Made this last night and it turned out awesome! Last night was a test run for what I might bring to Thanksgiving dinner. I'm bringing Rotolo ;) A few notes I made: 1. I think under-cooking the lasagna sheets would help with making them easier to work with (I used gluten free sheets. Soaking doesn't work for this particular brand). 2. I ended up with quite a bit of extra Ricotta. I just poured it over the top and put the breadcrumbs on top of that. It looked and tasted fine. 3. I made a rookie mistake by pureeing the wilted spinach into the cream sauce... it turned green. Tasted great, but visually, looked a bit off. I told my wife we were having a St. Patty's Day themed Rotolo. haha 4. When I make this again, I'm going to salt the ricotta cream a bit more and maybe add a little more garlic powder. 5. Be sure to cut your mushrooms thin enough. The larger pieces can have a bit too much "chew" to them. This was a fun one, guys! Gonna keep it on rotation, for sure! Thanks!

Virginia Donnelly I know you hate mushrooms. But... They say it takes ten times of trying something you don’t like before your body changes its preferences and starts to crave it. This happened with both of my children who used to hate onions and mushrooms. I kept at it and now they both love them! Mushrooms have such amazing anti-cancer properties. Might be worth the experiment! 👍🏼

I loved everything in this video from the way you wrongly pronounce the name of your dish (...you will find it's actually stressed on the first syllable: ròtolo) to the list of ingredients some of which are not necessary if you don't have them...but what really takes the biscuit is when you say that you put pesto in your passata just to add "calories". Please keep going and in the meantime stir away from any sort of food preparation!!!!
Oh no! I made this dish last night and forgot to take a photo!!😂😂 it took me over an hour to get in the oven and with three little grandchildren waiting for dinner.... I think this meal needs to be prepped and organised earlier in the day. The taste and flavours were divine... need to give this another go when I’m not time frenzied ....what a messy job though!
I just made this..... it was lush 😋 Just in case anyone else makes the same mistake I did...... don't dry the pasta sheets with kitchen roll.... it sticks really well and then breaks up into little bits 🙈

Better to put it in once it's boiling (or near boiling) so that it dissolves quickly. Salt crystals sitting in the bottom of your pot can damage it (even stainless steel will pit). You'd have to be doing it a LOT to notice, but if you have a choice, might as well do it once boiling.
I'm thinking of rolling mandolined courgette instead of lasagna sheets. Do you think this would work if I laid them on kitchen roll to soak up excess moisture?

You probably need to make it around sunflower seeds or tahini - it won’t be as creamy and colour will be a bit greyer - but that’s what we would do - you’ll need to play with it a bit - good luck with it 🙏🏻👍😊

A white sauce ( bechamel sauce) should work equally well if well seasoned and herbed. Tomato sauce would have an acidity and sweetness which probably gives it an additional dimension
My child has a severe allergy to nuts. I have usually substituted the richest seeds I can; pine nuts are pretty rich, pumpkin and sunflower. Not quite the same as cashew, because of that definitive cashew taste and creaminess, but has been suitable in most recipes.
Am curious. You used to use a gas hob to do these videos with a ferocious flame on it and now you use an induction hob. Why the change? Did you set fire to the place? 🙀 Wow, you two must have asbestos mouths .... that's bloomin' hot, straight out of the oven. Looks delicious though, am jealous even though I have just finished eating.

When I use mushrooms I marinate them in tamari and olive oil for a while before cooking. Draws out the moisture and a deeper flavour too.

Induction is amazing.; super easy to control, efficient, and boils water in the 10th of a time it takes gas
