  • Energy balls are such an understated snack. They’re high calorie and can be packed with protein or fat, perfect fuel for a long day or a good gym sesh. This energy balls are dried apricot based and are really light and zesty perfect for summer when chocolate or dates won’t cut it.
    80g apricots
    20g goji berries
    50g pistachios
    50g cashew nuts
    Juice 1/2 lime
    1 tbsp maple syrup
    1 tsp vanilla extract
    Pinch salt

    This is my recipe that I make into bars all the time but you could make balls or cubes or whatever shape you want :)
    350g chopped, pitted dates
    90g raisins
    150g walnuts/cashews/pistachios/etc.
    75g hemp hearts/pumpkin seeds/sunflower seeds
    3 - 4 tbsp peanut butter (almond is delicious as well)
    1 tsp vanilla extract
    pinch kosher salt
    I also do a coconut chocolate version with shredded coconut instead of the nuts and seeds and I add about 4 tbsp of cocoa powder and 1 tbsp of coconut oil.

    Squish mixture into an ice cube tray and freeze for half an hour. Nice cube shapes. Fun times!

    Love this recipe and the freedom for variations. I have a silicone ice cube tray that I use as a mold. Each energy ball becomes a tsp bite. When I make balls, I often roll them in vegan protein powder. Thanks for sharing this recipe, guys! You rock!!!

    I love making different variations of energy balls. In this version I would use the unsulpherated natural dried apricots, but apart from that it looks great ~ thanks! :)

    Ingredients in video:
    100g nuts and/or seeds (process to bread crumb texture)
    2 Tbsp chia seeds
    2 Tbsp ground flax seed
    Flavors (1 tsp vanilla extract, pinch of ground ginger, tbsp maple syrup, lime zest)
    100g dried fruit
    Process.
    Form into balls

    I got your grams. So you need a scale to get the measurements?. So much easier to use cups ...tablespoon...teaspoon, etc.
