Onions with some mashed potatoes and brown gravy . Some green beans and a nice salad that,s the ticket .

      Corn reared beef is quite different to grass reared, it’s a lot faster to produce for sure and I expect it eats well if hung properly. I prefer the way I do it because the low volume production method produces far more relaxed beef, plus Low stress happy stock doesn’t need any medicines, it’s as natural as I can make it. 🐂👍

Would love to try and raise some over here as long as the land was good enough to support them like they deserve . I guess first step would be to get the fields fixed right . How are they about warmer climates ?

      Dexters are quite popular as a small holder cow in the USA. They are hardy and will thrive on rough grazing, give them some shade, enough water and keep the flies off them and they will do fine.... They even respect an electric fence, although if you are VERY dry this may not be the best choice, you may need A five meter earth rod 🐂😄👍

      The abattoir don’t put a grade on my ticket as it’s for our own use / sales.
      This animal was small with a deadweight of 170 kg, our last two were 220 and 225 kg deadweight.

      As many as you want, but we stick with eight equal portions, it keeps stuff simple and normally fills a deep freeze drawer with one joint left over for Sunday. 👍

      I’m afraid you would be disappointed Kyle, at the moment the biggest fish in our stream is a minnow. There are plans to create a couple of fishing ponds in the future, but that depends a lot on how or if we continue to develop the golf course.

      I don’t think the customs police will allow raw meat, and I’m not sure I would be happy to take the risk of keeping it fresh enough for the journey. Out of interest though, I will make enquiries.

      Correct, that fee is for hanging the whole carcass, which will eventually be split between eight boxes.

      @@FarmerP out can be done. We had a experiment left a half carces hanging for 37 days in a dry room. And the ribs shrink a bit more but very rich in flavor. If the butcher has the space. And the Klimate controlled space. But it's fine meat your selling. And for a good price.
      I have hunted some wild boar 🐗 this Sept. It must hang til next week. Then I get it. Butcherd in small packages. I can't wait. It's a legal hunt. I got my registration and permit. Gouverment of Belgium checks everything good. But I got the sausages early. The smoked and dried bacon is the and back legs are the experience pieces

      Sounds good, we have a lot of boar in the Forrest of Dean, not far from here, they do a lot of damage and are not the easiest to hunt successfully.

      Soccerfields. (of little. Club's) 20 years ago we had to go to the Arden's in Belgium but now I can walk 20 min and find where the walked. And. Distroyed 🌽 fields.
